Steps:
- Preheat the oven: Preheat the oven to 450°F.
- Pound the butterflied roast to an even thickness: With the pork roast unfolded, cover with 2 layers of of plastic wrap. Pound with a meat mallet to flatten to a somewhat even thickness. Remove the plastic wrap. Sprinkle the pork with salt and pepper and set aside.
- Let the pork rest, then slice and serve: Remove from the oven. Tent the roast with foil and let it rest for 10 minutes. Remove the kitchen string and slice into 1/2-inch thick slices to serve. - Combine the salt, pepper and sage. Place roast, rib ends up, in a large shallow roasting pan; sprinkle with salt mixture. Cover rib ends with foil. Bake, uncovered, at 350° for 1-1/2 hours., For stuffing, melt butter in a large skillet. Add onion and celery; saute until tender. Transfer to a large bowl; stir in the apples, cranberries, thyme, salt and pepper. Add bread crumbs and toss to coat. Stir in broth., Carefully spoon stuffing into the center of roast. Bake 45-60 minutes longer or until a thermometer reads 145°. Transfer to a warm serving platter. Remove foil. Let roast stand for 15 minutes. Cut between ribs to serve.

I got this from SouthernFood.about.com. It is really good and so easy to make. It can be made either in the crock pot or in the oven. I don't like Cranberry sauce much but this was really good. I've actually had it with out the apples also and it turned out fine.

ROAST PORK LOIN WITH PEARS AND CRANBERRIES

- 1. Position an oven rack in the center of the oven and preheat to 375°F. Pat the pork loin dry and sprinkle generously with salt and pepper. Add olive oil to a large oven-proof skillet and heat over medium-high heat. When very hot, add the pork and brown on all sides, about 8 minutes. Transfer to a platter.
- 2. Adjust the heat to medium and add 2 tablespoons of the butter. Add the pear wedges in a single layer and cook, turning once, until the pears are tender and begin to brown slightly, about 5 minutes. Transfer to the platter with the pork.
- 3. Stir the onions and rosemary into the skillet and cook until the onions begin to soften, about 5 minutes. Add the wine and cook until reduced by half, scraping up any brown bits on the bottom of the pan. Add the chicken broth and bring to a simmer. Place the pork back in the skillet and spoon the pears around the pork. Roast until an instant-read thermometer inserted into the thickest part registers 140°F, about 50 minutes. Transfer the pork to a cutting board; let rest at least 20 minutes while you make the pan sauce. Transfer the pears to a large platter.
- 4. Place the skillet over high heat and reduce the broth by half, about 6 minutes. Add the cranberries and mustard to the skillet; continue to cook until the mixture begins to thicken, about 5 more minutes. Whisk in the remaining 2 tablespoons butter and season with salt and pepper to taste. Slice the pork and serve with the sauce.
CROCK POT CRANBERRY APPLE PORK LOIN ROAST
Steps:
- Place the pork loin roast in the slow cooker and coat all sides with the minced garlic.
- In a bowl, combine the cranberry sauce, brown sugar, apple juice, and chopped apples. Pour sauce over pork.
- Cover the crockpot and cook on LOW for 7 to 9 hours. Taste the sauce and add salt and pepper as needed.
- If you think the sauce needs thickening, you can add a cornstarch slurry. In a small bowl, stir the cornstarch with the cold water until smooth. Add the slurry to the liquids and stir to blend. Increase the setting to HIGH and continue cooking for 5 to 10 minutes, until thickened.
- Remove the pork from the crockpot onto a cutting board. Slice the pork and arrange on a platter. Spoon over sauce and serve.

- In a large skillet, heat butter over medium heat.
- Add onions and sauté for 4 to 6 minutes, until lightly browned.
- Remove onions to a plate and set aside.
- Add vegetable oil to the skillet.
- Sprinkle pork chops with salt and pepper then dredge in flour.
- Brown the pork chops for about 2 minutes on each side.
- Return the onions to the skillet making a layer over the chops.
- Meanwhile, combine chopped apples with lemon juice, apple cider, brown sugar, and cinnamon.
- Pour the apple mixture over the pork chops and onions and bring to a simmer.
- Reduce heat to medium-low and simmer, uncovered, for 5 minutes.

- Preheat an oven to 325 degrees F (165 degrees C). Combine the stuffing mix and water in a mixing bowl; set aside. Grease a roasting pan with cooking spray.
- Trim the fat and connective tissue from the pork loin. Cut from one side through the middle horizontally to within 1/2-inch of the other side. Open the two sides and spread them out like an open book. Place the pork loin between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound the pork with the smooth side of a meat mallet to a thickness of 1/2-inch.
- Stir the apple, cranberries, pecans, and onion into the stuffing mix. Season the pork loin with salt and pepper to taste, then spread the stuffing mix onto the cut side of the loin. Roll the pork into a firm cylinder, and secure with cooking twine. Place into the prepared roasting pan.
- Bake in the preheated oven until the pork is no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). Cover the meat with two layers of aluminum foil, and allow to rest in a warm area for 10 minutes. Remove kitchen twine before slicing and serving.
