SUPER SLOPPY JOES

- Heat a large skillet over medium high heat. Add oil and meat to the pan. Spread the meat around the pan and begin to break it up. Combine brown sugar and steak seasoning. Add sugar and spice mixture to the skillet and combine. When the meat has browned, add onion and red peppers to the skillet. Reduce heat to medium and cook onions, peppers, red wine vinegar and Worcestershire sauce with meat for 5 minutes. Add tomato sauce and paste to pan. Stir to combine. Reduce heat to simmer and cook Sloppy Joe mixture 5 minutes longer. Using a large spoon or ice cream scoop, pile sloppy meat onto toasted, buttered bun bottoms and cover with bun tops. Serve with your favorite sides or sliced tomatoes seasoned with salt and pepper, dill pickles and Deviled Potato Salad. Have plenty of napkins on hand!
- Boil potatoes in water seasoned with coarse salt until they are tender, about 10 minutes. Drain cooked potatoes and return to the warm pot to dry them out. Let the potatoes stand 2 minutes, then spread potatoes out on to a cookie sheet to quick-cool them.
- In the bottom of a medium mixing bowl, grate 1/4 onion using a hand grater. Add mustard and mayonnaise, paprika and cayenne pepper sauce to the grated onion and stir to combine. Add potatoes to the bowl and stir to evenly distribute dressing. Season potato salad with salt and pepper and taste to adjust your seasonings. Top servings of salad with chopped scallions.

- Make the sauce in a 2-cup glass measuring cup (or a medium bowl). Stir together the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, garlic powder, onion powder, and freshly ground black pepper until well combined; set aside.
- Set a large pot over medium-low heat. Add a few drops of extra-virgin olive oil, and saute the garlic for a minute or two until just fragrant and very light golden brown. Add ground beef, increase heat to medium/medium high, and cook until nicely browned with no pink remaining, breaking apart and stirring as the meat cooks. Drain the grease.
- Pour the sauce over the browned meat, stir to combine, and simmer for at least 10 minutes until heated through, stirring occasionally.
- Serve warm on hamburger buns or rolls with sliced pickles on top.

- Start by browning the ground beef in a large pot over medium-high heat. Drain off the fat.
- Add in the green peppers and onions. Stir, and then add 1 cup water, the ketchup and garlic. Stir it around to combine, and then add the brown sugar, chili powder, dry mustard, red pepper flakes, and hot sauce, Worcestershire, salt and pepper to taste. Stir to combine, and then cover and simmer over medium-low heat, about 20 minutes.
- To serve, spread the rolls with the butter and brown them on a griddle or in a skillet. Spoon a good amount of the meat mixture onto the bottom roll, and then top with the other half. Serve with chips, salad or just enjoy it by itself.

- In a Dutch oven, cook beef and green pepper over medium heat until meat is no longer pink; drain. Stir in the tomatoes, tomato sauce, tomato paste and seasonings. Bring to a boil. I know I personally, can't stand canned sloppy joes or mixes like Manwich. Most of the things I know how to make are from zaar, watching my mother and going from memory, or like this one from my cooking teacher in high school. Definitely not a "sweet" sloppy joe. I never liked sloppy joes until I tried this recipe Sometimes I substitute celery seed and onion flakes for the real deal, depends what you have on hand and if you like chunks of veggies in your sloppy joes. Feel free to add some extra chili powder, this is the basic recipe as I was taught, depending on mood I'll keep it the same or add more

- Use 4-5 1/2 quart slow cooker.
- Warm a large skillet over medium heat for a few minutes, then pour in the oil and swirl it around to coat the hot surface.
- Crumble the ground beef into the skillet; cook, stirring often, until well browned, between 4-8 minutes.
- Use a slotted spoon to get the ground beef into the slow cooker.
- Stir in onions, bell peppers, celery, tomato paste, vinegar, molasses, paprika, Worcestershire sauce, garlic, mustard, and pepper until the tomato paste is dissolved.
- Cover and cook on low for 6 hours, or until the vegetables have almost melted into the thickened sauce. Season to taste with salt.
- Serve by spooning the spiced beef mixture into the buns.
