500g quince
1 small Bramley apple
125g caster sugar
Juice of 1 orange
Juice of 1 small lemon

Steps:

  • Peel the quince and apple, cut into quarters, core and finely slice.
  • Put the sugar and juices in a medium saucepan over a low heat. Stir to dissolve the sugar, increase the heat and bring to the boil. Add the fruit, cover with greaseproof paper or a lid and simmer for 15-20 minutes, or until very soft. Set aside to cool.
  • Pour everything into a liquidiser and purée until smooth. If the purée seems a little thick, add a splash of water. Set aside in a pan, then re-heat gently when ready to serve.

SPICED QUINCE AND APPLE SAUCE

If you happen to see bumpy yellow quinces in the fall at your supermarket or farmer's market, snatch them up; they make a wonderfully fragrant addition to plain old applesauce, and turn it a beautiful tawny-pink color. Vanilla bean and star anise lend even more complexity. This recipe is excerpted from Fine Cooking in Season.

2 medium quinces, peeled, quartered, and cored
1/4 cup sugar, plus more to taste
4 large sweet apples, such as Jonagold, peeled, quartered, and cored
One 3-inch cinnamon stick
1/2 vanilla bean, split
1/2 star anise

Steps:

  • Put the quinces, 1/4 cup sugar, and 1 cup water in a heavy medium saucepan. Bring to a boil, reduce the heat, and simmer, covered, stirring occasionally, until the quinces turn pink and are beginning to soften, about an hour.
  • Add the apples, cinnamon stick, vanilla bean, and star anise to the pan and continue simmering, covered and stirring occasionally, for another 45 minutes, or until all the fruit is very tender. Taste for sweetness and add a bit more sugar if needed.
  • Remove from the heat and let cool, then fish out the spices and discard. Mash with a potato masher or put through a food mill using a medium disk. Serve slightly warm or cold.

2 cups water
1 pound quinces - peeled, cored, and diced
½ lemon, juiced
1 pound apples - peeled, cored and chopped
½ cup sugar, or more to taste

Steps:

  • Inspect two 16-ounce jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until apple sauce is ready. Wash new, unused lids and rings in warm soapy water.
  • Combine water, quinces, and lemon juice in a pot over medium heat. Bring to a boil, reduce heat, and simmer until softened, 8 to 10 minutes. Add apples and sugar and simmer until all fruit is very soft, 10 to 15 minutes. Remove from heat and strain through a sieve.
  • Reheat apple-quince mixture until hot, stirring constantly.
  • Immediately pack quince-apple sauce into hot, sterilized jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any spills. Top with lids and screw rings on tightly.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for for 5 minutes.
  • Remove the jars from the stockpot and let rest, several inches apart, for 12 to 24 hours. Press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

Quince is a fruit that grows abundantly throughout the Mediterranean. Though it's too hard and tart to bite into, it has a wonderful perfume. I like to combine it with apples in this simple compote.

Juice of 1/2 lemon
1 pound quince
1 pound apples
1/3 cup agave syrup
1/2 cup water
1/2 teaspoon ground cinnamon
1 vanilla bean, split and scraped

Steps:

  • Fill a large bowl with water, and add the juice of 1/2 lemon. Quarter the quinces and apples, and place the pieces you aren't working with in the water while you peel, core and cut each quarter crosswise into 1 inch-thick pieces.
  • Combine the agave syrup and water in a large, heavy saucepan, and bring to a boil. Turn the heat down and simmer. Drain the quinces and apples, and add to the pot with the cinnamon and vanilla. Bring to a simmer, cover, reduce the heat and simmer, stirring often, for one hour. The quince will be soft and pinkish, and the apples may have broken down into apple sauce (depending on what type you use). Serve hot or cold.

QUINCE APPLE STRUDELS WITH QUINCE SYRUP

Served with small scoops of ice cream and a pink-hued syrup, this fruit-filled dessert delivers a glorious finale to a special dinner. Strudel dough looks more difficult to make than it really is. The secret is using bread flour, a high-gluten flour, which allows you to stretch a small amount of dough over a large surface.

2 pounds quinces (4 or 5), peeled, quartered, cored, and cut into 3/4-inch pieces
Reserved syrup from star-fruit chips
1/2 vanilla bean, halved lengthwise
1 (4- by 1-inch) strip fresh lemon zest plus 1 teaspoon finely grated
2 pounds Gala apples (4 or 5), peeled, cored, and cut into 3/4-inch pieces
1/2 stick (1/4 cup) unsalted butter, melted
1/4 teaspoon salt
1/2 cup sugar
1 cup soft dried tart cherries (6 ounces)
1 tablespoon fresh lemon juice
1 slice firm white sandwich bread
1/2 cup slivered almonds (2 ounces), lightly toasted
2 cups bread flour
1 tablespoon granulated sugar
1/2 teaspoon salt
1 large egg yolk
3/4 cup lukewarm water
1 1/4 sticks (10 tablespoons) unsalted butter, melted and cooled slightly

Steps:

  • Combine quince with reserved star-fruit syrup in a 3-quart heavy saucepan and bring to a boil, stirring until sugar is dissolved. Scrape seeds from vanilla bean into mixture, then add pod and strip of zest. Reduce heat and simmer, partially covered, until quince is very tender and begins to turn pinkish, 50 to 60 minutes.
  • While quince is simmering, put oven rack in middle position and preheat oven to 400°F.
  • Meanwhile, toss apples with butter, finely grated zest, salt, and 1/4 cup sugar in a large shallow baking pan until coated well, spreading in an even layer. Roast, stirring occasionally, until apples are very tender and any liquid they release is evaporated, 45 minutes to 1 hour.
  • Pour quince mixture into a large sieve set over a bowl, discarding pod and zest, and reserve syrup. If syrup measures more than 1 cup, return to saucepan and boil until reduced to about 1 cup; if less, add enough water to total 1 cup. Cool syrup completely.
  • Stir together quince and cherries in a large bowl. Fold roasted apples and lemon juice into quince mixture and cool to room temperature, stirring occasionally, about 30 minutes.
  • Pulse bread in a blender or food processor to fine crumbs, then add nuts and remaining 1/4 cup sugar and pulse just until nuts are finely chopped. Set aside.
  • Stir together bread flour, granulated sugar, and salt in bowl of mixer, then make a well in center and add yolk, lukewarm water, and 2 tablespoons melted butter. Beat at medium speed until dough becomes silky and elastic, and then forms a soft sticky ball that comes away from side of bowl, 8 to 10 minutes.
  • Turn dough out onto a lightly floured surface and form into a ball. Lightly brush with some melted butter, then cover with a warmed inverted bowl (rinse bowl with hot water to warm and dry) and let stand 1 to 1 1/4 hours to let the gluten relax and make stretching easier.
  • Put oven rack in middle position and preheat oven to 375°F. Line a large baking sheet (17 by 13 inches) with parchment paper. In a draft-free room, cover work table with sheet, then rub all-purpose flour into sheet all over, except overhang.
  • Put dough in center of table and stretch it into a 12-inch round with your fingers. Using floured backs of hands (remove all rings, bracelets, and watches), reach under dough and begin gently stretching and thinning dough from center out to edges, moving around table as you work and intermittently stretching and thinning thicker edges slightly. Gradually stretch dough paper-thin into at least a 36-inch square (square will hang over edge of table), letting it rest for a few minutes whenever it resists stretching and occasionally reflouring hands. (Stretching may take as long as 20 minutes; try not to make any holes in dough, but if you do, cut off pieces from overhang to patch them.) Let dough stand 5 minutes to dry.
  • Very gently brush dough with 1/3 cup melted butter and sprinkle evenly with reserved almond mixture. Mound filling in 2 (11- by 3-inch) strips, end to end, along edge of dough nearest you, leaving 3 inches between strips and a 4-inch border along sides and edge of dough nearest you. Cut off dough overhang to table edge with kitchen shears. Fold edge of dough nearest you over filling, and, holding sheet tautly, use sheet to make dough roll over filling, away from you.
  • Brush strudel all over with remaining melted butter and cut into 2 pieces through space between mounds. Using 2 metal spatulas, carefully transfer strudels to baking sheet, arranging them 4 inches apart, and sprinkle with 2 tablespoons confectioners sugar. Cut 3 or 4 steam vents about 2 inches apart in top of each strudel and bake until golden, 40 to 45 minutes. Cool for 10 minutes on sheet on a rack, then carefully transfer to rack and cool to warm or room temperature, about 30 minutes. Dust evenly with remaining 2 tablespoons confectioners sugar. If desired, carefully move blowtorch flame evenly back and forth over sugar until sugar is melted and caramelized.
  • Cut strudels into 2-inch-wide pieces and serve with ice cream and star-fruit chips . Drizzle with reserved quince syrup.

2 quinces, cut in sixths for a pressure cooker or thinly sliced for for a food mill
3 pounds apples, quartered
honey or sugar
fresh lemon juice
1/2 teaspoon ground cinnamon, cardamom, or allspice or a pinch of ground cloves, optional

Steps:

  • If you're using a food mill, put the apples and quince in a pot, add 1/3 cup water, cover securely, and cook until the apples are completely tender, about 20 minutes. Or put them in a pressure cooker with 3 tablespoons water, bring the pressure to high, and cook for 10 minutes. Release the pressure or let it fall by itself. Pass the cooked fruit through the food mill into a clean pot. Taste and sweeten with honey if the sauce is tart or add the lemon juice if the apples are too sweet. Add the spices. Simmer for 5 minutes, then cool. If you're not using a food mill, peel and core the apples and quince first, then cook until they're broken down into a sauce.

4 pounds assorted apples, such as Golden Delicious, Gala, Honeycrisp or McIntosh (about 8), peeled, cored and chopped
1/4 cup sugar
Kosher salt
1 tablespoon freshly squeezed lemon juice
1/4 teaspoon ground cinnamon

Steps:

  • Combine the apples, sugar, 1 cup water and 1/2 teaspoon salt in a large pot. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat to medium-low. Cover with a tight-fitting lid and cook until the apples are very soft, 18 to 20 minutes.
  • Stir in the lemon juice and cinnamon. Let cool for 5 minutes or so, then transfer the apple mixture to a blender, filling no more than halfway. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters and pulse until smooth. Alternatively, puree in the pan with an immersion blender.
  • Transfer the applesauce to a bowl and refrigerate until cool, about 1 hour. Store leftover applesauce in an airtight container in the refrigerator for up to 5 days.

APPLE AND QUINCE PIE

Quinces go beautifully with apple, adding another dimension to a pie, with their scented graininess and wonderful deep ruby color. This a perfect fall/early winter dessert. The quinces have to be grated, since even small chunks take eons longer to cook than the apple.

1 1/4 pounds Granny Smith, Jonathan or other cooking apples
1 large quince
Raw granulated sugar, as needed
About 1 1/4 cups water
A sheet of Puff Pastry or 1/2 pound Shortcrust Pastry Dough, recipes follows
Sprinkling demerara sugar
1 1/2 cups all-purpose flour
Pinch salt
3/4 cup unsalted butter
2/3 cup cold water

Steps:

  • Preheat the oven to 400 degrees F.
  • Peel, core and slice the apples, then peel, core and grate the quince. Fill a pie pan with the fruit, sprinkling sugar over each layer, and mounding it up toward the center of the pan. Pour the water into the pan to come halfway up to the fruit.
  • Roll out the dough. Cut off a thin strip and attach it to the rim of the pan, brushing the rim with water first. Brush the strip with water and cover the pan with the sheet of dough, cutting off all the overhanging bits. Crimp the edges, brush the top with eggwash, and strew over the demerara sugar. Bake for 20 minutes before turning the temperature down to 375 degrees F and cooking for a further 20 minutes. Eat warm or hot with heavy cream.
  • Use approximately twice the weight of all purpose flour (preferably organic) to unsalted butter. Some recipes call for half butter, half lard.
  • Sift the flour and a pinch of sea salt into a food processor, then cut the cold butter into small pieces on top of it. I process it for 20 to 30 seconds, then add ice-cold water through the top, a tablespoon at a time, 2 to 2 1/2 minutes should be enough for about 10 ounces of dough, with the machine running. If the paste is still in crumbly little bits after 1 or 2 minutes, add a tablespoon more water, but remember, the more water you use, the more the crust will shrink if you bake it blind. One solution is to use a bit of cream or egg yolk instead of water. The moment the dough has cohered into a single ball, stop, remove it, wrap it in plastic wrap and chill in the fridge for at least 30 minutes.
  • If you're making pastry dough by hand, sift the flour into a large bowl with the salt, add the chopped butter, and work as briskly as you can to rub the fat into the flour. Use the tip of your fingers only, rather like running grains of hot sand through your fingers. Add the water bit by bit as above; wrap and chill the dough.
  • If you're making a double-crust pie, divide the dough into roughly 2/3 and 1/3. Then scatter a bit of flour on your work surface, roll your rolling pin in it, dust the palms of your hands, and start rolling. Always roll away from yourself, turning the dough as you go, and keep the rolling pin and work surface floured to prevent sticking.
  • Preheat the oven to 375 to 400 degrees F.
  • Line your greased pie pan with dough. Never stretch it; it will stretch back. Try to leave at least 30 minutes for the unbaked dough to commune with the inside of your fridge. Or put it in the night before you need it.
  • Tear off a piece of waxed paper a little larger than the pie pan and place it over the dough. Cover the paper with a layer of dried beans; the idea is to prevent the pastry from rising up in the oven. When the dough is nearly cooked (the timing depends on the rest of the recipe), remove the paper and beans and prick the bottom of the pie shell to let out trapped air that would otherwise bubble up. Return the tart to the oven for 5 to 10 minutes to dry the bottom. Brushing the partly baked pie shell with a light coating of beaten egg or egg white ensure a crisp finished tart.
  • Sift the flour and salt into a mixing bowl. Rub in 2 tablespoons of the butter, as for shortcrust pastry dough, or use a food processor. Mix in the water and then gently knead the dough on a floured surface, preferably marble. Wrap it in plastic wrap and refrigerate for 30 minutes.
  • Keep the rest of the butter out so that it softens, then flatten it into a rectangle 1 inch thick. On a lightly floured surface, roll out the dough into the same size as the butter. Place the butter in the center of the pastry and then fold over the top and bottom of the dough to cover the butter.
  • With the rolling pie, press down on the edges to seal in the butter, then give the dough a quarter turn clockwise. Now roll the dough out so that it returns to it's original length. Fold over the ends again, press them together with the rolling pin, and give a further quarter turn clockwise. Repeat the process once more, then rest the dough in the fridge for at least 30 minutes, remembering which way it is facing.
  • Repeat the rolling and turning process twice more, then refrigerate for a final 30 minutes before using or freezing. If the dough gets warm and buttery at any stage during the process, put it in the fridge to chill.
  • If you prefer not to make your own, you can buy ready-made puff pastry, but try to find the very best available.

QUINCE AND APPLE SAUCE

Season: September to October. The raw flesh of the lumpy yellow quince is dry and disagreeably sour. However, once cooked, it becomes pink and highly perfumed. Lightly sweetened and combined with good fluffy cooking apples, such as Granny Smiths, it makes a delightful accompaniment for roast pork or duck. I also love this aromatic fruity sauce on a home-baked rice pudding.

Yield makes four 8-ounce jars

1 pound, 2 ounces quince, peeled, cored, and chopped
Juice of 1/2 lemon
1 pound, 2 ounces cooking apples, peeled, cored, and chopped
2/3 cup granulated sugar

Steps:

  • Put the quince, lemon juice, and 2 cups plus 2 tablespoons of water into a saucepan. Bring to a boil, then simmer for 8 to 10 minutes (quince takes longer to soften than apple and needs a bit of a head start). Add the apples and sugar and cook for a further 10 to 15 minutes, until all the fruit is well softened. Remove from the heat and either beat to a smooth pulp with a wooden spoon or press through a sieve.
  • Meanwhile, preheat the oven to 275°F and place the sterilized jars (see p. 152) inside.
  • Return the pulp to the pan and bring to a boil, stirring to make sure it doesn't stick and burn. Remove from the heat and pour immediately into the warm, sterilized jars. Seal with lids, clips, or screw-bands, remembering to release the screw-band by a quarter of a turn if using this type of jar (see p. 156). Place in a deep pan with a folded tea towel on the bottom. Cover with warm water (100°F), bring to the simmering point (190°F), then simmer for 5 minutes.
  • Remove the jars from the hot water and place on a wooden surface or folded tea towel. Tighten the screw-bands, if using, and leave the jars undisturbed until cool. Check the seal (see p. 158). Store in a cool, dry place. Use within 1 year.

QUINCE, CRANBERRY, AND APPLE SAUCE

If you haven't cooked quince before, this is a good way to start. The sauce is tangy, not overly sweet, and because the fruit pieces tend to stay intact when cooked, you will enjoy the distinctive taste and texture. Though it is not as sweet as cotognata (the quince sauce that follows), you can enjoy it in many of the same ways, such as spooned onto buttered toast or stirred into a bowl of yogurt, for a tangy snack.

Yield makes about 4 cups

Number Of Ingredients 8

6 whole cloves, and/or a small piece of cinnamon stick
Grated zest of a large orange
Fresh juice of a large orange
1/2 cup honey, plus more to taste
1/2 cup warm water, plus more as needed
2 or 3 ripe quince (about 12 ounces)
1 large or 2 small tart, firm apples
12 ounces (1 bag) whole cranberries, fresh or frozen

Steps:

  • Put into saucepan the spices, orange zest, orange juice, and honey, sloshing out the cup with the warm water.
  • Rinse the quince, cut them in quarters, and peel off the skin. Pare out the core and the seeds, then slice each wedge crosswise in pieces about 1/3 inch thick. Drop the quince chunks into the saucepan, and set it over moderate heat. Stir as the honey dissolves and the liquid comes to a bubbling simmer. Cover the pan, lower the heat, and cook slowly for about 5 minutes, until the quince chunks have started to soften; don't let them get mushy. Remove from the heat.
  • While the quince are cooking, peel, quarter, and core the apples, and cut into pieces the same size as the quince. Rinse and drain the cranberries. Stir the apple pieces and the berries into the pan. The syrupy liquid should just reach the top of the fruit; add water (or more orange juice) if there's not enough.
  • Put a cover on the pan and set it over medium-high heat. Bring the syrup back to the boil, and cook about 4 minutes, until the cranberries are starting to pop (a bit longer if the berries were frozen).
  • Uncover, and simmer until the cranberries have broken up and turned to sauce, about 10 minutes. Stir frequently but gently, so the quince and apple chunks stay intact. Remove from the heat while the sauce is still pourable-it will thicken as it cools. Taste, and stir in honey if you want a sweeter sauce.
  • Cool briefly, then lay a piece of plastic wrap on top of the sauce to keep a skin from forming. Serve slightly warm or at room temperature. Store in the refrigerator, for up to 2 weeks. (You can freeze the sauce; the consistency will change, but the flavor will be fresh.)
  • Good with roast turkey at the holidays, or any other roast poultry, meats, or winter vegetables.
  • A great condiment for cold meats: try it on a turkey or roast-pork sandwich.

Accompaniment: whipped cream

Steps:

  • Preheat oven to 350°F.
  • On a baking sheet in middle of oven toast almonds in one layer until golden, about 10 minutes. Peel, quarter, and core quinces. Cut each quarter lengthwise into 5 slices. In a 3-quart heavy saucepan bring water and sugar to a boil, stirring until sugar is dissolved. Add quince and simmer, covered, 2 1/4 hours.
  • When mixture has been simmering 2 hours, peel, quarter, and core apples. Cut each quarter lengthwise into 1/4-inch-thick wedges. Stir apples into quince mixture and simmer, covered, until apples are crisp-tender, about 10 minutes. Remove pan from heat and stir in almonds and extract. Cool filling. (Filling may be made 3 days ahead and chilled, covered.)
  • Assemble jalousie:
  • In a large sieve set over a bowl drain quince filling, reserving syrup. Transfer quince to a bowl and stir in 3 tablespoons reserved syrup. Make an egg wash by lightly beating egg with 2 teaspoons water.
  • Halve dough and on a lightly floured surface roll out each half into a 12- by 8-inch rectangle (about 1/4 inch thick). Transfer 1 pastry rectangle to a floured large baking sheet and put quince filling lengthwise along center, forming a 9- by 5-inch mound. Brush pastry around filling with some egg wash. Carefully drape remaining pastry rectangle lengthwise over quince and seal edges by gently pressing together. With a sharp large knife trim edges of pastry. Crimp edges and make a decorative pattern of about 8 slits in pastry, exposing filling. Chill jalousie, loosely covered, 30 minutes.
  • Preheat oven to 425°F.
  • Brush jalousie evenly with some egg wash and sprinkle with sugar. Bake jalousie in middle of oven until deep golden, about 30 minutes, and transfer on pan to a rack to cool.
  • Serve jalousie warm or at room temperature with remaining reserved syrup and whipped cream.

3 tablespoons dark-brown sugar (optional)

Steps:

  • Peel, core, and slice apples.
  • In a large pot, bring apples, lemon juice, and 1 1/2 cups water to a boil over high. Reduce heat and simmer until apples are very soft and falling apart, 25 to 30 minutes.
  • Mash with a potato masher or pulse in a food processor until smooth with small chunks remaining. (Add sugar, if using.)
  • Let cool, then transfer applesauce to airtight containers.
