THE ULTIMATE HEALTHY SOFT & CHEWY OATMEAL RAISIN COOKIES
These oatmeal cookies are the best I've ever eaten! They're extremely chewy and packed full of warm cinnamon and raisins. To preserve their texture, store any leftovers in an airtight container for up to a week-if they last that long!

Add in the flour mixture, stirring just until incorporated. Fold in the raisins. Chill the cookie dough for 30 minutes.
- Preheat the oven to 325°F, and line a baking sheet with parchment paper or a silicone baking mat.
- Drop the cookie dough into 15 rounded scoops onto the prepared sheet, and flatten slightly. Bake at 325°F for 11-14 minutes (see Notes!). Cool on the pan for 10 minutes before transferring to a wire rack.
REDUCED SUGAR WHOLE WHEAT OATMEAL COOKIES
Dana and I are trying to ease up on the white flour and refined sugar, but it's hard sometimes to do without creating "cardboard" tasting foods. He asked me to find an oatmeal cookie recipe that had no sugar and used whole wheat flour. I wasn't completely successful finding one, so I took a standard oatmeal cookie recipe and...

Steps:
- 1. Preheat oven to 350. Mix flour, baking powder, Splenda, cinnamon, baking soda, salt, and oats together. Add butter, eggs, vanilla. Stir in remainder of ingredients.
- 2. Place walnut-sized balls of dough on greased cookie sheet, and flatten (where it's whole wheat, they don't spread without some help). I also smoothed the edges with my fingers so that they wouldn't be so bad to crumble.
- 3. Bake for 10-12 minutes. Allow to cool for a couple of minutes on cookie sheet, then transfer gently to a wire rack to finish the cooling process. These will do best if you don't flatten them to any more than 1/3 inch thick. They'll have a chewy, dense texture...and if you like whole grain foods, I'm guessing you'll really be pleased with the taste of these.

My family loves these oatmeal cookies, and with my made-over version, they are a great way to sneak extra fiber and grains into their diet! I reduce the sugar, add whole wheat, use rolled oats and add dates (for extra fiber!)

WHOLE WHEAT OATMEAL COOKIES WITH EVERYTHING
Based on Quaker Oats' Vanishing Oatmeal Cookies Recipe. I made them a few times, and I never thought they were quite good enough. They weren't fluffy enough and they didn't have nearly enough oatmeal! I found out one day when I ran out of white flour, that whole wheat tastes great in oatmeal cookies. I like to pulse the oats in the food processor a few times so they're extra fluffy, but instant oatmeal works very well.
