This super EASY keto yeast bread recipe is light, fluffy, and chewy, with delicious yeast flavor and only 6 ingredients.

1 packet Active dry yeast ((2 1/4 tsp))
1/4 cup Water ((lukewarm))
1 tsp Inulin powder
1 bag Wholesome Yum Keto Bread Mix
6 tbsp Unsalted butter
4 large Eggs
3/4 cup Unsweetened almond milk

Steps:

  • In a small bowl, stir together the inulin and 1/4 cup (59 ml) warm water (make sure it's not hot or cold). Stir in the yeast and set aside for 10-15 minutes, until puffy.
  • Meanwhile, make the bread mix batter according to the package instructions. (Do not bake yet, keep it in the bowl.)
  • When the yeast is done proofing and has increased in volume to 1/2 cup, fold it into the bread batter, until uniform.
  • Cover with plastic wrap and place in a warm place (such as a turned off oven with the light on) to proof for 1 hour.
  • After an hour, preheat the oven to 325 degrees F (162 degrees C). Line an 8x4 loaf pan with parchment paper hanging over the sides. Transfer the batter to the lined loaf pan and gently smooth the top, being careful not to disturb the yeast too much.
  • Bake bread according to package instructions, about 50-60 minutes, until golden and an inserted toothpick comes out clean. If it browns too much before the inside is done, tent the top with foil and continue baking until done.

If you are looking for the best low carb yeast bread on all of the Internet then look no further. This low carb version of traditional rye bread will knock your socks off. And each slice has just 7g net carbs.

2 1/4 cups warm (like bath water) water, divided
6 tablespoons butter, melted
2 teaspoons sugar*
2 envelopes (4 1/2 teaspoons) active dry yeast
1/4 teaspoon ground ginger
2 cups vital wheat gluten
2 cups super fine almond flour
1/4 cup dark rye flour
1 1/2 teaspoon salt
1 tablespoon baking powder
1/4 cup Swerve Granular
1 tablespoon caraway seeds
1/2 tablespoon melted butter to brush over the top of the dough.

Steps:

  • Liberally grease an 8, 9 or 10 inch wide glass or metal bowl with butter. Use the most rounded bowl that you have.
  • 2. Mix together 1/2 cup warm water, sugar, ginger and yeast in a large bowl and cover the bowl with a towel. After 7-10 minutes the mixture should be frothy with small bubbles. If it is not frothy, then the yeast has died and you need to start over with new yeast.
  • 3. Sift together remaining dry ingredients except the caraway seeds.
  • 4. Mix together the frothy yeast mixture, 6 tablespoons melted butter and remaining 1 3/4 cup warm water.
  • 5. Slowly mix the dry ingredients into the wet ingredients and stir well to combine. You can use a stand mixer with a dough hook, or just a wooden spoon and some elbow grease. Mix in caraway seeds.
  • 6. The dough should be sticky and rather wet, but you should be able to knead it. But if it's too dry to knead then add a little water and if it's too wet to knead you can add a little more almond flour. Knead the dough for 3 minutes.
  • 7. Form the dough into a ball and place it in the greased bowl.
  • 8. Preheat the oven for 2-3 minutes until it reaches 100-110 degrees. Cover the bowl with a towel and place the bowl of dough in the oven to rise for 1 hour. It will not rise very much at all. That's ok because it will rise when you bake it. Remove the bowl from the oven. Brush the top of the dough with 1/2 tablespoon melted butter.
  • 9. Pre-heat oven to 350 degrees F and bake for 35-45 minutes. Loosely cover the bread with a piece of foil at minute 20 to keep the bread from browning too much. Bake until the internal temperature reaches 200 - 210 degrees F and a wooden skewer in the middle of the loaf comes out clean.
  • 10. Cool in the bowl for 10 minutes. Then place a large cutting board on top of the bowl. Invert the bowl to release the loaf from the bowl.
  • 11. Wait until fully cooled before cutting. If you can.

Having lived in northwest Connecticut for over 35 years, in close proximity to NYC with its great Jewish delis, baking some of the finest rye bread going, I snagged this recipe from a friend. Hope you like it. Enjoy and share with your family, friends, and neighbors.

2 cups unbleached bread flour (such as King Arthur®)
1 cup dark rye flour
3 tablespoons dry potato flakes
2 tablespoons caraway seeds
1 ½ tablespoons demerara sugar
2 ½ teaspoons instant yeast
1 ½ teaspoons sea salt
1 cup warm water
¼ cup canola oil
¼ cup sour pickle juice

Steps:

  • Place bread flour, rye flour, potato flakes, caraway seeds, demarara sugar, yeast, and sea salt in the bowl of a large stand mixer. Turn mixer to low and thoroughly mix dry ingredients. Beat warm water, canola oil, and pickle juice into dry ingredients. Fit dough hook onto mixer and beat until dough is rough and shaggy-looking.
  • Cover bowl with plastic wrap and let rest for exactly 30 minutes. Remove plastic wrap and knead dough in stand mixer with dough hook until smooth, firm, and only slightly sticky, 6 to 8 minutes. Turn dough onto a floured work surface and knead until smooth, 1 to 2 more minutes.
  • Form dough into a ball, place dough into an oiled bowl, and turn dough around several times in bowl to coat with oil. Cover the bowl with plastic wrap, set into a warm place, and let rise until nearly double, about 1 hour.
  • Grease a 5x9-inch loaf pan. Turn dough onto a lightly oiled surface, shape into a log, and place into prepared loaf pan. Cover with a cloth kitchen towel and let rise until top of dough has risen slightly over top of pan, 60 to 90 minutes.
  • Place rack in middle of oven and preheat oven to 350 degrees F (175 degrees C).
  • Bake loaf until golden brown and cooked through, about 35 minutes. The internal temperature of the bread should be 190 degrees F (90 degrees C). If loaf browns too quickly, cover loosely with a tent of aluminum foil with shiny side out. Remove from pan and cool on wire rack.
