COCONUT FLOUR BROWNIES



Coconut Flour Brownies image

If you love sweets, you'll need to give these delicious, coconut flour brownies a try.

Number Of Ingredients 8

3 eggs
1/2 cup agave nectar or honey
1/4 cup cocoa powder
1/2 cup of butter or coconut oil
1/4 teaspoon salt
1 teaspoon vanilla
7 Tablespoons coconut flour (or 1/2 cup less one tablespoon)
1 cup raspberries

Steps:

  • Preheat oven to 325º
  • Grease a muffin tin, or 9×9″ baking dish.
  • Beat eggs in a large mixing bowl.
  • Add agave or honey, cocoa, vanilla, and salt.
  • Melt butter or coconut oil, and add to mixture.
  • Stir in coconut flour - you may need to use egg beaters to mix out all the lumps.
  • Gently stir in raspberries.
  • Place in center of oven and bake for 25-30 minutes, until brownies are no longer gooey in the middle.
  • Let cool slightly before removing from pan and serving.
  • Enjoy!

1 pkg. (4 oz.) BAKER'S Unsweetened Chocolate
3/4 cup butter
2 cups sugar
4 eggs
1 tsp. vanilla
1 cup flour
1/2 cup raspberry jam
1 cup BAKER'S ANGEL FLAKE Coconut, toasted
1/2 cup chopped PLANTERS Salted Almonds

Steps:

  • Heat oven to 350°F.
  • Line 13x9-inch pan with foil, with ends of foil extending over sides. Spray foil with cooking spray.
  • Microwave chocolate and butter in large microwaveable bowl on HIGH 2 min. or until butter is melted. Stir until chocolate is completely melted. Add sugar; mix well. Blend in eggs and vanilla. Stir in flour until blended. Spread onto bottom of prepared pan.
  • Bake 30 min. Spread jam evenly on top; sprinkle with coconut and nuts. Bake 5 min. or until toothpick inserted in center comes out with fudgy crumbs. (Do not overbake.) Cool in pan.

1/2 cup butter, melted
1 cup sweetened flaked coconut
14 ounces condensed milk
1 cup raspberry jam
1/2 cup walnuts, chopped
1/2 cup semisweet chocolate morsel
1/4 cup vanilla chocolate chips

Steps:

  • Preheat oven to 350 degrees.
  • Pour melted butter into 13 x 9 pan.
  • Sprinkle graham crackers evenly over butter and spread to form a crust.
  • Sprinkle coconut over crust.
  • Pour condensed milk over crust.
  • Bake for 20-25 minutes or until lightly browned.
  • Mix raspberry jam and chopped walnuts together and spread over brownies.
  • Chill for 2 hours.
  • Melt semi sweet morsels and vanilla chips and drizzle individually over top of brownies.

The best brownies are soft in the center and have a crust on the top, oh and they also have chocolate chunks and fresh raspberries in them too! This recipe couldn't be simpler-just measure everything into 1 bowl, mix, add raspberries and bake! No doubt these will be one of the best desserts you have EVER made! I use fresh raspberries out of my garden. I am sure you could use frozen, but perhaps you would need to drain off some of the liquid as to not screw with the proportions of the recipe. TRY not to eat the whole pan at once!

200g dark chocolate, broken into chunks
100g milk chocolate, broken into chunks
250g pack salted butter
400g soft light brown sugar
4 large eggs
140g plain flour
50g cocoa powder
200g raspberries

Steps:

  • Heat oven to 180C/160C fan/gas 4. Line a 20 x 30cm baking tray tin with baking parchment. Put the chocolate, butter and sugar in a pan and gently melt, stirring occasionally with a wooden spoon. Remove from the heat.
  • Stir the eggs, one by one, into the melted chocolate mixture. Sieve over the flour and cocoa, and stir in. Stir in half the raspberries, scrape into the tray, then scatter over the remaining raspberries. Bake on the middle shelf for 30 mins or, if you prefer a firmer texture, for 5 mins more.
