CURRY FISH AND RICE
I don't know where my mom found this recipe, but I remember eating it when I was little. This is a great recipe for when you don't have time to watch everything in the kitchen, but it's nice enough that I've served it to company!

Steps:
- Heat water, onion, butter, curry powder, and salt in a large skillet over medium heat until butter is melted, about 2 minutes. Stir rice into onion mixture and arrange frozen white fish over rice. Sprinkle with almonds.
- Reduce heat to medium-low, cover, and simmer until the rice is tender and the liquid has been absorbed, about 20 minutes. Fish should be heated through, and the flesh should be opaque and flake easily. Mix in peas and fluff rice with a fork before serving.

BAKED FISH AND RICE

- In a large saucepan, combine the broth, rice, Italian seasoning and garlic powder, bring to a boil. Transfer to a greased 11x7-in. baking dish. Cover and bake at 375° for 10 minutes. Add the broccoli, Parmesan cheese and half of the onions. Top with fish fillets; sprinkle with paprika., Cover and bake 20-25 minutes longer or until the fish flakes easily with a fork. Uncover; sprinkle with cheddar cheese and remaining onions. Return to the oven for 3 minutes or until cheese is melted.

RICE-PARTIALLY COOKED, WITH CHICKEN AND PRESERVED TURNIP

- TOPPING:Bone, skin and dice chicken. Wash and dice preserved turnip. Dice mushrooms. Mince garlic and ginger root then combine in a large bowl with oil, soy sauce, sugar, sherry and pepper. Add diced chicken and toss. Add mushrooms and preserved turnip and toss. RICE:1. Wash rice thoroughly (see HOW-TO, _Rice: To wash), then spread evenly along the bottom of a saucepan. 2. Add the desired quantity of cold water for each cup of rice. (Let rice and water sit covered in pan for 30 minutes before cooking. This softens the rice, but can be omitted.) 3. Bring rice to a boil over 3/4 flame. Boil covered 3 minutes. Reduce flame to 1/2. Boil 2 minutes more, or until most of the liquid is absorbed. (At this point, before the water is completely absorbed, some cooks stir the rice gently from the bottom up so that it will cook more evenly and have less tendency to burn on the bottom. If some rice sticks to the sides of the pot during this stirring, just scrape it down.) 4. Arrange topping mixture over rice and cook, covered, over low heat until rice is done (15 to 20 minutes). FISH AND RICE PACKETS
Steps:
- Preheat oven to 400 degrees F (200 degrees C). Cut four 12x15-inch sheets of parchment paper. Fold each in half widthwise and reopen.
- Mix rice, green olives, chicken broth, orange juice, orange zest, salt, and pepper together in a bowl.
- Spoon 3/4 cup of the rice mixture onto 1 side of each parchment rectangle, near the crease. Lay 1 piece of cod on top. Drizzle 1 teaspoon olive oil over fish; lay 1 orange slice on top.
- Fold empty half of parchment over cod and rice mixture; crimp edges together with overlapping folds to seal. Arrange packets close together on a sheet pan.
- Roast on the center rack of the preheated oven until cod flakes easily with a fork, 15 to 17 minutes. Unfold 1 edge of the parchment, being careful to avoid steam, and look inside to check doneness.
- Open packets carefully, being careful to avoid steam. Slide cod and rice mixture into bowls. Garnish with almonds and parsley.

MADAME SOOHOO'S FISH AND RICE (RICE COOKER)
From The Ultimate Rice Cooker Cookbook. The authors call for a 6 cup rice cooker for this recipe, and I don't think it would fit in anything smaller than that. Serve this with a salad or steamed vegetable for a full meal. You can use whatever fish you like for this recipe, just be sure to break it into small pieces so that it will cook through in time your machine takes to cook the rice. Prep time includes marinating the fish.

- Place the fish pieces in a shallow bowl or baking dish.
- Whisk together the marinade ingredients (garlic through sesame oil), and pour over the fish.
- Marinate for 20-30 minutes at room temperature, or up to 4 hours in the refrigerator- no more than 4 hours, or the fish will get mushy.
- Rinse the rice very thoroughly in a strainer, then place in the rice bowl.
- Add the water, and stir to combine. Place the fish pieces on top of the rice, then add any remaining marinade.
- Set the machine for the regular cycle.
- When it switches to 'keep warm', let it sit for 5 minutes, then serve immediately.
