Steps:
- Bring a large pot of lightly salted water to a boil. Cook ziti in boiling water until cooked through but firm to the bite, about 13 minutes; drain. Rinse ziti with cold water until cool; drain.
- Preheat oven to 375 degrees F (190 degrees C).
- Mix ziti, ricotta cheese, 1 1/2 cups tomato sauce, mozzarella cheese, egg, salt, and pepper in a large bowl.
- Spread 1/2 cup tomato sauce into the bottom of a 2 1/2-quart shallow baking dish. Pour ziti mixture into the dish. Top with remaining 1 1/2 cup tomato sauce and Parmesan cheese.
- Bake in preheated oven until sauce and cheese layer is bubbly and lightly browned, about 30 minutes. Let cool 10 minutes before serving.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13-inch baking dish.
- Fill a large pot with lightly salted water and bring to a boil. Stir in ziti pasta and return to a boil. Cook pasta, stirring occasionally, until cooked through but still firm to the bite, about 11 minutes; drain.
- Combine egg, ricotta cheese, and 1/4 cup Parmesan cheese in a bowl. Spread 1/3 the spaghetti sauce in prepared baking dish. Top with 1/2 the pasta, 1/2 the ricotta mixture, 1/3 the spaghetti sauce, 1/2 the mozzarella cheese, and 1/2 the Parmesan cheese; repeat layers. Top with remaining spaghetti sauce and Parmesan cheese; cover baking dish with aluminum foil.
- Bake in preheated oven until heated through, 45 to 50 minutes.

ZITI CASSEROLE DELIGHT
I came up with this recipe after starting with a basic ziti recipe I found off another website. I began adding a few more ingredients and less of others and ended up with a keeper. I've baked in my toaster oven during the warmer months. If you use your T.O. reduce baking time by 10 minutes or casserole will be on the dry side. It's an easy Italian comfort food - Hope you enjoy!

Steps:
- Prepare oven at 350 degrees.
- Cook ziti according to package instructions, reducing the time by 5 minutes (this is important or pasta may be overcooked after baking casserole).
- Meanwhile, saute chopped onion with ground beef in 10-12" skillet until beef is browned.
- Add minced garlic to meet mixture and cook on low heat for 3 minutes.
- Drain Ziti and leave in colander for the time being.
- Combine drained mushrooms, sour cream, grated parmesan, half& half, spaghetti sauce, red wine, oregano, salt, and pepper to the beef mixture and mix thoroughly.
- Stir in ziti to the meat mixture until all ziti is coated with mixture.
- Pour into an ungreased 2-1/2 quart casserole dish.
- Sprinkle with shredded mozzarella.
- Place in pre-heated oven and bake 35-40 minutes (or until bubbly and lightly golden brown on top).

- Preheat oven to 400°F Cook ziti and mixed vegetables according to package directions for each; drain. Return cooked ziti and vegetables to cooking pot used to cook ziti.
- Meanwhile, in 10-inch skillet over medium heat, cook beef until browned, stirring to separate meat. Spoon off fat.

BAKED ZITI CASSEROLE
I got the basic recipe from the back of a spaghetti sauce can but have added ingredients that we like to make it special for our family's tastes. Sometimes, I take it to potlucks and come home with an empty dish! I always make a big pot of it when my son's friends are here and they eat it all! Growing boys...lol. - Preheat oven to 350.
- Cook and drain ground beef.
- Saute green pepper, onion, and mushrooms and add to ground beef.
- Add onion powder and garlic powder, oregano and 3 tablespoons of the tomato paste. Stir and set aside while you cook pasta.(al dente).
- Drain cooked pasta and set aside.
- Stir together the cottage cheese, sour cream.
- Slice the black olives and add to the cottage cheese mixture.
- Mix the spaghetti sauce and remaining tomato paste with the ziti.
- Spray 9x13 pan with non stick spray.
- Place half the noodles in the pan.
- Top with meat mixture and a layer of parmesan cheese.
- Top with the cottage cheese and sour cream mixture.
- Top with a layer of the Mozarella cheese.
- Top with the other half of the noodles and a final layer of parmesan cheese (the inside layers of cheese can be thin, just enough to add a cheesy layer).
- Bake uncovered 30 minute or until hot and bubbly and cheeses are melted.

BAKED ZITI CASSEROLE
Baked ziti at its best. I use low carb pasta to make it easier for diabetics to enjoy but you can certainly use whatever you enjoy. See note on bottom of directions if you don't want to use heavy cream, as you can substitute milk. I got the recipe from america's test kitchen, but added ground beef with onion as that is how I like my baked ziti.

- Adjust oven rack to middle position and heat oven to 350 degrees. Whisk cottage cheese, eggs, and 1 cup Parmesan together in medium bowl; set aside. Bring 4 quarts of water to boil in large Dutch oven over high heat. Stir in 1 tablespoon salt and pasta; cook, stirring occasionally, until pasta begins to soften but is not yet cooked through, 5 to 7 minutes. Drain pasta and leave in colander (do not wash Dutch oven).
- Meanwhile, brown ground hamburger with diced onion, set aside. Heat oil and garlic in 12-inch skillet over medium heat until garlic is fragrant but not brown, about 2 minutes. Stir in tomato sauce, diced tomatoes, oregano; and browned hamburger, simmer until thickened, about 10 minutes. Off heat, stir in ½ cup basil and sugar, then season with salt and pepper.
- Stir cornstarch into heavy cream in small bowl; transfer mixture to now-empty Dutch oven set over medium heat. Bring to simmer and cook until thickened, 3 to 4 minutes. Remove pot from heat and add cottage cheese mixture, 1 cup of your tomato sauce mixture, and ¾ cup mozzarella, then stir to combine. Add pasta and stir to coat thoroughly with sauce.
- Transfer pasta mixture to a prepared 13- by 9-inch baking dish and spread remaining tomato sauce evenly over pasta. Sprinkle remaining ¾ cup mozzarella and remaining 1/2 cup Parmesan over top. Cover baking dish tightly with foil and bake for 30 minutes.
- Remove foil and continue to cook until cheese is bubbling and beginning to brown, about 30 minutes longer.
- NOTE: If you don't have heavy cream, whole milk can be substituted by increasing the amount of cornstarch to 2 teaspoons and increasing the cooking time in step 3 by 1 to 2 minutes. Avoid preshredded mozzarella cheese, as it does not melt well.

BAKED ZITI AND SAUSAGE CASSEROLE
This recipe was taken from McCall's magazine years ago, it has remained a family favorite for years! you can use ricotta cheese in place of the cottage cheese if desired.

Steps:
- Set oven to 350 degrees.
- Grease a 3-quart baking dish.
- Cook the pasta in a large pot of boiling water until JUST tender (do not over-cook the pasta as it will cook more in the oven!).
- Place the cooked pasta in a large bowl.
- Heat oil; add in the sausage meat and cook until browned, remove to a plate.
- For the white sauce; melt butter in a medium saucepan; add the onion, garlic and cayenne pepper if using) saute for about 3-4 minutes.
- Add in flour and whisk for 1 minute.
- Slowly add in half and half cream; bring to a simmer, whisking constantly until thickened.
- Remove from heat; add in 1/3 cup Parmesan cheese, then season with seasoned salt (or white salt) and pepper to taste.
- Pour the cheese sauce over the cooked pasta in the bowl; mix with a wooden spoon.
- In a medium bowl mix together the cottage cheese with 1/4 cup Parmesan cheese, egg and chopped parsley, then season with salt and lots of pepper.
- Spoon HALF of the creamed ziti mixture into the prepared baking dish, then spread the cottage cheese mixture on top, then spoon the remaining pasta mixture on top of the cottage cheese mixture.
- Sprinkle the cooked sausage meat on the top.
- Top with mozzarella cheese, then sprinkle paprika on top.
- Bake uncovered for about 30-35 minutes or until bubbly and hot.
- Let stand about 5 or more minutes before serving.
RAMS FAN - ZITI CASSEROLE RECIPE

- There are a couple of ways to assemble the Casserole: One Way: Cook pasta, drain and put into large bowl. Mix with approximately 1 cup of sauce. Set aside. Mix ricotta cheese in a bowl with parsley and Romano or Parmesan grated cheese. Brown and drain ground beef and then add to the remaining first jar of sauce. Spread some sauce on bottom of pan. Add layer of pasta. Then add 6 large spoonfuls of ricotta mixture, sprinkle with mozzarella, and cover in a thin layer of sauce. Repeat layers of pasta, ricotta mixture, mozzarella and sauce. Last layer should be pasta and as much of the second jar of sauce to have a moist casserole. Bake in preheated 350-degree oven for 45min (or until lightly browned). Bring casserole hot to the Team Dinner. Another Way: Cook pasta, drain and put into a large bowl. Mix with the ricotta cheese, Romano or Parmesan cheese, mozzarella cheese, parsley, pepper, and 1-jar of sauce. Put mixture into a disposable aluminum pan. Add as much of the second jar of sauce to the top to ensure a moist casserole. Bake for 45min (or until lightly browned) in a preheated 350-degree oven. Bring casserole hot to the Team Dinner.
