SOUR WHIPPED CREAM
For a fluffy topping that's a little different, sour cream is added to heavy whipping cream in this lightly-sweetened dessert topping. It provides a slightly tangy note that will balance out any rich pie-and it can be made up to 8 hours ahead. Sour whipped cream works particularly well with our Florida Citrus Pie.

Steps:
- In a large bowl (or a mixer bowl fitted with the whisk attachment), whisk together heavy cream, sugar, and vanilla until thickened and silky but not holding peaks.
- Add sour cream and continue whisking to soft peaks. Serve immediately, or cover and refrigerate until ready to use, up to 8 hours
SOURED CREAM
Make your own soured cream to spoon onto chilli, nachos and more. It's quick to make but needs to be left overnight to develop that creamy texture

Steps:
- Pour the cream, yogurt and vinegar into a sterilised jar, put on the lid and shake well. Remove the lid and place a square of clean kitchen paper on top of the jar before sealing with a piece of string or rubber band.
- Leave the soured cream overnight in a cool place, but not in the fridge. The next day you should have a thick, spoonable mixture. To serve, stir through the chives and sea salt, if you like. Will keep in the fridge for up to two days.
