This is a sweet sauce that tastes like candy .For the berries I usually use blueberries, raspberries, and blackberries. but anything will work great.Goes well with ham or turkey

8 ounces unsalted butter
1 cup sugar
1 cup brown sugar
1/2 teaspoon white pepper
1 cup any reserve red wine
2 cups assorted berries

Steps:

  • Mix together the butter, sugar, brown suger, white pepper,and red wine in a medium sized pan.
  • Bring this mixture to a boil for 1 minute.
  • Reduce to a simmer.
  • Simmer until thickened.
  • Let cool slightly
  • Mix in the berries and let mixture stand.
  • Spoon half of mixture over ham or turkey when it is about 20 minutes until it is done cooking.
  • Use the rest of the mix as a glaze per serving.

I got these recipe ingredients from Chef Bruce at the Red Rooster Cafe in New Braunfels, TX. I serve this sauce with fresh blackberries from my dad's garden. Layer in a wine glass, sweetened whipped cream, berries, sauce, then more whipped cream. Top with a berry and sprinkle with a little powdered sugar. So good! They also use this sauce on their Monte Cristo Sandwich.

I found this old Shaker recipe in the Maple Syrup Cookbook by Ken Haedrich. The Shakers carried their beliefs in simplicity and purity over to their cooking, using fresh ingredients, simply prepared. This is a wonderful dish - so juicy and tender! Cook time includes reducing the sauce.

1 pint fresh blueberries, picked over and washed
1 cup red wine
1 cup pure maple syrup
1/4 cup Dijon mustard
4 (1 lb) bone-in chicken breasts
4 tablespoons chopped fresh parsley
salt & freshly ground black pepper
paprika
garlic powder

Steps:

  • Bring the blueberries, wine, maple syrup, and mustard to a boil in a medium saucepan.
  • Reduce heat to low and simmer until reduced by one-third, about 1 hour 15 minutes.
  • To roast chicken:.
  • Preheat oven to 400 degrees F.
  • Rinse the chicken breasts under cold water and pat dry.
  • Split the chicken breasts in half.
  • Place the chicken in a roasting pan and sprinkle with the parsley and as much salt, pepper, paprika, and garlic as you like.
  • Roast the chicken for 30 minutes.
  • Remove the chicken from the oven and spread with the glaze.
  • Return to the oven and cook for 10 minutes longer, or until the meat is tender and the juices run clear when the meat is pierced with a fork.

  • In a large saucepan, combine all ingredients; bring to a boil, stirring to dissolve sugar. Reduce heat to medium; cook, uncovered, until most of the berries pop, about 15 minutes, stirring occasionally., Transfer to a bowl; cool slightly. Refrigerate, covered, until cold (sauce will thicken upon cooling).

1 cup fresh raspberries
1 cup merlot or red grape juice
2 tablespoons sugar
