Steps:
- Spread pine nuts on baking sheet and bake in oven set at 350 degrees until golden brown. Melt butter in saucepan. Add onion and saute until softened. Add rice and stir until coated with butter. Add water, bring to a boil, cover and reduce heat. Continue to cook until water absorbs and rice is light and fluffy, about 20 minutes. Toss in pine nuts and serve.
GARLIC RICE WITH PINE NUTS
Makes for a very nice and colorful rice dish. If you are a real garlic lover then you can up the amount by a few cloves.

CREAMY RICOTTA TART WITH PINE NUTS

- Preheat the oven to 350 degrees F.
- In the bowl of a food processor, pulse flour, 2 tablespoons of sugar, 3/4 cup of pine nuts, and salt until finely ground. Add the butter. Pulse dough just until it comes together.
- Place the dough into an 11-inch diameter tart pan with a removable bottom and press down to cover the bottom and sides of the pan. Refrigerate until the dough is firm, about 30 minutes.
- Line the tart shell with aluminum foil and fill with pie weights or dried beans. Bake the tart shell in the lower third of the oven until just set, about 25 minutes. Carefully remove the foil and pie weights. Bake until the tart shell is lightly golden, about 10 minutes. Cool completely.
- Combine the remaining 2 tablespoons of sugar with the water in a small saucepan over low heat. You don't want to boil the water, you just want to heat it so that the sugar can dissolve thoroughly. Stir until the sugar dissolves and remove from heat.
- In the bowl of a food processor, pulse the ricotta cheese and cream cheese until smooth. Add the eggs and egg yolks, 1 at a time, and process until smooth. With the machine running, add the sugar syrup in a thin steady stream and process until smooth.
- Pour the custard into the tart shell and bake until the filling is almost set, about 20 to 25 minutes. Scatter the remaining 3/4 cup of toasted pine nuts atop the filling. Bake until the custard is set, about 10 minutes longer. Let the tart cool completely before serving.
- The tart can be wrapped in plastic and refrigerated for up to 3 days. Return the tart to room temperature before serving.

- Place pine nuts in skillet and cook, stirring often, until lightly browned. Remove from heat.
- Heat half the butter in saucepan and add onion and garlic. Cook, stirring, until onion is wilted. Add rice and stir. Add pine nuts and water and bring to boil. Cover closely and let simmer exactly 17 minutes.
- Uncover, fluff the rice with fork and stir in remaining butter.

- In a dry small heavy saucepan toast pine nuts over moderate heat, stirring, until golden, about 5 minutes, and transfer to a small bowl. Finely chop cilantro and reserve 1/4 cup for garnish. Mince garlic. In pan cook rice in oil with garlic and remaining cilantro over moderate heat, stirring, 3 minutes and add water and salt. Bring mixture to a boil and cook, covered, over low heat 15 minutes, or until water is absorbed and rice is tender. Remove pan from heat and let rice stand, covered, 5 minutes.
- Serve rice sprinkled with pine nuts and reserved cilantro.

- Melt butter in saucepan over medium heat. Add ginger, garlic, and cinnamon stick, and sauté until fragrant, about 1 minute. Stir in rice, and sauté until rice grains are opaque, about 2 minutes. Add water, coconut milk, sugar, salt, lime zest, and white pepper and bring to a simmer. Stir once, cover, reduce heat to low, and simmer for 15 minutes.
- Fluff rice with a fork, cover, and let rest for 5 minutes. Garnish with toasted coconut, if using.

- Preheat the oven to 400 degrees.
- Melt 1 tablespoon of the butter in a heavy saucepan and add the onions and pine nuts. Cook, stirring, until wilted. Add the rice, water, thyme, bay leaf and salt and pepper.
- Bring to a boil, stirring, making sure there are no lumps in the rice. Cover with a close-fitting lid and place in the oven.
- Bake for 17 minutes, remove the cover and discard the thyme and bay leaf. Using a fork, stir in the remaining butter and blend well.

- Bring 3 cups chicken broth to boil in heavy medium saucepan. Add rice. Bring to boil, reduce heat to low, cover and cook until chicken broth is absorbed, about 20 minutes. Turn off heat and let stand 5 minutes.
- Fluff rice with fork. Transfer to large bowl. Mix in 5 tablespoons olive oil, then all remaining ingredients. Season salad to taste with pepper. (Salad can be prepared 4 hours ahead. Let stand at room temperature.)
RICE WITH GARLIC AND PINE NUTS
This recipe combines the Julia Child method of cooking garlic in butter, and adds other ingredients for a lovely finished dish! :)

Steps:
- Remove all the cloves of garlic from the head.
- Take a smallish saucepan and heat to boiling about a cup of water; add the cloves of garlic and simmer for about 1 minute- drain, peel the garlic (which should be softish and should peel easily) and set aside.
- In a small saucepan, melt the butter together with the olive oil over medium heat. Reduce the temperature low, then add the peeled garlic cloves to the butter mixture; stir well.
- Saute slowly on lowest heat until tender and golden, at least 20 minutes (but it can take as long as 30, depending on your stove), stirring and checking occasionally to make sure they do not burn.
- Remove cloves from pan - pour any remaining butter into a wide skillet; thoroughly mash the garlic with a fork.
- Heat the "garlic drippings" in the wide skillet. Swirl in the mashed garlic. Add the cooked rice and pine nuts. (If the mixture seems a little dry, you may add more butter to taste, if you like.)
- Saute, stirring and tossing, until the rice is heated through and has absorbed the butter.
- Season with salt and freshly ground pepper.
- Serve hot.
