This recipe is so easy and quick. And quite tasty too!

1 (10.75 ounce) can condensed Cheddar cheese soup
½ cup chopped onion
freshly ground black pepper
4 large baking potatoes, scrubbed
½ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a large casserole dish.
  • In a medium mixing bowl combine the Cheddar cheese soup, onions and black pepper.
  • Slice the potato into 1/4 inch slices. Arrange one layer of sliced potatoes in the bottom of the casserole dish. Spoon one layer of soup over the potatoes. Arrange another layer of potatoes and then more soup. Continue layering until all of the ingredients have been used. Sprinkle the Cheddar cheese over the top of the casserole.
  • Bake until the cheese is bubbly and the potatoes fully cooked; approximately 45 minutes.

5 -6 medium russet potatoes
1 pint heavy cream
8 ounces gruyere cheese, shredded (might have to shred yourself as these usually come in blocks)
1/4 cup butter, melted
salt
pepper

Steps:

  • Preheat the oven to 350°F.
  • Grease an 11 x 7 x 2 inch metal or glass rectangle pan (or any 2-quart baking dish).
  • Peel and thinly slice all the potatoes.
  • Arrange 1/3 of the potato slices in a single layer on the bottom of the prepared baking dish.
  • Pour 1/3 of the heavy cream and 1/3 of the melted butter over the sliced potatoes.
  • Lightly sprinkle salt and pepper over the potatoes.
  • Sprinkle 1/3 of the gruyere cheese over the sliced potatoes.
  • Repeat steps 4 - 7 twice more.
  • Bake the potatoes in a preheated oven for 60 minutes.
  • Once finished, the cheese on top will turn a nice brown color and be slightly crispy. For an even darker color and an even more crispy texture, leave in oven for an additional 5 - 15 minutes.

  • First, preheat oven to 375ºF and grease a 9×13-inch casserole dish with nonstick cooking spray. Set aside.
  • Next, use a mandolin* to slice all of the potatoes into 1/8-inch thick rounds. We used size 2.0 on our mandolin.
  • Prepare the cheese sauce by heating a medium saucepan over medium/high heat. Add one tablespoon of olive oil.
  • When olive oil is fragrant, add the onion and 1/4 teaspoon salt to the saucepan and sauté for 3 minutes. Add minced garlic and sauté for another 2-3 minutes or until the onion begins to brown.
