CRAN-RASPBERRY JAM
I'm sure to pick up extra bags of cranberries for the freezer in the fall so that I can make this lovely, delicious jam year-round. My kids love it on peanut butter sandwiches. Jars of this pretty ruby-colored jam also make great gifts. -Marjilee Booth, Chino Hills, California

- Drain raspberries, reserving juice; add enough water to juice to measure 1-1/2 cups. Pour into a Dutch oven. Add raspberries and cranberries; stir in pectin. Bring to a full rolling boil over high heat, stirring constantly. Stir in sugar; return to a full rolling boil. Boil and stir 1 minute., Remove from heat; skim off foam. Ladle hot mixture into six hot half-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool.

CRANBERRY CONSERVE
I'm 95, and I still remember my grandmother from Germany making this lovely, delicious conserve for the holidays. She'd give it to family members and friends. It tastes great served as a relish alongside meat or even spread on biscuits. -Mildred Marsh Banker, Austin, Texas

Steps:
- In a large saucepan, combine the cranberries, orange zest, oranges, raisins and water. Cover and simmer over medium heat until cranberries are soft. Add pecans and sugar; stir well. Simmer, uncovered, 10-15 minutes, stirring often. Cool. Spoon into covered containers. Refrigerate. Serve as a relish with poultry or pork, or spread on biscuits or rolls.

RASPBERRY CRANBERRY PRESERVES
This is so bright red when jarred. Great over pancakes,waffles, top over vanilla ice cream, put into a layer cake or just top on toast. Gift giving. Drizzle softened preserves to garnish a dish. Add to a vinegar and oil for a raspberry salad dressing.Use to glaze a fruit pie, pork roast baked ham or a roasted chicken. Fill your favorite Christmas cookies.

Steps:
- Stir together 1 cup sugar and raspberries in a bowl and let stand for 1 hour.
- Add cranberries and the remaining sugar together in a stainless steel pan and place over high heat.
- Stir constantly so the sugar does not burn until the cranberries begin to release juice, about 5 minutes.
- Continue cooking until all the cranberries have popped and the mixture is syrupy and comes to a boil.
- Skim off any foam that forms on top and continue to cook and stir until the mixture thickens, about 10 minutes more.
- Add the raspberries and all their juice and cook for 10 minutes more.
- Stir in the dried cranberries, sliced orange and spices.
- Remove a small amount of the jam to a saucer and place in the freezer for 5 minutes.
- If the mixture wrinkles when pushed to one side, it is ready.
- If not, continue cooking for 5 minutes and retest.
- When the preserves are the right consistency, turn down the heat to a simmer stir in Grand Marnier and ladle into hot sterilized jars.
- Wipe the rims clean with a damp towel and seal with new lids and metal rings.
- Process in a hot-water bath for 5 minutes.
- Remove, cook, check seals, label, and store.
- Makes 7 one 1/2 pint jars.

STRAWBERRY RASPBERRY PRESERVES
Steps:
- In a large bowl, combine the strawberries, raspberries, sugar, orange zest and juice. Stir to combine and let macerate for 30 minutes.
- After 30 minutes, gently smash the fruit mixture to start breaking the fruit down.
- Remove one-quarter of the fruit mixture and PULSE (not puree) in the food processor and return it to the bowl.
- In a small saucepan, combine the pectin and 3/4 cup water. Bring the water to a boil and boil for 1 minute, no longer. Add to the fruit and stir for 3 to 4 minutes.
- Cover and place in the refrigerator to set for 2 hours or overnight.
- Serve with toast or homemade biscuits.
CRANBERRY, RASPBERRY, PECAN CONSERVE

Steps:
- In a skillet, toast pecans over medium heat, shaking pan to avoid burning. In about 8 minutes, nuts will become fragrant and smell toasty; remove from heat and chop.
- In a large heavy pot, bring cranberries, raspberries, sugar, lemon juice and zest to a boil. Remove from heat, pour into a ceramic or glass bowl, then cover and refrigerate overnight. If not canning, add pecans and serve.
- If canning, put a rack in a large stockpot or line the pot with a folded kitchen towel. Fill with water and bring to a boil. Add 4 half-pint canning jars or two pint-size canning jars and boil for 10 minutes. Jars may be left in the warm water in the pot until ready to be filled. Alternatively, sterilize the jars by running them through a dishwasher cycle, leaving them there until ready to fill.
- Place canning rings in a small saucepan, cover with water and bring to a boil. Turn off the heat and add the lids to soften their rubber gaskets. Rings and lids may be left in the water until jars are filled.
- Strain the cranberry raspberry mixture through a sieve over a heavy pot, then place the strainer in a bowl to catch any additional syrup. Reserve the fruit solids.
- Bring liquid to a boil. When syrup reaches 220 degrees, or an active boil that cannot be stirred down, add back the fruit and any juices that have accumulated.
- Bring the mixture back to a hard boil, stirring constantly. Add the pecans, and then cook until the conserve is at a boil that cannot be stirred down and has thickened to a jammy consistency.
- Remove the jars from the pot. Ladle hot conserve into the hot jars, leaving 1/2-inch head space.
- Wipe jar rims with a damp towel. Place lids on jars, screw on rings and lower jars back into the pot of boiling water. Return to a full boil and boil the jars for 15 minutes for half pints, 20 minutes for pints. Transfer jars to a folded towel and allow to cool for 12 hours; you should hear jars ping as they seal.
- Once cool, test seals by removing rings and lifting jars by the flat lid. If the lid releases, the seal has not formed. Unsealed jars should be refrigerated and used within a month, or reprocessed. Rings and jars may be reused, but a new flat lid must be used each time jars are processed. To reprocess, reheat conserve to boiling, then continue as before.

RASPBERRY CRANBERRY DESSERT PRESERVES
I use a lot of recipes from the "Complete Book of Small-Batch Preserving" to make use of fresh produce but also have a variety. These preserves are good over ice cream, frozen yogurt, pound cake, rice pudding, etc.

Steps:
- Combine all ingredients (except liqueur) in a large stainless steel or enamel saucepan and bring to a boil over high heat.
- Reduce heat& boil gently, uncovered, for 20 minutes or until thickened, stirring frequently.
- Remove from heat& stir in liqueur.
- Ladle into sterilized jars leaving 1/2 inch of head space.
- Be sure to eliminate air bubbles.
- Place jars into boiling water in a canner, add water to cover jars by 2 inches& return water to a boil.
- Boil 10 minutes for 1/2 pint (250ml) jars and 15 minutes for pint (500ml).
- Remove jars, let cool, label& store in cool, dark place.
