SPRING ONION SOUP
Spring onions look like scallions but have a larger, rounder bulb. If they are unavailable, use yellow onions.

Steps:
- Heat oil in a large pot over medium-high heat. Add onions, and cook, stirring occasionally, until translucent but not brown, about 15 minutes.
- Stir in salt, stock, and water. Bring to a simmer, and cook for 15 minutes.
- Remove from heat, and let cool for 20 minutes. Working in batches, puree in a blender, starting on low speed and gradually increasing to high, blending until soup is smooth.
- Divide soup among 4 bowls, drizzle with oil, and serve with flatbread on the side.

Growing up in the North Carolina mountains, everyone knew what killed lettuce was and how to fix it. This is my mom's recipe, and it is very simple and basic. In the south it is usually served with pinto beans and cornbread.

- Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned and crisp, about 10 minutes. Place the bacon slices on a paper towel-lined plate.
- Add the chopped green onions to the bacon grease; cook and stir for about a minute or until the onions reach your desired tenderness. Pour the onions and bacon grease over the lettuce and toss lightly. Crumble the bacon and add it to the lettuce. Serve immediately.

RADISH TOP SOUP
This is an easy recipe that uses an unlikely part of a vegetable we love to eat. It's thick and rich, and so hearty. I recommend eating it with a loaf of crusty bread!

- Melt butter in a large saucepan over medium heat. Stir in the onion, and saute until tender. Mix in the potatoes and radish greens, coating them with the butter. Pour in chicken broth. Bring the mixture to a boil. Reduce heat, and simmer 30 minutes.
- Allow the soup mixture to cool slightly, and transfer to a blender. Blend until smooth.
- Return the mixture to the saucepan. Mix in the heavy cream. Cook and stir until well blended. Serve with radish slices.

Steps:
- Melt butter in pan add potato and onion then cook for 3 minutes until soft.
- Add peas and stock bring to the boil then cover and simmer for 25 minutes.
- Add lettuce and cook uncovered for a further 5 minutes.
- Blend until smooth.
- Return to pan add spring onion and radishes then season to taste.
- Cook gently for 5 minutes then add cream and chopped parsley.
- Stir and Serve.

- Cut leaves from radishes and wash well. (Reserve radishes for another use.) Melt butter in heavy large saucepan over medium heat. Add onion and sauté until tender, about 5 minutes. Add radish leaves and sauté until wilted, about 2 minutes. Add potatoes and 3 cups water. Cover and simmer until vegetables are tender, about 20 minutes.
- Puree soup in batches in blender. Return to saucepan. Mix in milk. Stir over medium heat until hot. Season soup with salt and pepper.
