TAMALE CASSEROLE
Here's a great recipe that's quick to make, but not short on taste. Canned beef tamales with onions and Cheddar. Mmmm!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Unwrap tamales and cut into thick chunks. Place a portion of the chopped tamales in the bottom of a 2 quart casserole dish. Then layer the onions, cheese, tortilla chips and chili without beans.
- Repeat this until all ingredients are used, topping off with cheese and chips. Then sprinkle with the water.
- Bake, uncovered, at 350 degrees F (175 degrees C) for 40 to 45 minutes.

Steps:
- Remove paper wrappers on tamales and cut Beef Tamales up into quarters.
- Mix all ingredients in large pot. Bring to boil, simmer for 20 minutes.
- Serve in bowls, add shredded cheddar cheese and fresh cilantro on top.
HORMEL CASSEROLé
Based on a recipe from a can of Hormel Tamales Beef in Chili Sauce. This is not a battle I can win with DH so I'm joining! Lol! It really is good and qualifies as quick comfort food! We always use Hormel Chili No Beans. The default directions are for the oven; microwave directions included! Olé!

Steps:
- Preheat oven to 350°F.
- In a 9x13-inch baking pan, spray non-stick spray and then spread chili.
- Open can of beef tamales and remove paper from each tamale as you place on top of the chili.
- Sprinkle with onion and cheese.
- Bake 30 minutes or until hot.
- MICROWAVE DIRECTIONS:.
- Spread chili in 2-quart casserole.
- Top with tamales; sprinkle with onion.
- Microwave on HIGH 4 minutes.
- Sprinkle cheese over casserole and microwave 3 minutes more or until hot.
- Cover and allow to stand 3 minutes.
COWBOY MEXICAN DIP
A quick and easy hot dip that's guaranteed to be a hit! I have never seen this recipe anywhere else. I got it when I was in college and it was years before I tried it. Now it is a staple of all my parties.
