POTATOES AU GRATIN
The humble potato gets the red carpet treatment in this easy yet luxurious recipe for potatoes au gratin. Sliced Yukon Gold or russet potatoes (you can use either, but don't use a combination as they cook at different rates) are layered with half-and-half or heavy cream, topped with butter and grated cheese, then baked until golden and bubbly. Feel free to play around: Add leeks, onions, garlic or more cheese between the layers. Experiment with fresh or dried herbs. It's incredibly adaptable and practically foolproof. Just don't forget to season with salt and pepper as you go. Like all potato dishes, it needs plenty of seasoning.

Steps:
- Heat oven to 400 degrees. Seasoning each layer with salt and pepper as you go, layer the potatoes in a 10- or 12-inch ovenproof skillet.
- Dot the top with 2 tablespoons butter. Pour in half-and-half. (It should come about 3/4 of the way to the top.)
- Bring to a boil over medium-high heat. Reduce to low and cook for 10 minutes, uncovered, until the half-and-half has reduced by about half.
- Transfer to the oven and bake until the top is golden brown, about 10 minutes. Reduce heat to 300 degrees and cook until the potatoes are fork tender and the top is nicely browned, about 8 minutes more. Top with grated cheese and return to the oven until the cheese is melty and golden brown, about 3 to 5 minutes. Sprinkle with a pinch of nutmeg, if using, and serve.
ELEGANT POTATOES AU GRATIN
This make ahead comes from a Byerly's cookbook. Refrigerate overnight and pop in the oven in time for dinner. I like to boil the red potatoes 2 days ahead, to eliminate the mushy factor. And notice how it bakes at 350 degrees instead of a higher temperature.

- Boil potatoes in jackets, cool in refrigerator.
- Peel and shred using medium grater.
- Shred cheese with same grater.
- Butter 2 quart casserole.
- Alternate layers of potatoes and cheese in casserole; sprinkle with salt.
- Pour cream over potato cheese layers.
- Combine crumbs and butter; sprinkle over top.
- Refrigerate, covered.
- Bake, uncovered, in a 350 degree oven until heated through, 55-65 minutes.

- In a large saucepan, combine the potatoes, 2 cups milk, garlic and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes or until potatoes are tender. With a slotted spoon, remove potatoes to a 1-1/2-qt. baking dish coated with cooking spray., In a small bowl, combine flour and remaining milk until smooth; stir into hot milk mixture. GARLIC POTATOES GRATIN
An unbelievable rich twist on au gratin potatoes, this casserole develops a caramelized, cheesy, roasted-garlic crust as it bakes. However, this dish does not save well (leftovers tend to separate and become oily), so eat up! Wonderful with a ham dinner.

- Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 9x13 inch baking dish.
- In the prepared dish layer 1/2 of the potatoes, 1/2 of the cheese, then the remaining potatoes.
- Melt the butter in a small skillet over medium heat. Saute garlic until fragrant and golden brown; pour over potatoes.
- Combine cream, salt and pepper; pour evenly over potatoes and sprinkle with remaining cheese.
- Bake in preheated oven for 75 minutes. Serve immediately.

POTATO GRATIN
Steps:
- Rub a 9- by 12-inch gratin dish with: Butter.
- Peel and slice about 1/16 inch thick: 4 large yellow potatoes (about 1 1/2 pounds).
- Make a layer of potato slices in the gratin dish, overlapping them slightly, like shingles. Sprinkle with: Salt and fresh-ground black pepper.
- Continue to layer the potato slices, seasoning each layer, until the potatoes are used up. You should have two or, at the most, three layers. Carefully pour over the potatoes: 1 cup milk.
- The liquid should come up to the bottom of the top layer of potatoes. Add more if necessary. Generously dot the top of the potatoes with: 3 tablespoons butter, cut into pieces.
- Bake in a 350°F oven until browned and bubbling, about 1 hour. Halfway through the baking, take the gratin dish out of the oven and press the potatoes flat with a metal spatula to keep the top moist. Return to the oven and keep checking. The gratin is done when the potatoes are soft and the top is golden brown.
- Variations
- Peel and smash a garlic clove and rub it all over the inside of the gratin dish before buttering it.
- Use duck fat instead of butter.
- Use heavy cream or a mixture of half-and-half and cream. Omit the butter.
- Substitute celery root, parsnip, or turnip slices for up to half the potatoes.
- Add chopped herbs such as thyme, parsley, chives, or chervil between the layers.
- Sauté mushrooms, sorrel, spinach, or leeks, and layer them between the potato slices.
- Sprinkle grated Gruyère or Parmesan cheese on each layer and sprinkle more on top for the last 15 minutes of baking.

- Preheat oven to 400 degrees F (200 degrees C). Butter an 8x8-inch baking dish.
- Fit a food processor with shredding disk and use it to shred cheese. Transfer to a small bowl. Fit processor with slicing disk and use it to slice potatoes.
- Put potatoes in a large saucepan with half-and-half, garlic, salt, and nutmeg; stir gently to combine. Bring to a boil over medium-high heat, stirring occasionally. Cook at a gentle boil, stirring often with a heat-safe spatula to prevent sticking, until half-and-half has reduced and thickly coats potatoes, about 8 minutes.
- Spoon into prepared baking dish. Smooth top and sprinkle evenly with cheese.
- Bake in preheated oven until potatoes are tender when pierced with a knife and top is golden brown, 25 to 30 minutes. Let stand 5 to 10 minutes before serving.
