1/4 cup rice vinegar
1 tablespoon sugar
1/2 sweet onion (such as Vidalia), thinly sliced, separated into rings
8 ounces firm dried rice noodles
1/4 cup fresh lime juice
2 teaspoons vegetable oil
1/2 teaspoon dried crushed red pepper
1/3 cup chopped fresh mint
1/3 cup chopped fresh cilantro
1 large cucumber, peeled, halved lengthwise, seeded, thinly sliced
4 green onions, thinly sliced
3 fresh plum tomatoes, seeded, chopped
2 tablespoons chopped lightly salted cocktail peanuts

Steps:

  • Whisk vinegar and sugar in medium bowl to blend. Add onion rings and toss to coat. Cover and let stand at least 30 minutes and up to 4 hours. Drain, reserving 2 tablespoons vinegar mixture.
  • Cook noodles in large pot of boiling water until tender but still firm to bite, about 2 minutes. Drain. Rinse under cold water. Drain well.
  • Whisk lime juice, oil and crushed red pepper in small bowl to blend. Stir in mint and cilantro. Using kitchen shears, cut noodles into 3- to 4-inch-long sections. place handful of noodles in large bowl. Drizzle with reserved 2 tablespoons vinegar mixture and toss to coat. Add remaining noodles, cucumber, green onions, tomatoes and marinated onions. Drizzle lime juice mixture over and toss gently. Season to taste with salt and pepper. Sprinkle with peanuts and serve.

1 (14-16-oz.) package firm or extra-firm tofu, drained, cut into 2x1/2" planks
2 medium bell peppers, seeds and ribs removed, sliced into thin strips
8 oz. flat wide brown or white rice noodles
1/4 cup smooth natural peanut butter
3 Tbsp. soy sauce or tamari
3 Tbsp. unseasoned rice vinegar
2 Tbsp. brown sugar
1 Tbsp. fish sauce
2 Tbsp. fresh lime juice
4 oz. baby spinach
1/4 cup cilantro leaves
1/4 cup roasted salted peanuts, chopped
Lime wedges (for serving)

Steps:

  • Heat oil in a large skillet over medium-high until hot. Cook tofu in a single layer, undisturbed, until golden brown on one side, about 8 minutes. Turn and continue to cook until golden on the other side, about 6 minutes. Transfer to a paper towel-lined plate.
  • Cook peppers in same skillet, stirring frequently, until beginning to soften, about 5 minutes.
  • Meanwhile, cook noodles according to package directions.
  • Whisk peanut butter, soy sauce, vinegar, brown sugar, fish sauce, and lime juice in a medium bowl to combine.
  • Toss tofu, noodles, peppers, peanut butter sauce, and spinach in a large bowl. Transfer to a platter. Top with cilantro and peanuts. Serve with lime wedges alongside.

In this breezy recipe, rice noodles are tossed in a creamy-yet-light mix of coconut milk, fish sauce and lime, then garnished with plenty of salty peanuts, chile, lime zest and cilantro. Don't bother picking the cilantro leaves from the stems; just chop the whole plant until you hit a firm, white stem. The green stems add crunch, and they pack more concentrated flavor than the leaves. Feel free to add whatever fridge stragglers or greenmarket celebrities that look good to you, such as thinly sliced vegetables, poached shrimp, pan-fried tofu, grilled chicken or pork. 8 ounces linguine-style rice noodles
1 cup full-fat coconut milk, plus more as needed
1/2 cup finely chopped cilantro leaves and tender stems
2 Thai chiles, thinly sliced into rounds, or 1 jalapeño, minced
2 teaspoons fish sauce or soy sauce, plus more as needed
2 limes
3/4 cup coarsely chopped roasted, salted peanuts
Red chile sauce, like sambal or sriracha, for serving

Steps:

  • Cook noodles in a large saucepan of boiling water according to package instructions until tender but still chewy. (They'll firm up when cool, so you want to cook them to softer than al dente). Drain the noodles in a colander, fill the saucepan with cold water, swish the noodles in the cold water, then drain again.
  • In the empty pot, stir together the coconut milk, cilantro, chiles and fish sauce. Zest the limes over the pot, then halve one of the limes and squeeze its juice directly into the pot. Cut the remaining lime into 4 wedges.
  • Toss the noodles in the coconut milk mixture. Taste and adjust seasonings. (The flavor should be coconut-y, lightly sweet and savory. If you can't taste the coconut, add more milk; if the mixture is too sweet, add more fish sauce.) Serve in bowls with peanuts scattered over top and lime wedges and chile sauce alongside. Spoon any collected coconut milk at the bottom of the pan over the noodles.

16 ounces thin spaghetti
3 tablespoons sesame oil
1 tablespoon black sesame seed
1 tablespoon sesame seeds
1/2 cup vegetable broth
1/2 cup reduced-fat creamy peanut butter
1/2 cup reduced sodium soy sauce
1 tablespoon sugar
2 tablespoons rice wine vinegar
2 garlic cloves, minced
1/4 cup chopped fresh cilantro
1/4 cup chopped green onion
1/4 cup chopped roasted peanuts
1 inch piece fresh gingerroot, finely chopped

Steps:

Sort of a conglomeration of Asian cuisines. The original recipe has fresh cilantro only, but we liked both cilantro and Thai basil. From Bon Appetit April 1996. Rice noodles are available at Asian markets. I also like to throw in a fresh tomato or two (sliced or diced) to the mix.

1/4 cup rice vinegar
1 tablespoon sugar
1/2 sweet onion, thinly sliced and separated into rings
8 ounces firm dried rice noodles
1/4 cup fresh lime juice
2 teaspoons vegetable oil
1/2 teaspoon dried red pepper flakes (I used a little bit of red jalapeno)
1/3 cup of fresh mint, chopped
1/3 cup fresh Thai basil or 1/3 cup fresh cilantro, chopped
1 large cucumber, peeled, halved lengthwise, seeded and thinly sliced
1 -2 small fresh tomato (sliced or diced)
4 green onions, white and green parts, thinly sliced
2 tablespoons dry roasted salted peanuts
salt, to taste
pepper, to taste

Steps:

  • In a non-reactive bowl, whisk the rice vinegar and sugar together. Add the onion rings and toss to coat. Let stand at least 30 minutes but up to 4 hours. Drain, reserving 2 tablespoons of the soaking liquid.
  • In a large pot of boiling water, cook the rice noodles until al dente, about 2 minutes. Drain and rinse under cold water. Drain well.
  • In a small bowl, whisk together the lime juice, oil and red pepper flakes (or fresh minced red jalapeno). Stir in the mint and Thai basil.
  • Cut the cooked noodles into 3-4" long sections. Add a small amount of the noodles to a serving bowl and toss with the reserved vinegar/onion liquid. Add the remaining noodles, cucumber, fresh tomatoes, green onions and marinated onions.
  • Drizzle the lime juice mixture over the rice noodles and toss gently. Season with salt and pepper to taste.
  • Garnish with the roasted peanuts.

2 cups fresh cilantro leaves (1 bunch)

3 tablespoons pine nuts
