Steps:

  • Mix quinoa, eggs, yellow onion, Parmesan cheese, garlic, and sea salt in a bowl; add bread crumbs and stir. Form into 9 small patties.
  • Melt butter in a flat skillet over-medium high heat. Cook the patties in the hot butter until crispy, 8 to 10 minutes per side.

1 (15 ounce) can black beans, rinsed and drained
¼ cup quinoa
½ cup water
½ cup bread crumbs
¼ cup minced yellow bell pepper
2 tablespoons minced onion
1 large clove garlic, minced
1 ½ teaspoons ground cumin
½ teaspoon salt
1 teaspoon hot pepper sauce (such as Frank's RedHot®)
1 egg
3 tablespoons olive oil

Steps:

  • Bring the quinoa and water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the quinoa is tender and the water has been absorbed, about 15 to 20 minutes.
  • Roughly mash the black beans with a fork leaving some whole black beans in a paste-like mixture.
  • Mix the quinoa, bread crumbs, bell pepper, onion, garlic, cumin, salt, hot pepper sauce, and egg into the black beans using your hands.
  • Form the black bean mixture into 5 patties.
  • Heat the olive oil in a large skillet.
  • Cook the patties in the hot oil until heated through, 2 to 3 minutes per side.

½ cup quinoa
1 carrot
1 (15 ounce) can garbanzo beans, drained and rinsed
6 small green onions, chopped

¼ cup corn kernels

Steps:

  • Bring water and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed, 15 to 20 minutes.
  • Process carrot in food processor until roughly chopped; add quinoa, garbanzo beans, green onions, bread crumbs, egg, garlic, and cumin. Pulse quinoa mixture until just mixed; transfer to a bowl.
  • Stir peas and corn into the quinoa mixture; refrigerate until mixture comes together, about 15 minutes. Form quinoa mixture into patties.
  • Heat olive oil in a skillet over medium heat; fry patties until golden brown, 4 to 5 minutes per side.
  • Stir yogurt, tahini, lemon juice, cilantro, and curry powder together in a bowl. Serve burgers with tahini sauce.

I made these with leftover quinoa and some vegetables I had in the fridge. Super easy! Great on a multigrain bun with some tomatoes, spinach, and your favorite spread! My 2 1/2-year-old said, I love it Mommy! If necessary, while frying, flatten the burgers with the back of your spatula (but don't make them too thin).

Mushroom Quinoa Burgers with Roasted Garlic and Thyme Mayonnaise image

Looking for a fantastic quinoa pattie that will satisfy carnivores too? Look no further than my mushroom quinoa burgers recipe packed full of the goodness of umami-laden mushrooms.

150 g quinoa
1 1/2 cups water
1/2 tsp fine sea salt
1 brown onion (peeled and diced)
3 cloves garlic (minced)
200 g button mushrooms (finely chopped (7oz))
2 tbs soy sauce, gluten-free variety if needed
2 tsp fresh thyme leaves (roughly chopped)
1 tbs parsley (finely chopped)
60 g wholemeal breadcrumbs ((2oz))
2 eggs (beaten)
salt and pepper to taste
olive oil for frying
GARLIC AND THYME MAYONNAISE:
1 1/4 cups neutral flavoured oil such as canola oil
2 cloves garlic (peeled)
2 whole eggs
3 tbsp of lemon juice
1 tsp of dijon mustard
1/2 tsp salt
1 tsp fresh thyme leaves (chopped)
pepper to taste

Steps:

  • To make the mayonnaise place the garlic cloves in a saucepan along with the oil. Place over a low heat for 20 minutes to infuse and slowly cook the garlic. Set aside to cool completely.
  • Place all of the ingredients except the thyme leaves into a narrow jug or bowl. Use a stick or immersion blender to combine the ingredients. You'll notice that almost immediately the mayonnaise will begin to emulsify. Blend until combined. You can see step by step photos of the process here.
  • Taste and adjust the seasonings as necessary. Refrigerate.
  • Rinse the quinoa well in a fine mesh sieve under cold running water. Place in a saucepan with the water and a pinch of salt and bring to the boil. Cover and cook for 12 to 20 minutes. I've found Australian Organic Quinoa cooks particularly quickly (12 minutes), others take up to 20 minutes or even longer. Check after 12 minutes to see if the quinoa is tender and you can see the little quinoa curlicues. Set aside to cool.
  • Heat a large frying pan over a medium low heat and 2 tsp olive oil and add the onions cook until lightly golden. Remove from the pan and place in a large bowl. Increase the heat to medium high and add another 2 tsp of olive oil. When the pan has come to heat add the mushrooms, garlic and thyme and cook for 2 minutes. Add the soy sauce and cook for a further 2 minutes or until the liquid has almost evaporated. Place in the same bowl as the onions and leave to cool.
  • Add the cooled quinoa to the bowl along with the onions and mushrooms. Add the breadcrumbs and parsley and mix to combine. Test and adjust seasonings with sea salt and pepper as necessary. Add the beat egg and mix until well combined.
  • Form the mixture into patties (I find I get around 10 patties out of the mixture) and refrigerate for 30 minutes.
  • Return the frying pan to a medium low heat and add enough olive oil to just coat the bottom of the pan. Place the patties in the frying pan and cook for 7 to 10 minutes on each side until golden brown.
  • Enjoy the burgers on fresh bread tools topped with a slice of cheddar cheese along with your favourite salad toppings and a dollop of garlic and thyme mayonnaise or ketchup.

2 tsp chili powder
2 tsp cumin

Gluten free buns (toasted)
Pickles
Tomato (sliced)

Steps:

  • In a medium nonstick skillet over medium heat, add the olive oil. Add the onion and sautee until softened, about 8 minutes. Add the garlic and saute for an additional 30 seconds. Set aside in a large bowl.
  • In a food processor, pulse the walnuts until they reach a crumb-like consistency. Add to the bowl.
  • Add the black soy beans and puree until smooth. Add to the bowl.
  • Add in the quinoa, tamari, parsley, chili, cumin, breadcrumbs, salt and pepper.
  • Form into 8 patties and place on a baking sheet lined with a silpat. Refrigerate for an hour.
  • When ready to cook, preheat the grill to medium high heat. Add the patties and cook until brown on both sides.
  • Layer your bun with pickles, tomatoes, avocado and microgreens and enjoy!

2/3 cup water
1/2 tsp salt
1/2 cup tomato paste
2 tsp oregano
3/4 tsp onion powder
1 cup cooked or canned pinto beans
burger buns and toppings of choice

Steps:

  • Combine the quinoa, water, and 1/4 tsp of the salt in a pot. Bring to a boil. Cover and simmer 14 minutes or until fluffy. If you wish to bake instead of fry the burgers, preheat oven to 400 F. Mash beans fully, then stir together all ingredients, including the quinoa. Form patties, and either fry over medium heat in a little oil OR place on a greased baking sheet and bake on the center rack 15 minutes, flip carefully (smushing back together if they crack while flipping), and bake an additional 6 minutes. Let cool completely. They are delicate due to the lack of flour, but they do hold together nicely as long as you use a spatula to move the patties. 2 and 2/3 cups cooked quinoa
4 large eggs, beaten
1/2 teaspoon salt
1/4 teaspoon lemon pepper
2 Tablespoons chopped parsley
1/2 small onion, finely chopped (about 1/3 cup)
1/3 cup fresh parmesan cheese, grated
3 cloves garlic, finely chopped
3/4 cup gluten free whole grain breadcrumbs (or regular)*
1/2 cup finely chopped carrot and zucchini (1/4 cup each veggie)
1 Tablespoon oil, plus more as needed

Steps:

  • Combine the quinoa, eggs, salt, and lemon pepper in a large bowl. Stir in the parsley, onion, cheese, and garlic. Stir in the bread crumbs and chopped carrot/zucchini. Let the mixture sit for a few minutes so the crumbs absorb some of the moisture.
  • At this point, you should have a mixture you can easily form into 20 thick patties. You want the mixture moist, so the patties aren't dry tasting. However, you want the mixture to hold together when cooking. You can add more bread crumbs to firm up the mixture, if needed. Alternatively, you can add a couple drops of water to moisten the mixture. *The uncooked quinoa mixture keeps nicely in the refrigerator for a few days. Cover tightly and cook the patties when you have time.
  • Heat the oil in a large skillet over medium-low heat, add 5-6 patties, cover, and cook for 7 to 10 minutes until the bottoms are deeply browned. Carefully flip the patties with a spatula and cook the second sides for 5 minutes, or until golden. Remove from the skillet and cool on a large plate while you cook the remaining patties. Add more oil to the skillet if needed between each batch.
  • Serve plain or in a pita, on a salad, on a sandwich, with sliced avocado, with hot sauce on top, etc etc. There are so many ways to enjoy them!

  • Bring vegetable broth to a boil in a small saucepan then add quinoa, place a lid on top, turn heat down to medium and then cook until quinoa is tender, 15-20 minutes. Set aside to cool slightly.
  • Meanwhile, heat extra virgin olive oil in a large skillet over medium heat. Add mushrooms and shallots then saute until tender, 5-7 minutes. Add garlic, season with salt and pepper, and then saute for one more minute. Set aside to cool slightly.
  • Add remaining ingredients to a large bowl with cooled quinoa and mushroom mixture then stir to combine. Line a large plate or platter with plastic wrap then shape 1/4 of the mixture into a patty and place onto platter. Mixture will be slightly wet - it's ok! Repeat with remaining mixture then refrigerate until completely cool, 30 minutes (could do this overnight - just cover with plastic wrap.)
  • Preheat oven to 375 degrees then line a baking sheet with foil and spray very well with nonstick spray. Transfer patties to baking sheet then spray tops with nonstick spray and bake for 14 minutes. Flip, spray tops with nonstick spray and then bake for 14-16 more minutes, or until the centers of the patties are set. Serve with buns and fresh condiments.

  • In food processor, combine cooled quinoa, beef, green onions, cumin and salt; pulse until blended. Form into four, 3/4 inch (2 cm) thick patties.
  • In large skillet, heat oil over medium-high heat. Add patties and cook for 4 minutes. Turn and cook fro 5 minutes or until no longer pink inside.
  • Spread top halves of buns with hummus. Transfer patties to bottom halves and top with sliced tomato and spinach. Cover with top halves, pressing down gently.
