1 lb smoked haddock or 1 lb cod fish fillet, skin removed and broken into large chunks
1 large onion
2 cloves garlic, minced
1/2 pint single cream
1 tablespoon fresh parsley, finely chopped
1 ounce butter
1 tablespoon lemon juice
salt and pepper
2 lbs potatoes, peeled and boiled
1 tablespoon milk
4 ounces cheddar cheese, grated
2 tablespoons grated parmesan cheese
1 ounce butter
1 tomatoes, sliced to place on top

Steps:

  • Peel and boil the potatoes until soft.
  • Drain and mash with 1/2 ounce butter and the tablespoon of milk.
  • Add the cheese and mix well.
  • In a wok or frying pan, gently fry the onions and garlic in 1 oz butter until soft and transparent.
  • Add the fish,parsley, cream, lemon juice and salt and pepper to the wok or frying pan and mix well.
  • Place the fish filling into a casserole dish.
  • Top with the potatoes.
  • Sprinkle the parmesan cheese on top of the potatoes.
  • Place the sliced tomatoes on top of the potatoes.
  • Divide the remaining 1/2 oz butter on top of each tomato slice.
  • Bake in a medium pre-heated oven for 40- 50 minutes.
  • Serve.

1 teaspoon olive oil
4 ounces white fish
1 cup milk, or to taste
5 medium potatoes, peeled
2 tablespoons butter
salt and ground black pepper to taste
1 cup frozen peas, thawed
½ cup shredded white Cheddar cheese
1 (14.75 ounce) can skinless, boneless salmon, drained and flaked

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Oil an oven-proof baking dish with 1 teaspoon olive oil. Place white fish in the baking dish and pour in enough milk to cover the fish halfway.
  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until fork-tender, about 20 minutes.
  • While the potatoes are cooking, bake fish in the preheated oven for 20 minutes. Remove from the oven and drain off milk into a liquid measure; reserve for potatoes. Increase the oven to 425 degrees F (220 degrees C).
  • Drain potatoes and return to the pot. Place on the stove to evaporate any extra water. Add butter, salt, and pepper and mash potatoes for 1 minute. Add reserved milk, a little at a time, and keep mashing until smooth and creamy. Gently stir in thawed peas, being careful not to crush them.
  • Flake white fish into small pieces in the baking dish. Add flaked salmon and stir to evenly disperse. Drop spoonfuls of mashed potatoes on top of the fish; spread evenly to cover. Sprinkle Cheddar cheese on top.
  • Bake in the oven for 20 more minutes.

Ditch the traditional mash on your fish pie for a crunchy potato topping. Warming and luxurious, this makes a joyful dinner for friends on New Year's Eve

6 tbsp vegetable oil
800g Maris Piper potatoes, cut into 2cm chunks
20g butter
2 shallots, finely chopped
100ml white wine
20g plain flour
275ml whole milk
1 tbsp Dijon mustard
200ml double cream
150g mature cheddar, grated
150g frozen peas
600g fish pie mix (ours had salmon, smoked mackerel and cod)
small bunch of parsley, finely chopped
1 lemon, zested and juiced
winter greens or salad, to serve

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Drizzle the oil over a large baking tray and slide into the oven to heat up. Tip the potatoes into a large pan, cover with water and season with salt. Bring to the boil, then reduce the heat and simmer for 8-10 mins. Drain and leave to steam-dry.
  • Carefully remove the baking tray from the oven and tip in the potatoes. Sprinkle with sea salt and black pepper and turn to coat in the oil. Roast for 35-40 mins until crisp, turning halfway through.
  • Meanwhile, make the filling. Melt the butter in a large saucepan over a medium heat and cook the shallots for 5 mins until softened. Pour in the wine and simmer for 2 mins until it has reduced. Sprinkle in the flour and stir until you have a paste.
  • Gradually whisk in the milk until you have a smooth sauce, then stir in the mustard and cream. Simmer for 2 mins, whisking occasionally. Tip in 100g of the cheese, the peas and fish pie mix, cover and cook for 8 mins more, stirring occasionally until the peas have defrosted and the fish is almost cooked through. Stir in the parsley and lemon zest and juice, then season to taste.
  • Pour the filling into a deep 20 x 25cm casserole dish and scatter the roasted potatoes over the top. Sprinkle with the remaining cheese. Turn down the oven to 200C/180C fan/gas 6 and bake the pie for 15-20 mins until the filling is bubbling at the edges. Serve with winter greens or a crisp salad.

8 tablespoons (1 stick) unsalted butter, melted, plus more for dish
Coarse salt and freshly ground pepper
16 Kalamata olives, pitted
2 pounds Yukon gold potatoes, peeled
2 medium garlic cloves, minced
2 tilefish fillets (12 ounces each)
1/4 cup finely chopped fresh flat-leaf parsley

Steps:

  • Preheat oven to 450 degrees. Butter a 9-by-13-inch glass or ceramic baking dish. Sprinkle bottom of dish with salt and pepper; set aside. Finely chop 12 olives, and thinly slice remaining 4; reserve separately.
  • Slice potatoes very thinly (about 1/16 inch thick) with a mandoline or sharp knife. Arrange one-third of potatoes in buttered dish, overlapping slightly. Brush with melted butter; season with salt and pepper. Scatter one-third of garlic and half of the chopped olives on top. Repeat process to make another layer. Top with remaining potatoes; brush with melted butter, and season with salt and pepper. Set aside remaining garlic and butter.
  • Tightly cover with foil. Roast until potatoes just begin to color, 16 to 18 minutes. Remove foil; roast until edges are pale golden, about 10 minutes more. Meanwhile, skin fillets if necessary; halve crosswise. Stir together reserved garlic and melted butter in a large dish. Dip fillets in mixture; season with salt and pepper.
  • As soon as potatoes come out of oven, place fillets on top. Roast until fillets are cooked through, about 10 minutes. Scatter olive slices and parsley on top.

½ cup butter, divided
1 medium white Spanish onion, chopped
1 ½ cups grated medium Cheddar cheese

4 tablespoons salted butter, divided
1 ½ cups milk
1 ½ pounds haddock fillets
1 teaspoon chopped fresh thyme
½ teaspoon sea salt, or to taste

1 medium onion, chopped
2 stalks celery, chopped
1 medium carrot, grated
1 clove garlic, minced
½ medium lemon, juiced
¼ cup all-purpose flour
4 cups prepared mashed potatoes
1 cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a casserole dish with cooking spray.
  • Melt 1 tablespoon butter in a large skillet over medium heat. Add milk and lay fish in the milk to poach. Sprinkle with thyme, sea salt, and pepper. Cover the pan and bring milk to very low boil. Cook until fish flakes easily with a fork, about 7 minutes.
  • Remove fish to plate and use a fork to break up into bite-sized chunks. Pour milk into a bowl and set aside.
  • Melt 1 tablespoon butter in the skillet over medium heat. Add onion, celery, and carrot and saute until soft, about 5 minutes. Add garlic and saute until fragrant, about 1 minute. Turn heat to low and scrape the veggies to the side of the skillet. Add the remaining 2 tablespoons of butter and lemon juice to the empty spot. Sprinkle flour over the melted butter; whisk and cook until it forms a thick, golden paste, 10 to 15 minutes.
  • Combine the veggies back in with the roux. Add the milk and fish back to the skillet. Gently toss together. Remove from heat.
  • Add 1/2 of the fish mixture to the prepared casserole dish, then top with 2 cups of the mashed potatoes. Repeat the layers once more. Sprinkle the top of the casserole with Cheddar cheese.
  • Bake in the preheated oven until cheese is golden brown, about 35 minutes.

⅓ cup cubed butter
3 ⅓ tablespoons milk
2 large eggs

1 medium onion, peeled and diced
1 teaspoon dry thyme leaves
¼ cup dry vermouth
¼ cup all-purpose flour
1 cup fish stock, or to taste
1 cup milk
salt and freshly ground black pepper to taste
¼ cup half-and-half
2 tablespoons chopped fresh parsley
6 ounces salmon fillet, cut into bite-sized pieces
9 ounces skinless cod, cut into bite-sized pieces
5 ounces uncooked medium shrimp, peeled and deveined
1 tablespoon lemon juice
¾ cup grated medium Cheddar cheese

Steps:

  • Place cubed potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 15 minutes. Drain.
  • Transfer potato cubes to the bowl of a stand mixer. Blend gently, adding cubed butter and milk. Add in eggs and mix only until mashed potatoes reach your desired consistency, or finish by hand if needed;overmixing will yield gluey potatoes. Season with salt and pepper.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • While potatoes are boiling, heat butter and olive oil in a large skillet over medium heat. Add onion and thyme and saute until onions are soft and browned, about 5 minutes. Deglaze with vermouth and cook until alcohol has evaporated, about 2 minutes. Whisk in flour. Slowly whisk in stock and milk and bring to a simmer. Simmer for 1 to 2 minutes. Sauce should be fairly thick, but if it's too thick you can thin it out with a little bit of additional stock. Taste and season with salt and pepper if desired. Turn off heat and stir in the half-and-half and parsley.
  • Scatter salmon, cod pieces, and shrimp onto the bottom of a 2-quart baking dish. Sprinkle lightly with salt and pepper. Drizzle lemon juice over the top of the seafood.
  • Pour prepared sauce over seafood and stir gently to combine. Spread prepared potatoes over the top and fluff with a fork, then sprinkle Cheddar cheese over the top.
  • Bake in the preheated oven for 10 minutes. Reduce heat to 350 degrees F (175 degrees C) and bake until potatoes are evenly browned all over, seafood is cooked through, and pie is bubbly and piping hot, about 20 more minutes.
  • Remove from the oven and allow to rest for 10 minutes before serving.

A twist on the American twice baked potato- these are stuffed with a sumptuous smoked fish and prawn cheesy filling.

Steps:

  • Preheat your oven to 220 degrees Celcius. Cook your potatoes- (I usually do this part in the microwave for about 13 mins, then 5 mins in the oven). Leave to cool for about 5 minutes.
  • Cut the potatoes in half lengthways. Scoop out the flesh into a large bowl- being careful not to break the skins. Mash the potato with the butter, cream, season with a good pinch of nutmeg, salt & pepper.
  • Chop the wilted spinach and fold that through, along with the prawns. Flake in the cooked smoked fish. Add half of the grated cheese and the chopped spring onions. Mix together.
  • Spoon the mixture back into the potato skin shells, patting down and creating a dome. Sprinkle with remaining cheese and bake for approx 15 mins until golden and bubbling, and skins are super crispy. Serve with a green salad or vegetables.

This creamy dish is really easy and quite informal in a way yet made with luxury seafood and cheesy potato rosti topping instead of the regular mashed potato topping, it can be special enough for a smart dinner with family and close friends.

600 g fresh cod fish fillets or 600 g halibut steaks
250 g scallops, cut in half
250 g tiger shrimp, peeled and devained (defrosted if frozen)
500 ml fish stock or 500 ml vegetable stock
1 bay leaf
50 g butter
50 g plain flour
2 tablespoons double cream
5 -6 gherkins, drained and chopped
2 tablespoons chopped fresh parsley
salt & freshly ground black pepper
1 kg desiree potato, nicely cleaned
50 g butter, melted
50 g cheddar cheese, finely grated

Steps:

  • Pre-heat the oven to gas mark 7/425°F/220°C.
  • You will need a baking dish about 5 cm deep of 2 litre capacity, well buttered.
  • Start off by boiling the potatoes, with skin on, in a saucepan with enough salted water.
  • Once boiled though, strain off the water and cover them with a clean tea towel to absorb the steam.
  • Meanwhile, heat the stock in a medium saucepan, add the bay leaf and season it well.
  • Then cut the fish in half, if they are large pieces, add it to the saucepan and poach the fish gently for 5 minutes (it should be slightly undercooked).
  • Using a draining spoon, remove the fish to a plate and strain the liquid through a sieve into a bowl.
  • In the same pan you cooked the fish in, melt in the butter, whisk in the flour and cook for 2 minutes.
  • Then gradually add the strained fish stock little at a time, whisking all the time.
  • When you have a smooth sauce, turn the heat to its lowest setting and let the sauce gently cook for 5 minutes.
  • Then whisk in the double cream, followed by the gherkins and chopped parsley.
  • Give it all a good seasoning and remove it from the heat.
  • Now to make the rösti, peel the potatoes and, using the coarse side of a grater, grate them into long shreds into a bowl.
  • Then add the melted butter and lightly toss everything together using 2 forks so that the potatoes get a good coat of butter.
  • Now remove the skin from the white fish and divide it into chunks, quite large if possible, and combine the fish with the sauce.
  • Next, add the raw scallops and prawns to the fish mixture then spoon it into the prepared baking dish.
  • Sprinkle the rösti on top, spreading it out as evenly as possible but not pressing it down too firmly.
  • Finish it off by scattering the grated cheese all over the surface.
  • Bake on a high shelf of the oven for 35-40 minutes until golden brown.
  • If you would like to make the fish pie in advance, then you will have to let the sauce cool down completely before adding the fish, scallops and prawns. After you have spread the topping, cover the dish loosely with clingfilm and refrigerate it until you're ready to bake. But you will have to give it an extra 10 minutes of cooking time.

Flavour salmon, cod and smoked haddock with fennel, anise and vermouth, and top with crispy nutmeg mash

1kg Maris Piper potato , cut into chunks
good grind of nutmeg
175ml double cream
75g butter , plus a little extra for the top
2 egg yolks
knob of butter
2 shallots , finely chopped
½ tsp fennel seeds , lightly crushed
1 star anise
300ml vermouth
300ml fish stock , fresh if possible
300ml double cream
200g skinless smoked haddock fillet, pin-boned and cut into 3cm pieces
200g skinless cod fillet, pin-boned and cut into 3cm pieces
200g skinless salmon fillet , pin-boned and cut into 3cm pieces
140g frozen pea
4 eggs , hard-boiled and chopped
small bunch parsley , chopped
small bunch dill , chopped
juice ½ lemon

Steps:

  • Boil the potatoes for 10-15 mins until tender. Drain and mash with the nutmeg, cream, butter and some seasoning. Leave to cool slightly, then stir in the egg yolks and chill until ready to use.
  • While the potatoes cook, make the sauce. Heat the butter in a large pan. Add the shallots, fennel seeds and star anise, and cook until the shallots are soft, about 5 mins. Add the vermouth, bubble and reduce until there is a syrupy glaze left - this will take 10-15 mins. Add the stock and continue bubbling until the liquid has reduced by half. Add cream and return to the boil for 2 mins, then strain and return to the pan.
  • Heat oven to 200C/180C fan/gas 6. Add the fish pieces to the cream sauce and poach for 2 mins until just cooked. Fold through the peas, hard-boiled egg and herbs, season and add a little lemon juice. Portion the fish sauce into individual dishes or 1 large dish. Top with the mashed potato: either pipe on with a piping bag fitted with a star nozzle or simply spoon on top and rough up with a fork. Dot the top with a little extra butter, then bake for 15 mins for small dishes or 30 mins for a large one, until golden and bubbling.

To the uninitiated, fish pie has an uninviting name and reputation. But this is fish that is gently poached, then swathed in a white sauce and topped with buttery mashed potatoes and finished to a heat-bronzed finish in the oven. It is a dish good for children but can be made into unapologetic dinner-party fare by poaching the fish in a little white wine, making the white sauce with light cream rather than milk and infusing all of it with the eggy-lemony kiss of saffron. It's an hour well worth spending.

1 medium carrot, peeled and quartered lengthwise
1/2 cup white wine
Large pinch salt
1 bouquet garni (bay leaf, fresh thyme, parsley, celery and leek, tied together in cheesecloth)
2 pounds baking potatoes, peeled and cut into chunks
8 tablespoons (1 stick) unsalted butter, at room temperature, plus more for greasing pan
1/2 to 1 teaspoon of salt, to taste
8 ounces skinless cod fillets
8 ounces skinless haddock fillets
8 ounces skinless salmon fillets
1/2 teaspoon powdered saffron or 1/2 teaspoon saffron threads steeped in 1 tablespoon boiling water
1 cup light cream (or a combination of half and half and heavy cream) or as needed
1/4 cup all-purpose flour
Pinch of mace
Salt and pepper, to taste
5 ounces cooked, peeled shrimp
Freshly grated nutmeg

Steps:

  • In a deep covered skillet, combine carrot, wine, salt, bouquet garni and 1/2 cup water. Bring to a boil, turn off heat and set aside.
  • Bring a pot of lightly salted water to a boil, and add potatoes. Cook until soft, and mash (preferably with a potato ricer) with 6 tablespoons butter and the salt. Cover and set aside.
  • Heat oven to 375 degrees. Put cod and haddock into skillet with carrot, cover, and bring to a simmer. Poach for 3 minutes. Transfer fish to a plate, and add salmon to skillet. Poach for 3 minutes, and transfer salmon to plate with cod and haddock. Discard carrot and reserve bouquet garni. Strain liquid into a measuring cup, add saffron and add enough cream to make 2 cups liquid.
  • Place a saucepan over low heat, and melt remaining 2 tablespoons butter. Stir in flour and mace. Stir for a few minutes; remove pan from heat. Slowly stir in cream mixture, beating until smooth. Return pan to heat and add reserved bouquet garni. Stir until mixture is thickened, about 5 minutes. Salt and pepper to taste.
