3 tablespoons extra-virgin olive oil
2 large or 4 small shallots, chopped
1 small red pepper, stemmed, seeded, deveined and chopped into 1/2-inch pieces
1 teaspoon kosher salt, plus extra for seasoning
1/2 teaspoon freshly ground black pepper, plus extra for seasoning
1 1/2 cups quinoa
1/4 cup white wine, such as pinot grigio
1 1/2 cups low-sodium chicken broth
1 packed cup arugula, chopped
1/2 cup slivered almonds, toasted and coarsely chopped
1/2 cup chopped fresh mint
1 medium cucumber, peeled, seeded and diced into 1/2-inch pieces
Zest of 1 lemon

Steps:

  • Cook's Note: To toast the almonds, arrange in a single layer on a baking sheet. Bake in a preheated 350 degrees F oven until lightly toasted, 6 to 8 minutes. Cool completely before using.
  • Heat 2 tablespoons of the oil in a large saucepan or a high-sided skillet over medium-high heat. Add the shallots and cook until soft, about 2 minutes. Add the bell pepper, salt and pepper. Cook until the vegetables are tender, 5 minutes. Make a space in the center of the vegetables and add the remaining 1 tablespoon of oil. Add the quinoa and cook, stirring constantly, until coated with oil, about 2 minutes. Add the wine and cook until all of the liquid has evaporated, about 2 minutes. Add the broth and bring to a boil. Cover the pan and simmer until all of the broth has been absorbed and the quinoa is tender, about 15 minutes. Keep covered and let sit for 10 minutes. Add the arugula, almonds, mint, cucumber and lemon zest and toss well. Season with salt and pepper.

1 medium onion, chopped
1 medium carrot, finely chopped
1 teaspoon olive oil
1 garlic clove, minced
1 can (14-1/2 ounces) reduced-sodium chicken broth or vegetable broth
1/4 cup water
1/4 teaspoon salt
1 cup quinoa, rinsed

Steps:

  • In a small nonstick saucepan coated with cooking spray, cook onion and carrot in oil for 2-3 minutes or until crisp-tender. Add garlic; cook 1 minute longer. Stir in the broth, water and salt; bring to a boil., Add quinoa. Reduce heat; cover and simmer for 12-15 minutes or until liquid is absorbed. Remove from the heat. Fluff with a fork.

1 tablespoon vegetable oil
½ cup chopped onion
2 carrots, chopped
1 cup quinoa, rinsed
2 cups vegetable broth
¾ cup chopped walnuts
¼ cup chopped fresh parsley

Steps:

  • Heat oil in a saucepan over medium-high heat. Cook onion in oil for 5 minutes, or until translucent. Add carrot, and cook 3 minutes more. Stir in quinoa and vegetable broth, and bring to a boil. Reduce to a simmer, cover, and cook 15 to 20 minutes, or until quinoa is tender and fluffy.
  • In a bowl, toss quinoa together with walnuts and parsley. Serve hot or at room temperature.

1/2 cup quinoa (white or red)
1/2 cup buckwheat groats (raw, or choose pre-roasted to save a step)
2 cups boiling water
1 tablespoon butter (or ghee or Earth Balance buttery spread)
1/2 teaspoon sea salt
1/4 teaspoon ground black pepper
1 shallot, diced (optional)
1 carrot, diced (optional)
1/2 cup frozen corn (optional)
1/2 cup frozen peas (optional)

Steps:

  • Wash the quinoa. See recipe #16399 for complete instructions.
  • Toast the quinoa in a hot dry skillet until slightly browned. Set aside.
  • Likewise with the buckwheat. Put both in a pot with the boiling water, butter, shallot, and seasonings.
  • Keep on low heat for 15 minutes or until the liquid is absorbed.
  • Five minutes before the end, add vegetables if you wish.

1 onion, finely chopped
2 garlic cloves, finely chopped
3 large sprigs fresh epazote
1 bay leaf
1 cup quinoa, rinsed, drained well
4 cups chicken stock or vegetable stock
Chopped fresh parsley or cilantro

Steps:

  • Melt butter in heavy large saucepan over medium heat. Add onion and saute until tender, about 10 minutes. Add garlic, epazote and bay leaf. Stir 1 minute. Add quinoa and stir just until coated. Add stock. Bring to boil. Reduce heat and simmer until quinoa is tender, about 10 minutes. Drain. Discard epazote and bay leaf.
  • Transfer pilaf to large bowl. Season to taste with salt and pepper. Garnish with parsley or cilantro.

1 cup buckwheat groats, roasted (kasha)
1 3/4 cups filtered water or 1 3/4 cups vegetable stock
3 tablespoons toasted sesame oil
1 tablespoon garlic, minced
1 leaf lime, sliced very thin
1 cup red bell pepper, diced
3 tablespoons green onions, diced
3/4 cup carrot, grated
2 tablespoons soy sauce (to taste)
1 tablespoon cilantro, minced
1/2 teaspoon crushed red pepper flakes (to taste)

Steps:

  • Place water or stock in a 3 quart pot and bring to a boil on high heat.
  • Add buckwheat, cover, reduce heat to simmer and cook until kasha is tender and liquid is absorbed, approximately 15 minutes.
  • Gently fluff with a fork and place in a large mixing bowl.
  • While buckwheat is cooking, place 1 tablespoon of sesame oil in a medium size sauté pan on medium high heat.
  • Add garlic, lime leaf and red bell pepper, cook for 8 minutes, stirring frequently, adding small amounts of water as necessary to prevent sticking.
  • Add to bowl with remaining ingredients and mix well.
  • Variation:.
  • Add a handful of rinsed and chopped kale and 1/2 cup of cubed tofu while cooking buckwheat.

I tweaked a classic pancake recipe to use buckwheat flour, then included quinoa flour for the great nutty taste. A great-tasting, gluten-free breakfast treat that's great with some blueberry or other fruit syrup. This recipe converted my wife from a non-pancake eater! Keep finished pancakes warm on a plate in a 150 degree F (65 degree C) oven while cooking the rest of the batter.

1 egg, lightly beaten
2 tablespoons canola oil
1 tablespoon honey
½ cup buckwheat flour
½ cup quinoa flour
1 teaspoon baking powder
½ teaspoon baking soda

Steps:

  • Combine buttermilk, egg, canola oil, and honey together in a large bowl. Mix buckwheat flour, quinoa flour, baking powder, baking soda, and salt together in a bowl until blended. Incorporate flour mixture into the buttermilk mixture; stir until evenly mixed.
  • Heat a lightly oiled griddle over medium heat. Drop batter, 1/4 cup per pancake, onto the griddle and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.

1 1/2 cups raw quinoa
2 1/4 cups vegetable broth (see page 295)
1 teaspoon dried thyme
1 onion, diced
2 garlic cloves, minced or pressed
1 tablespoon olive oil
2 carrots, peeled and diced
1 bell pepper, seeded and diced
1 cup fresh or frozen green peas
1 tomato, diced
1/2 teaspoon salt
1/4 teaspoon black pepper
Grated Parmesan, Cheddar, or feta cheese (optional)

Steps:

  • Thoroughly rinse and drain the quinoa in a fine mesh strainer (rinsing removes the residue of the grain's bitter coating). In a covered saucepan on high heat, bring the quinoa, broth, and thyme to a boil. Reduce the heat to low and simmer covered until all the liquid is absorbed, 15 to 20 minutes. Fluff with a fork. Cover and set aside.
  • While the quinoa cooks, sauté the onion and garlic in the oil in a skillet on medium-high heat for 3 or 4 minutes, until softened. Add the carrots and sauté for 3 or 4 minutes, stirring occasionally and covering the skillet, if necessary, to prevent sticking. Add the bell pepper and peas and sauté just until they are hot, a couple of minutes. Stir in the tomato, salt, and pepper, cover, and remove from the heat.
  • When both the quinoa and vegetables are done, combine them. Add salt to taste. Serve topped with cheese if you wish.
  • Ingredient Note
  • Use different vegetables, such as asparagus, green beans, celery, and mushrooms-just be sure there are several colors and about 4 to 5 cups total.
  • Vary the herb-try dill, tarragon, or rosemary.
