HOW TO MAKE RASPBERRY GIN (EASY HOMEMADE FRUITY GIN!)

Steps:
- Place everything into a large, sterilised jar, and give it a good stir.
- Cover and place in a dark spot for 4 weeks. I place mine in a kitchen cupboard. Stir it every other day, or as often as you remember to!
- To drink, strain through a sieve or, if you like a crystal clear pink gin, strain though a double layer of muslin or cheese cloth into a sterilised bottle.

RASPBERRY-LIME GIN AND TONIC
Steps:
- Add the raspberries, gin and lime juice to a shaker with ice and shake to blend. Strain over a glass with ice, add the tonic and stir. Add a few whole raspberries and a slice of lime.
RASPBERRY GIN
Make your own raspberry gin with this easy infusion recipe. This gin makes for a warming tipple to enjoy yourself, or a festive homemade gift. Plus you can make this gin in advance of needing it, so perfect if you're preparing for Christmas.

- Pour the gin, fruit, sugar, spices, and almond essence into the sterilized jar, or divide the ingredients equally between two bottles using a funnel (there's no need to sterilize a vodka or gin bottle if the alcohol has just been poured out of it). Seal and store in a cool, dark place. Give the jar or bottles a shake daily for the rest two weeks and then weekly for a further three months. During this time the sugar dissolves and the liquid takes on a luscious red colour. Take a sip every now and then and add more sugar if needed. After three and a half months, or when the taste is to your liking, strain the ingredients, and re-bottle the liquid only. You will need: 1 large, wide-necked jar, sterilized, or 2 empty gin bottles
RASPBERRY GIN
Preserve the taste of summer in a bottle with this raspberry gin, perfect topped up with tonic. The gin will keep its lovely pink hue for a few months

- Tip the raspberries and sugar into a 1.5L sterilised jar. Pour over the gin, seal the jar and swirl around to dissolve the sugar. Store in a cool, dark place and turn the jar once a day for the first week. After 2-3 weeks, strain the gin through a sieve. Pour the gin into mini bottles, and label. The gin will keep its vibrant pink colour for a few months and will be drinkable for a year. Use the boozy raspberries in a cocktail or trifle, or turn them into a granita.
