Steps:

  • Mix beans, salsa and chili powder in 1-quart saucepan. Heat over medium heat about 5 minutes, stirring occasionally, until warm.

8 ounces cream cheese (softened to room temperature)
16 ounces sour cream
2 Tablespoons taco seasoning mix
1 can refried beans
10-12 large flour tortillas
1 cup peas ((I used frozen peas that had been thawed))
½ cup carrots (diced small)
½ cup red bell peppers (diced (green peppers look pretty too))
½ cup green onions (chopped)
1 can sweet corn ((I used Green Giant Niblets))
1 cup shredded cheddar cheese

Steps:

  • In a mixer, blend cream cheese and sour cream until smooth. Mix in taco seasoning.
  • In the center of each tortilla, put a small stripe of refried beans. On the rest of the tortilla spread the sauce making sure to get the edges. You want a decent amount to make sure all your toppings will stick.
  • Sprinkle with toppings and roll up as tight as you can.
  • Tuck in the ends and wrap in Saran wrap.
  • *Be sure not to over-stuff or they won't roll up.
  • Refrigerate overnight or for about 6 hours
  • Slice before serving and serve with your favorite salsa (we love Chili's salsa)!

1/8 teaspoon onion salt

Steps:

  • In a small bowl, blend together the refried beans & green onion, then spread a layer of this bean mixture on each tortilla.

1/4 cup chopped onion
2 tablespoons chopped green pepper
1 cup refried beans
1/4 cup shredded cheddar cheese
1 tablespoon ketchup
1-1/2 teaspoons chili powder
1/4 teaspoon ground cumin
32 wonton wrappers
Oil for deep-fat frying
Salsa

Steps:

  • In a large skillet, cook the beef, onion and green pepper over medium heat until meat is no longer pink; drain. Remove from the heat; stir in beans, cheese, ketchup, chili powder and cumin., Position a wonton wrapper with one point toward you. Place 1 tablespoon meat mixture in the center. Fold bottom corner over filling; fold sides toward center over filling. Roll toward the remaining point. Moisten top corner with water; press to seal. (Keep remaining wrappers covered with a damp paper towel until ready to use.) Repeat with remaining wrappers and filling., In an electric skillet or deep-fat fryer, heat oil to 375°.
