SUPER EASY STIR-FRIED CABBAGE
A very simple stir-fry dish. The reason for using only soya sauce for stir-frying cabbage is that it brings out the natural sweetness in the cabbage itself.

- Heat the vegetable oil in a wok or large skillet over medium heat. Stir in the garlic, and cook for a few seconds until it begins to brown. Stir in the cabbage until it is coated in oil; cover the wok, and cook for 1 minute. Pour in the soy sauce, and cook and stir for another minute. Increase the heat to high, and stir in the Chinese cooking wine. Cook and stir until the cabbage is tender, about 2 minutes more.

- 1 thinly shred the two types of cabbages 2 heat a wok over high heat, add oils heat for few seconds then add onion, garlic, cabbage and stir-fry for 5-6 mins 3 add lime juice, mustard & almond and cook until the cabbage is done. Season with salt & pepper to taste 4 serve it right away & enjoy

STIR-FRIED CABBAGE, TOFU AND RED PEPPER
Start cooking the rice or quinoa that you will serve this with, prep your vegetables and make the stir-fry. The prep is the most time-consuming but there aren't too many ingredients. You can be sitting down about 35 minutes after you begin.

- Cut the tofu into dominoes and drain between paper towels. In a small bowl or measuring cup combine the stock, 1 tablespoon of the soy sauce, the sugar, rice wine or sherry, and the sesame oil. Remove 1 tablespoon to a small bowl and stir in the cornstarch. Stir until it has dissolved. Have all the ingredients within arm's length of your pan.
- Heat a 14-inch flat-bottomed wok or 12-inch steel skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in 1 tablespoon of the oil by adding it to the sides of the pan and swirling the pan, then add the tofu and stir-fry until golden, about 3 minutes. Add 1 tablespoon soy sauce (or to taste), toss together for a few seconds, and transfer to a plate.
- Swirl in the remaining oil, add the garlic and ginger to the wok and stir-fry for no more than 10 seconds. Add the red pepper and stir-fry for 1 minute, or until it begins to soften, and add the cabbage and walnuts. Stir-fry for 1 minute, add salt and pepper to taste, and stir-fry for another 1 to 2 minutes, until crisp-tender. Return the tofu to the wok, stir in the walnuts and the stock/soy sauce mixture and stir-fry for another minute, until it has just about evaporated. Stir in the cornstarch mixture and stir-fry until the ingredients are lightly glazed. Remove from the heat and serve with quinoa or rice.

- Remove stalk from cabbage and with a large knife cut leaves into long thin strips.
- Mix sugar, soy sause and vinegar in a cup and stir till sugar dissolved.
- Heat oil in a large frying pan or wok and when very hot add the dry shredded cabbage. Stir fry briskly for 2-3 minutes till the cabbage just turns soft.
- Add the sause and mix for a further 30 seconds.
- Sprinkle with a little sesame oil and serve immediately.

- Cook the rice according to the package directions. Depending on what kind of rice you decide to use, the amount of water needed can vary slightly. I highly recommend cooking the rice a day (or two) ahead of time. This saves you time the day you are making your stir fry dinner, AND day old rice makes better stir fry. You don’t want your rice to get too soggy, so letting it dry out a little is a good thing.
- Drain the tofu from any packaging liquid. Place on a plate with a paper towel underneath, and place a paper towel over the top and another plate. Like a tofu sandwich. Place a few canned goods over the top of the top plate. This will help the tofu to drain more. Cut up into small squares. Place in a ziplock bag, add the cornstarch, and give it a gentle shake. Place on a baking sheet lined with parchment paper. Bake at 350°F for 25-30 minutes, tossing once in the middle of the bake time.
- Prepare all your vegetables. Chop up the cabbage, bell pepper, and onion. Mince the garlic. In a large cup, stir together the sesame oil, soy sauce, oyster sauce, brown sugar, rice vinegar, and red pepper flakes until the sugar dissolves. Heat the olive oil over high heat in a large cast iron skillet or a wok. Add the onion and bell peppers; cook for 1-2 minutes. Add in the garlic and cabbage, and cook for an additional 2-3 minutes. Now add in the rice, pour the sauce over everything, and continue to cook until the liquid dissolves and everything is hot. Toss in the baked tofu and cilantro just before serving.

- In a small bowl, combine the garlic, ginger, red pepper flakes and cloves. In a separate bowl, combine 2 tablespoons of the soy sauce, the rice vinegar, and the maple syrup. Keep both close by.
- Cut the stem end off of the cabbage. Next, cut it in half from the top of the cabbage down through the stem. Place the flat, cut side against the surface of your cutting board, then each half into quarters (again, from the top down towards the stem). Turn each quarter crosswise, then cut into thin, 1/8-inch strips. Keep handy (I like to pile my cut cabbage into a bowl as I go).
- Heat a large, deep skillet, Dutch oven, or wok with a tight-fitting lid over medium-high heat. Add 1 tablespoon of the oil. Once hot and shimmering, add the chicken. Cook, breaking up the meat. Stir in the remaining 2 tablespoons soy sauce. Continue cooking until the meat is fully cooked through and any liquid that has collected in the pan has mostly cooked off, about 5 minutes. Transfer to a plate or bowl. Make sure you have the skillet lid handy.
- Add the remaining 1 tablespoon oil to the skillet. Add the cabbage and carrots. Cook for 2 minutes, stirring occasionally, until the cabbage is just starting to wilt.
