Raspberry Fluff Jello Salad Recipe image

Light and fluffy, this Raspberry Fluff Jell-O Salad only has 5 ingredients and comes together in a matter of minutes. It's the perfect light dessert or even side dish at your potluck party.

Number Of Ingredients 6

4.6 ounces cook and serve vanilla pudding mix (1 package, (Instant Pudding will NOT work))
6 ounces raspberry Jell-o (1 package)
3 cups water
1 teaspoon lemon juice
16 ounces cool whip (1 container, (lite or fat-free is fine))
3 cups raspberries ((sometimes I add blackberries and blueberries too! Any fresh/frozen berries will do))

Steps:

  • Mix together pudding, Jell-o, water, and lemon juice in saucepan over medium heat until it boils.
  • Once it comes to a full rolling boil, remove from heat and pour into large bowl.
  • Cover with plastic wrap and refrigerate until mixture has thickened (about 3 hours).
  • With an electric mixer, beat jello until creamy. Gently fold in Cool Whip.
  • Then add in raspberries until completely mixed together.
  • Stick back into the fridge and chill for about an hour before serving.

1 package (10 ounce size) frozen red raspberries, thawed and drained (reserve juice)
1 1/4 cup reserved raspberry juice and water as needed
1 package (3 ounce size) raspberry gelatin powder
1 pint vanilla ice cream, softened

Steps:

  • Combine the reserved raspberry juice and water in a large saucepan over medium-high heat. Bring to a boil. Whisk in the gelatin powder, stirring until dissolved. Add the ice cream slowly, stirring until melted. When all the ice cream is added, fold in the raspberries. Place the mixture in a container and place in the refrigerator until well chilled and firm.

1 cup hot water
1 cup vanilla ice cream
1 (9 ounce) can crushed pineapple, undrained
1/2 cup chopped pecan nuts
1 medium banana, sliced

Steps:

  • Combine gelatin and hot water; stir until dissolved.
  • Add ice cream and stir well until thoroughly dissolved.
  • Combine undrained pineapple, nuts and sliced bananas, then add to gelatin mixture.
  • Pour into a quart mould and chill until firm.

This is my favorite jello salad of all time. I make it for Christmas and Thanksgiving every year as well as other special occasions. It looks pretty and it tastes oh so yummy!!

2 (6 ounce) packages raspberry Jell-O gelatin
1 (12 ounce) package frozen unsweetened raspberries
1 (16 ounce) carton sour cream
3 large bananas

Steps:

  • Dissolve 1 package of Jello with 1-3/4 cups boiling water.
  • Pour into a 9X13 cake pan or dish. Add berries.
  • Stir until berries are covered with Jello and evenly spread out.
  • Chill until set.
  • Spread sour cream over set berry mixture.
  • Slice bananas and place 1 layer over sour cream.
  • Dissolve 2nd package Jello in 1-3/4 cups boiling water.
  • Add 2 cups of ice cubes and stir until Jello begins to thicken. Remove any unmelted ice cubes.
  • Pour thickened Jello over banana layer.
  • Chill until completely set.
