But there's something so old-school Americana about a perfectly battered onion ring that I can rarely pass up. The toasted caramel notes from the red ale really make this batter special. Try these rings with my Jerk Ketchup, and they might just become your favorite snack.

- Pour 4 inches (10 centimeters) oil into an 8-quart (8 liter) Dutch oven and bring to 350 degrees F (177 degrees C) over medium-high heat.
- While the oil comes to temperature, peel the onions and slice into rings 1/2 inch (12 millimeter) thick.
- In a large bowl, combine the flour, salt, garlic powder, and black pepper. Whisk in the ale until the ingredients are combined. The batter should be thick but slightly loose.
- Place a wire rack in a sheet pan. Working in batches, dip the rings into the batter. Drain off any excess batter back into the bowl, then slowly lower the onions into the hot oil. Cook, flipping the onions every 30 seconds, until golden brown, 2 to 3 minutes. Using a spider, transfer the onions to the wire rack and lightly season with sea salt.
- In a nonreactive medium bowl, combine the ketchup, lime juice, brown sugar, oregano, thyme, garlic powder, onion powder, allspice, cayenne, pepper flakes, and salt and mix until incorporated. Use immediately or transfer the ketchup to an airtight container and refrigerate for up to 4 days.

SOUTHERN-FRIED SWEET ONION RINGS
Thin enough to flash-fry but thick enough to let the sweet onion flavor shine through, these onion rings work well as a side dish but also are great as a stand-alone snack. Less is more when dipping the rings in the buttermilk mixture and then the flour mixture. Be delicate in the coating process, and make sure to let as much liquid and then as much flour fall off as possible. Less breading means less grease absorption and a crisper finished product. The flour should be as fine as possible, so reserve half of the flour mixture. When the first batch starts to get wet and gummy, replace it with the remaining half. The oil temperature matters, too. Heat the oil to at least 360 degrees, and fry the rings in batches. They cook so quickly it is easy to get through the frying in 10 minutes. Keep them warm in a 200 degree oven until all the frying is done.

AIR FRYER ONION RINGS RECIPE

- Gather the ingredients. Position a rack in the center of the oven and heat to 200 F.
- Cut off both ends of the onions and peel off the skin.
- Slice the onions into thick rings.
- Carefully separate the rings from each other. Save the innermost rings for another recipe. If the rings break, you can still use them.
- Prepare the 3 dredging bowls. Put the flour in 1 shallow bowl. Beat the eggs and milk in another shallow bowl. Add the panko breadcrumbs to a third shallow bowl.
