1 cup butter, melted
2 cups white sugar
½ cup cocoa powder
1 teaspoon vanilla extract
4 eggs
1 ½ cups all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
½ cup walnut halves

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch pan.
  • Combine the melted butter, sugar, cocoa powder, vanilla, eggs, flour, baking powder, and salt. Spread the batter into the prepared pan. Decorate with walnut halves, if desired.
  • Bake in preheated oven for 20 to 30 minutes or until a toothpick inserted in the center comes out with crumbs, not wet. Cool on wire rack.

1 teaspoon vanilla extract
1 cup confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8-inch square pan.
  • In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Spread batter into prepared pan.
  • Bake in preheated oven for 25 to 30 minutes. Do not overcook.
  • To Make Frosting: Combine 3 tablespoons softened butter, 3 tablespoons cocoa, honey, 1 teaspoon vanilla extract, and 1 cup confectioners' sugar. Stir until smooth. Frost brownies while they are still warm.

2 ½ sticks unsalted butter, plus more, softened, for greasing
8 oz good-quality semisweet chocolate, or bittersweet chocolate, 60-70% cacao, roughly chopped
¾ cup unsweetened dutch process cocoa powder, divided
1 tablespoon espresso powder
2 cups granulated sugar
½ cup dark brown sugar, packed
2 teaspoons vanilla extract
2 teaspoons kosher salt
6 large eggs
1 cup all-purpose flour
flaky sea salt, for sprinkling

Steps:

  • Grease a 9x13-inch (23x33-cm) dark metal pan with softened butter, then line with parchment paper, leaving overhang on all sides. Grease the parchment with softened butter.
  • Combine the chopped chocolate, ¼ cup (30 g) of cocoa powder, and espresso powder in a heatproof liquid measuring cup or medium bowl and set aside.
  • Add the butter to a small saucepan over medium heat and cook until the butter just comes to a vigorous simmer, about 5 minutes, swirling the pan occasionally. Immediately pour the hot butter over the chocolate mixture and let sit for 2 minutes. Whisk until the chocolate is completely smooth and melted, then set aside.
  • Combine the granulated sugar, brown sugar, vanilla extract, salt, and eggs in a large bowl. Beat with an electric hand mixer on high speed until light and fluffy, about 10 minutes. It will be similar to the texture of very thick pancake batter.
  • With the mixer on, pour in the slightly cooled chocolate and butter mixture and blend until smooth.
  • Position a rack in the middle of the oven and preheat to 350°F (180°C).
  • Sift in the flour and remaining cocoa powder and use a rubber spatula to gently fold until just combined.
  • Pour the batter into the prepared baking pan and smooth the top with a spatula. Bake until lightly puffed on top, about 20 minutes.
  • Remove the baking pan from the oven using oven mitts or kitchen towels, then lightly drop the pan on a flat surface 1-2 times until the brownies deflate slightly. Sprinkle with flaky sea salt.
  • Return the pan to the oven and bake until a wooden skewer inserted into the center of the brownies comes out fudgy but the edges look cooked through, about 20 minutes more. The center of the brownies will seem under-baked, but the brownies will continue to set as they cool.
  • Set the brownies on a cooling rack and cool completely in the pan.
  • Use the parchment paper to lift the cooled brownies out of the pan. Cut into 24 bars and serve immediately.

Steps:

  • Preheat the oven to 350°F (180°C). Line an 8-inch (20 cm) square baking dish with parchment paper.
  • Chop the chocolate into chunks. Melt half of the chocolate in the microwave in 20-second intervals, saving the other half for later.
  • In a large bowl, mix the butter and sugar with an electric hand mixer, then beat in the eggs and vanilla for 1-2 minutes, until the mixture becomes fluffy and light in color.

4 ounces butter
5 ounces unsweetened chocolate
4 large eggs, at room temp
1/4 cup prune
2 tablespoons brandy or 2 tablespoons Irish whiskey
2 cups sugar (all white, or up to half brown)
1/4 teaspoon cinnamon
1 cup all-purpose flour

Steps:

  • Preheat oven to 350°F.
  • Grease and flour a 9x13 pan. (Unsweetened cocoa can replace the flour if you don't want any white areas on the outside of the brownies.).
  • Melt the butter in a small saucepan and add the chocolate. Remove from stove top if electric or turn off gas and let the chocolate melt from the accumulated heat in the butter. If necessary, return to low heat to finish the melt. In any case, let it all cool to room temperature.
  • In a food processor with metal blade, combine the whiskey and prunes. Run at high speed until finely chopped. Add the eggs. Blend well. Add sugar in 3 or 4 increments. Blend until light and thick. (This is important.).
  • Scrape the mixture in to a medim bowl. With a broad spatula or big spoon, fold in the melted chocolate/butter mixture. When nearly uniform in color, fold in the cup of flour and 1/4 tsp of cinnamon.
  • When nearly uniform in color, scrape into prepared pan.
  • Bake for 25 minutes at 350. Cut into 12 or more pieces after they are cooled.
  • Note: You can add some pecans or walnuts to the batter or the top of the brownies. Consider putting in a bit of grated fresh orange peel.

1/2 teaspoon finely ground espresso coffee beans
1/8 teaspoon salt
1/2 pound (2 sticks) unsalted butter, melted and cooled
8 ounces unsweetened chocolate, melted and cooled
1 2/3 cups all-purpose flour
2 cups walnut pieces, toasted

Steps:

  • Preheat oven to 375 degrees. Line an 11 1/2-by-17 1/2-inch jelly roll pan with parchment paper, and coat with nonstick cooking spray. In an electric mixer, whip eggs, sugar, vanilla, coffee and salt on high speed until thick, about 5 minutes.
  • Add butter and chocolate, and mix until combined. Add flour, and mix lightly to incorporate. Add walnuts, and mix lightly until combined.
  • Scrape batter into pan, and spread evenly with a rubber spatula. Bake until brownies have set and a knife inserted in center comes out clean, about 18 minutes. Do not over-bake. Let cool in pan, then cut into 1-inch cubes.
