STOVE-TOP COOKIES ( FRY PAN COOKIES )
I hate using my oven...but sometimes I need to make cookies so I was very excited when I found this recipe. I haven't tried it...yet, but plan on making them very soon!

Steps:
- Sprinkle powdered sugar or coconut evenly onto a parchment or wax paper-lined 15 x 10 x 1-inch pan. Set aside.
- Combine sugar and eggs in a large saucepan; stir well. Add dates and butter; cook over low heat, stirring constantly, 8 minutes or until mixture is thickened and bubbly. Remove from heat; stir in cereal, pecans and vanilla, mixing well.
- Spread cereal mixture evenly onto prepared pan. Let stand for 15 minutes
- Roll the mixture into a 15-inch log, beginning at long side. Let cool completely.
- Cut into 1/2-inch thick slices.

QUICKIE COOKIES (NO-BAKES)
My mother made these a lot when I was growing up. I am so happy I got the recipe from her before she passed away. Thanks, mom :-)

Steps:
- 1. Mix the sugar, cocoa, butter and milk in a saucepan. Bring to a strong boil for 1 & 1/2 to 2 & 1/2 minutes NO LONGER.
- 2. Add vanilla and peanut butter; stir quickly and thoroughly to melt peanut butter. Add oats and mix quickly...this step must be where the quickie comes from in the title of quickie cookies :-)
- 3. Again, quickly pour mixture in a greased dish (13X9) or whatever you have. Press into pan evenly. When cooled, cut into squares.
- 4. *Note* My mom dropped spoonfuls on wax paper, but I find it easier to put it all in a dish and let it cool. I think to have enough time to drop by spoonfuls before the mix hardens, I would only boil the mixture for 1 1/2 to 2 minutes.

- Mix butter, cocoa, milk and sugar in medium pan over medium heat. Heat until boiling and keep at a rolling boil for 90 seconds. Remove from heat. Add vanilla. Mix in peanut butter (do not use same measuring cup used for milk). Mix oats. Drop by spoonfuls onto wax paper. Wait (if you can) until cooled/hardened to serve.
