FRIED RAVIOLI SLIDERS RECIPE BY TASTY

Here's what you need: ground beef, ground sausage, salt, pepper, italian breadcrumb, garlic powder, red pepper flakes, salt, grated parmesan cheese, eggs, raviolis, oil, mozzarella cheese, fresh parsley, tomato sauce

Number Of Ingredients 15

1 lb ground beef
1 lb ground sausage
1 teaspoon salt
1 teaspoon pepper
1 ¹¹⁄₂ cups italian breadcrumb
1 tablespoon garlic powder
½ teaspoon red pepper flakes
1 teaspoon salt
1 cup grated parmesan cheese
2 eggs, beaten
30 raviolis, thawed if frozen
oil, for frying
15 slices mozzarella cheese, cut into fourths
fresh parsley, to serve
tomato sauce, to serve

Steps:

  • Preheat oven to 350˚F (180˚C).
  • In a bowl add the beef, sausage, salt, and pepper. Mix to combine.
  • Spread the meat mixture onto a parchment paper-lined baking sheet.
  • Bake for 10 to 15 minutes until fully cooked.
  • In a bowl, add bread crumbs, garlic powder red pepper flakes, salt and Parmesan. Stir to combine.
  • Take one ravioli and dip in the whisked eggs, then dip into the bread crumb mixture. Repeat with the rest of the ravioli.
  • Heat 1 inch (2 cm) of oil until the temperature reaches 350˚F (180˚C). Fry ravioli 4 at a time.
  • Cut the cooked meat into 15 pieces.
  • Place the fried ravioli on a parchment paper-lined baking sheet in a ring shape. Place 2 squares of cheese on the ravioli. Place a piece of meat on top. Place 2 more squares of cheese on the meat. Place a ravioli on top.
  • Bake for 5 minutes until cheese is melted.
  • Sprinkle with parsley and serve with tomato sauce for dipping.
  • Serve immediately.

These little burgers have a creamy cheese ravioli stuffed inside.

10 cheese-filled ravioli
1 1/4 lb ground beef
10 mini buns
10 slices American cheese
2 onions, diced
1 clove garlic, minced
1 can (14.5 oz) Muir Glen™ diced tomatoes
1 cup ketchup
2 tablespoons butter

Steps:

  • Cook the onions in the butter with some salt until very, very browned.
  • Add the garlic and cook one minute.
  • Add the can of tomatoes with the juices. Simmer and cook about 15 minutes.
  • Add the ketchup to the sauce and blend until smooth.
  • Meanwhile, boil your ravioli according to package instructions.
  • To make the burgers, grab a handful of beef and press it onto a plate until very thin. Put one of the ravioli on the beef and wrap the beef around it. Try and press out any air but be gentle and careful not to break the ravioli. There will be rips, but just work to fill them in and remove any excess beef from the sides of the burger. Don't worry about getting it perfect.
  • Grill the burgers until browned and cooked through. Top with cheese and serve on a bun with some of the sauce.

Egg-Stuffed Ravioli image

This impressive pasta dish has a surprise inside: a beautiful runny egg yolk. Though worthy of a restaurant appetizer, it is unexpectedly easy to put together when you use store-bought pasta sheets. Just as good, you can make the ravioli several hours ahead and store it in the refrigerator covered with a kitchen towel.

8 tablespoons (1 stick) unsalted butter
1 clove garlic, chopped
One 10-ounce box frozen chopped spinach, thawed
1 cup ricotta
1 cup freshly grated mozzarella
1/2 cup grated Parmesan
Kosher salt and freshly ground black pepper
Eight 8-by-4-inch sheets fresh pasta (about 1/2 pound), cut in half crosswise
9 large eggs
8 fresh sage leaves

Steps:

  • Melt 2 tablespoons butter in a medium skillet over medium heat until foamy. Add the garlic and cook until it starts to become golden, about 2 minutes. Stir in the spinach and 1/4 cup water. Cook, stirring often, until the spinach is tender and the liquid has evaporated, about 5 minutes. Transfer to a food processor and add the ricotta, mozzarella, Parmesan and 1/2 teaspoon each salt and pepper. Puree until smooth and bright green. Spoon into a plastic pastry bag or large resealable plastic bag, snip the tip to 1/4 inch wide and set aside.
  • Put 8 pieces of pasta on a clean work surface and pipe a circle of the spinach mixture in the middle of each square, making sure to leave about a 1-inch border all around. Using the back of a spoon, make a well in the middle deep enough to hold an egg yolk. One by one, separate 8 eggs and put a yolk in each well. (Reserve the whites for another use.)
  • Crack the remaining egg into a small bowl and beat lightly with a fork. Brush the edges of the pasta pieces with the egg, and then top with the remaining squares of pasta. Working from the edge of the filling outward, firmly press the dough together, making sure there are no air bubbles. Trim the edges of each ravioli with a sharp knife or a fluted pasta cutter.
  • Bring a large pot of salted water to a boil. Melt the remaining 6 tablespoons butter in a small skillet with the sage leaves over medium heat and cook, swirling often, until the butter is golden brown and the sage is fried and crisp, about 3 minutes. Set aside. Gently drop the ravioli into the water and cook until the pasta is tender and the egg is still runny, about 6 minutes.
  • Remove from the water with a slotted spoon or handheld strainer and place each ravioli in an individual bowl. Top each with a sage leaf and evenly spoon the butter over. Serve immediately.

Ravioli Stuffed with Ricotta and Spinach image

For the Filling
1 1/2 pounds fresh ricotta cheese, or 3 cups packaged whole-milk ricotta cheese
2 tablespoons extra-virgin olive oil
2 small leeks, white parts only, trimmed, cleaned, and chopped (about 1 cup) (see page 80)
1/2 cup minced scallions, including greens (about 6 scallions)
4 cups fresh spinach leaves, stemmed, washed, and dried (see page 67), chopped coarsely
Salt
Freshly ground black pepper
1 cup freshly grated Parmigiano-Reggiano cheese
2 tablespoons chopped fresh Italian parsley
1 large egg, beaten
Fresh Egg Pasta (page 178)
For Dressing the Ravioli
2 cups Tomato Sauce (page 151)
2 tablespoons extra-virgin olive oil
8 fresh basil leaves, washed and shredded
1/2 cup freshly grated Parmigiano-Reggiano cheese

Steps:

  • Spoon the ricotta into a large fine-mesh sieve or a colander lined with a double thickness of cheesecloth or a basket-type coffee filter. Set the sieve over a bowl and cover the ricotta well with plastic wrap. Let the ricotta drain in the refrigerator at least overnight or up to 24 hours. Discard the liquid in the bottom of the bowl.
  • In a wide braising pan or deep skillet, heat the oil over medium-low heat. Add the leeks and scallions and cook until softened, about 3 minutes. Stir in the chopped spinach and increase the heat to medium. Season lightly with salt and pepper and cook over moderate heat until the vegetables are tender and the liquid is evaporated, about 10 minutes. Set in a strainer and cool completely.
  • Stir the fresh ricotta, Parmigiano-Reggiano, parsley, and sautéed greens together in a bowl. Season to taste with salt and pepper and stir in the egg. Chill thoroughly.
  • While the filling is chilling, make the pasta dough and let rest.
  • Form and cut the ravioli according to directions on page 190. The ravioli should be cooked immediately or refrigerated up to 4 hours. (The ravioli may also be frozen: Place the sheets of ravioli onto a freezer shelf and freeze until solid to the touch. Carefully transfer the ravioli to resealable plastic bags or airtight plastic containers.)
  • Bring 6 quarts of salted water to a boil in an 8-quart pot over high heat. Slip the ravioli into the water a few at a time, stirring gently as you do. Cook until the edges of the pasta are tender but still firm to the bite and they rise to the surface, about 6 minutes after the water returns to a boil.
  • While the ravioli are cooking, divide the tomato sauce, olive oil, and basil between two large skillets and bring to a simmer over medium heat. Fish out the ravioli with a wire skimmer or large flat slotted spoon, drain them well over the pasta pot, and slide them into the pans of sauce, dividing them evenly. Simmer, stirring gently with a spoon until the sauce is lightly reduced and the ravioli are coated. Remove the pans from the heat, check the seasoning, and add salt and pepper if necessary. Spoon the ravioli into warm bowls or onto a warm platter, sprinkle with the grated cheese, and serve immediately.
  • Variation: Butter-Sage Sauce (Conditi all Burro e Salvia)
  • Melt one stick (8 tablespoons) unsalted butter in a large skillet over low heat. (The heat should be low enough to melt the butter slowly, without its separating or turning clear.) Add eight to ten whole sage leaves and remove the skillet from the heat. Ladle out about 1 cup of the ravioli-cooking water before you drain them. Either fish the ravioli out of the pot with a large wire skimmer or drain them gently. Add the ravioli to the skillet. Pour in enough of the cooking liquid to make a sufficient amount of creamy sauce to coat the ravioli generously. Bring to a quick boil, then remove from the heat. Stir in grated Parmigiano-Reggiano cheese, salt, and freshly ground black pepper to taste. Serve immediately.
