ROASTED CAULIFLOWER GRILLED CHEESE
A gluten-free option for grilled cheese lovers. Roasted cauliflower steaks are prepped, then wrapped around your favorite cheeses! Add tomatoes and you have a gluten free, vegetarian option for any time of the day!

- Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
- Remove the tough bottom leaves from the cauliflower, taking care not to remove the stem. Place on a cutting board with the stem facing upwards; cut vertically on both sides of the stem to remove the loose florets. Reserve florets for another use. Cut vertically through the stem into 2 even "steaks", about 1 inch thick. Transfer to the prepared baking sheet.
- Roast cauliflower in the preheated oven until soft and browned, about 15 minutes.
- Heat olive oil and butter in a large frying pan. Cook cauliflower until browned on one side, 2 to 3 minutes. Flip cauliflower and shift to one side of the pan so you have space to warm cheese slices.
- Lay cheese slices in the pan until they begin to melt, then place over the cauliflower steaks. Warm tomato slices in the same way. Season with black pepper. Cover cheeses and tomatoes with the second steak. Flip "sandwich" and cook over low heat until cheeses are melted, 2 to 3 minutes more.

Cutting cauliflower into "steaks" and grilling them not only gives a flavorful, caramelized, and smoky taste, the presentation is lovely! A delicious change from boring old steamed cauliflower! I like my cauliflower a little on the firm side, so add a few extra minutes if you like it softer.

Steps:
- Preheat grill to medium-high heat and lightly oil the grate.
- Whisk oil, lemon juice, garlic, salt, smoked paprika, brown sugar, chili powder, and black pepper together in a bowl. Set aside.
- Remove the tough bottom leaves from each cauliflower, taking care not to remove the stem. Place the cauliflower heads onto a cutting board with the stem side facing upwards; cut vertically on both sides of the stem to remove the loose florets. Reserve florets for another use.
- Cut each cauliflower vertically through the stem into 2 even "steaks", 1 to 1 1/2 inches thick. Remove any remaining small leaves from each steak. Place the 4 steaks on a baking sheet.
- Brush one side of the steaks with some of the oil mixture. Place steaks on the grill, oiled side down; grill for 5 minutes. Brush more oil mixture on top of the steaks and gently flip over; grill until golden brown and slightly charred, 5 to 7 minutes more. Drizzle with any remaining oil and remove to a plate. Sprinkle with cilantro.

I actually won a cash prize in our local paper for this recipe. My husband and I will eat the whole thing ourselves - make several if you're having guests. If someone you love doesn't care for cauliflower, this may be the ticket!

- Remove stem& leaves from cauliflower.
- Wash& pat dry.
- Spread the butter over the cauliflower.
- Sprinkle with seasoned salt& cheese.
- Wrap head of cauliflower in heavy duty aluminum foil.
- Grill over medium heat about 40 minutes or until desired tenderness (test with toothpick).

- When ready to cook, set Traeger temperature to 450˚F and preheat, lid closed for 15 minutes.
- Brush the cauliflower with olive oil and season liberally with salt and pepper.
- Put cauliflower in a cast iron skillet, place directly on the grill grate and cook for 45 minutes until golden brown and the center is tender.
- While the cauliflower is cooking, combine the melted butter, parmesan, garlic and parsley in a small bowl.
- During the last 20 minutes of cooking, baste the cauliflower with the melted butter mixture.
- Remove the cauliflower from the grill and top with extra parmesan and parsley if desired. Enjoy!
PARMESAN ROASTED CAULIFLOWER
Steps:
- When ready to cook, set Traeger temperature to 400℉ and preheat, lid closed for 15 minutes.
- On a baking tray, mix together cauliflower, onion, thyme, garlic, olive oil, salt and pepper.
- Place tray on preheated grill and cook until cauliflower is firm and almost tender (about 25 minutes).
- Sprinkle cauliflower with Parmesan cheese and continue to cook on the Traeger for another 10 to 15 minutes. Cauliflower should be tender and the Parmesan crisp. Serve immediately, enjoy!
ROASTED CAULIFLOWER | TRAEGER GRILLS

- When ready to cook, set the temperature to 180°F and preheat, lid closed for 15 minutes. For optimal flavor, use Super Smoke if available.
- Cut the cauliflower into medium-sized florets, and place it on a sheet tray. Transfer the sheet tray to the grill and smoke for 20 minutes
- While the cauliflower is smoking, mix all of the ingredients together except for the Parmesan cheese.
- After 20 minutes remove the cauliflower. Increase the grill temperature to 450°F and preheat, lid closed for 15 minutes.
- While the grill is coming up to temperature, toss the cauliflower with the spice mixture, and place it back on the sheet tray.
- Place back on the Traeger and roast it for 10 minutes or until it has a nice golden brown color.
- In the last few minutes of cooking, sprinkle the Parmesan over each piece and close the lid until the cheese is melted. Enjoy!
