AUTHENTIC CHICKEN EMPANADAS (EMPANADAS DE POLLO)
My husband and I returned recently from a wonderful trip to Puerto Rico. While there we fell in love with "empanadas de pollo" (chicken pies), that we found at roadside stands along Route 3. Here is a version we came up with once we returned--delicious!

Steps:
- Mix flour, salt, baking powder, and baking soda together in a large bowl. Add water and 1/4 cup vegetable oil; mix with an electric mixer until well combined and a dough begins to form, about 3 minutes. Remove dough and knead on a lightly floured surface for about 3 minutes. Wrap in plastic wrap and set aside for 15 minutes.
- Meanwhile, heat 2 tablespoons oil in a large skillet over medium-high heat. Add shredded chicken and saute until heated through, about 2 minutes. Add onion, bell pepper, cilantro, olives, garlic, sazon seasoning, tomato paste, salt, and pepper and cook, stirring occasionally, until vegetables have softened, about 10 minutes. Remove from heat and let cool.
- Divide empanada dough into 12 pieces and form each one into a 4-inch circle. Place about 2 tablespoons filling in the center of each circle, fold in half, and press down on the edges with a fork to seal.
- Heat 1 cup oil in a frying pan over medium heat. Add empanadas, working in batches, and fry until golden brown, about 5 minutes per side. Transfer to a paper towel-lined plate.

Steps:
- Place chicken in a saucepan over medium heat with enough water to cover by 1 inch (3 cm).
- Add the smashed garlic and cloves. Simmer until the chicken is cooked through, 12-15 minutes.
- Remove the chicken from the pot, cool slightly, then shred with two forks.
- Place a cast-iron skillet over medium-high heat, until smoking.
- Add the tomatoes and roll slowly around until blackened on all sides, about 6 minutes.
- Add the seared tomatoes to a blender with chipotle peppers, chicken stock, cumin, and nutmeg. Blend until smooth.
- Heat the vegetable oil in a large pot over medium-high heat. Add the garlic, onions, and chorizo. Cook 2-3 minutes until the onions have softened and the chorizo has rendered a little fat.
- Add the lettuce and sauté 2-3 additional minutes, until softened.
- Add the tomato-chili mixture and cook for 3 minutes, stirring constantly to incorporate.
- Add the shredded chicken and bring mixture to a simmer. Simmer, uncovered, until most of the liquid has cooked off, about 10-15 minutes. Season with salt and pepper to taste.
- Serve on warm corn tortillas with sliced avocado.

- A continuación te presentamos los ingredientes que necesitaremos para la preparación de nuestras deliciosas empanadas de tinga de pollo.
- Para comenzar nuestra preparación de las empanadas mexicanas pondremos a cocer la pechuga de pollo: para esto ponemos a hervir agua en una cacerola, añadimos un trozo de cebolla, un diente de ajo y un poco de sal. Una vez esté hirviendo el agua, agregamos el pollo y esperamos aproximadamente a que se cueza, a fuego alto.
- Por otro lado, en una cacerola profunda ponemos a hervir agua, añadimos un trozo de cebolla, un diente de ajo, y una pizca de sal, una vez este hirviendo el agua añadimos los tomates rojos y dejamos que se cuezan por aproximadamente 7 minutos a fuego medio.
- Mientras tanto tomamos la cebollas restantes y las comenzamos a rebanar finamente, como podemos observar en la siguiente imagen. Una vez todas rebanadas, las reservamos por un momento.
- Ya cocidos los tomates rojos, los retiramos del agua y los colocamos en la licuadora, junto con la cebolla, el ajo, una pizca de sal, una cucharadita de consomé de pollo y la lata de chiles chipotles. Una vez listos procedemos a licuar hasta obtener una salsa homogénea para nuestras empanadas de pollo y la reservamos para luego.
- Una vez cocido el pollo lo retiramos del agua, dejamos que se enfrie un momento y lo deshebramos finamente.
- Ahora en una cacerola con un poco de aceite previamente calentado colocamos toda la cebolla que rebanados anteriormente y dejamos que se sofría perfectamente, añadimos una pizca de sal y una pizca de pimienta. Una vez se vea transparente sabemos que está lista.
- Una vez lista la cebolla añadimos la salsa de las empanadas de tinga de pollo y dejamos que tome sabor por aproximadamente 5 minutos removiendo muy bien, para que todo se integre perfectamente.
- Pasado este tiempo añadimos el pollo que deshebramos anteriormente, movemos muy bien para que todo se integre y dejamos que se cocine diez minutos más a fuego medio.
- Ahora tomamos la masa de las empanadas mexicanas, le añadimos un poco de agua y la comenzamos a amasar. Una vez suave tomamos un poco y vamos a ir formando la tortilla, ya que con esta formaremos las empanadas, pero también podemos formar la tortilla con ayuda de una máquina manual para hacer tortillas, o con nuestras manos ir dándole forma a la masa.
- Una vez formada la tortilla, en una de las mitades agregaremos un poco del guiso de tinga de pollo, debemos procurar no ponerle demasiado, ya que si es mucho relleno no podremos cerrar y formar bien nuestra empanada.Una vez rellenada la tortilla, doblamos la mitad que no tiene relleno sobre el relleno y en la orilla apachurramos un poco para sellar la empanada.
- Una vez formada nuestra empanada de tinga de pollo, la colocamos en un sartén con suficiente aceite caliente para que se fría perfectamente bien, una vez adquiere el color dorado característico de los dos lados de la empanadas la retiramos del aceite caliente y la colocamos sobre un papel absorbente para retirar el exceso de aceite que pudiera tener.
- Y ¡LISTO! Podemos disfrutar de estas deliciosas empanadas de tinga de pollo al natural o podemos acompañarlas con un poco de crema, lechuga y queso rallado, y aderezar con la salsa que más te guste. ¡Buen provecho!

It's a great way to use up any leftover cooked chicken (just skip straight to step 2), whether pulled from a roast or poached bird, or grocery-store rotisserie.

- Cook the chicken: Combine the chicken, onion, celery and carrots in a large saucepan and add 4 cups cold water. Add more water if needed to cover the solids. Bring to a boil over high heat, then reduce the heat to maintain a simmer. Cook until the chicken is very tender and falling off the bones, about 45 minutes.
- Transfer the chicken to a bowl. When cool enough to handle, discard the skin and bones, then pull the meat into very fine shreds. Strain the broth and reserve for Tamales de Pollo or another use.
- While the chicken cooks, make the sauce: Heat the oil in a large saucepan over medium-high heat. Add the onion and cook, stirring occasionally, until soft and translucent, about 5 minutes. While the onion cooks, puree the tomatoes, chipotles and garlic in a blender until smooth. Add to the pan and bring to a boil. Reduce the heat to simmer. Cook, stirring occasionally, until the sauce thickens, 2 to 3 minutes.
- Add the chicken to the sauce and gently fold to evenly coat and heat through. Season to taste with salt and pepper and serve immediately or cool to room temperature to use a filling for Tamales de Pollo.

- Dicen que la base de la cocina es el sofrito y, al menos en esta receta, es así. De modo que pochamos en una sartén con un hilito de aceite de oliva virgen extra, a fuego muy suave, la cebolla pelada y picada en brunoise fina y los pimientos verde y rojo, lavados, sin pepitas y también picados.

- Precalentamos el horno a 200 °C para que vaya tomando temperatura. Mientras, retiramos una a una las obleas del papel que las separa en su paquete, las rellenamos con una pequeña cantidad del preparado de pollo y las cerramos, haciendo muescas con la ayuda de un tenedor en el borde. Las vamos colocando en la bandeja del horno cubierta con papel sulfurizado, apto para hornear, hasta acabar con todas.
- Batimos el huevo y, con la ayuda de un pincel de cocina, pintamos la superficie de las empanadas. Es importante que estén bien extendidas y no se toquen ni superpongan. Horneamos durante 10 minutos, con calor arriba y abajo, o hasta que estén doradas.
