Regency Ginger Crisps From Chocolate Chip Cookie Murder Recipes

REGENCY GINGER CRISPS

Steps:

• Do not preheat oven yet, dough must chill before baking.
• Melt butter and mix in sugar.
• Let mixture cool.
• Add egg (s).
• Add soda, molasses, salt and ginger.
• Stir thoroughly.
• Add flour and mix inches.
• Chill the dough for at least 1 hour (overnight is even better).
• Once dough has chilled, preheat oven to 375 degrees, rack in middle position.
• Roll dough into walnut-sized balls,.
• Roll dough in white sugar (just dump them in the bowl with the sugar and shake the bowl to gently coat them.).
• Place cookie balls on greased cookie sheets, 12 to a standard sheet.
• Flatten them with a spatula.
• Bake at 375 degrees for 10-12 minutes or until nicely browned.
• Cool on cookie sheets for no more than 1 minute.
• Remove to wire rack to finish cooling. (If you leave these on the cookie sheets for too long, they will stick.

REGENCY GINGER CRISPS FROM CHOCOLATE CHIP COOKIE MURDER

Steps:

• Melt butter and mix in brown sugar. Let cool and add. egg. Add soda, molasses, salt, and ginger. Mix thoroughly. Add flour and mix completely. Chill dough at least 1 hour, overnight is better. When chilled preheat oven to 375 degrees with the rack in the middle position. Roll dough into walnut sized balls between hands. Roll balls in sugar (shake lightly in plastic bag of sugar. Place on greased cookie sheets (12 to a standard sheet) and flatten with spatula. Bake at 375 degrees for 10 to 12 minutes. Cool on cookie sheet for no longer than one minute and remove to wire rack to finish cooling. If left on cookie sheet too long they will stick.

CHOCOLATE CHIP GINGER CRISPS

Steps:

• Preheat oven to 350°F.
• In a bowl whisk together flour, baking powder, cinnamon, cloves, cardamom, and salt. In another bowl with an electric mixer cream butter and sugar until light and fluffy and beat in egg. Beat in flour mixture and stir in ginger and chocolate chips.
• Drop dough by rounded teaspoons 3 inches apart onto buttered baking sheets and bake cookies in batches in middle of oven 10 to 12 minutes, or until golden. Cool cookies on baking sheet 1 minute and transfer to racks to cool completely.
• Cookies keep in airtight containers 5 days.

TORTILLA COOKIE CRISPS

Steps:

• In mixing bowl, add the first six ingredients. Beat on low speed about 2 minutes, then medium speed until blended.
• In another mixing bowl, add flour, soda and walnuts. Mix well.
• Add flour mixture to sugar egg mixture in two portions. Mix after each addition.
• Take out beaters.
• Add crushed tortillas two cups at a time. Mix with spoon. Then add two more cups, mix.
• Make sure that the tortillas are crushed very fine. I have rough crushed and fine crushed and the latter works the best.
• The last two cups mix in, the "dough" will be a little stiff. But mix well.
• Preheat oven 375°F.
• Take heaping tablespoon and drop on ungreased cookie sheets.
• Note: I used a little over a 1/3 cup of evaporated milk this time and it seemed that the cookie dough was creamier.
• Bake 10 minutes light and soft and chewy.
• Bake 12 minutes brown and crispy and chewy.
• Let set 5 minutes then take off of sheets.
• I like to put the cookies on the upper top racks of the oven. It seems to cook evenly.
• Note:.
• Do not use black sheets. Bottoms get too done and tops not cooked enough.
• Servings based on 3 large cookies per person.
• Cooking time is for two sheets at a time.
• Note: You may add cinnamon instead of Chinese Five Spice. Do not use both.
• Note: You may use 1 1/2 tsp powdered anise with the addition of the rum and add a little more brown sugar.
