Creamy and cheesy cauliflower casserole with cream cheese and bacon is an easy, low-carb side dish perfect for holidays and gatherings.

2 medium heads of cauliflower
2 tablespoons extra-virgin olive oil
1 teaspoon garlic powder
3/4 teaspoon kosher salt
1/2 teaspoon ground black pepper
1/4 teaspoon ground nutmeg
6 slices bacon
4 ounces reduced-fat cream cheese (at room temperature)
1/4 cup nonfat plain Greek yogurt
2/3 cup freshly grated Gruyere (or similar melty, nutty, alpine-style cheese, divided)
1/4 cup finely grated Parmesan cheese (divided)
3 tablespoons fresh chives (chopped)

Steps:

  • Place racks in the upper and lower thirds of your oven and preheat to 425 degrees F. Lightly coat a wide 3-quart (9x13) casserole dish, with nonstick spray, and line a rimmed baking sheet with parchment paper.
  • In a large bowl, toss the cauliflower florets with olive oil, garlic powder, salt, pepper, and nutmeg.
  • Transfer the cauliflower to the prepared casserole dish and spread it into an even layer. Keep the bowl handy. Roast cauliflower on the lower rack for 30 minutes, until the florets are tender and begin to brown.
  • Meanwhile, arrange the bacon strips in a single layer on the prepared foil-lined baking sheet. Bake on the upper rack until crisp, about 10 to 15 minutes.
  • Remove the bacon and cauliflower from the oven. Stir the cauliflower, spread it back into an even layer, and place it on the upper rack to continue cooking until the end of its baking time.
  • Transfer the bacon to a paper-towel-lined plate and lightly pat dry. Once cool enough to handle, roughly chop or crumble the bacon into small pieces.
  • In the same bowl that you used to toss the cauliflower, beat together the cream cheese and Greek yogurt until combined. Stir in 1/3 cup Gruyere cheese, 2 tablespoons of Parmesan cheese, and half of the chopped bacon.
  • Remove the roasted cauliflower from the oven and dollop the cream cheese mixture over the top. Sprinkle with the remaining 1/3 cup of Gruyere and 2 tablespoons of Parmesan.
  • Return the pan to the upper third of the oven and bake until the cheese is melted and gooey, about 5 to 7 minutes. Turn the oven to broil. Broil the casserole until golden on top, 1 to 3 minutes. Do not walk away, and watch carefully to make sure the cheese does not burn.
  • Remove from the oven and sprinkle with fresh chives and remaining bacon. Serve hot.

Studded with salty olives, pancetta and Parmesan that gets golden and crisp at the edges, this is roasted cauliflower at its brightest and most full-flavored. You can serve the caramelized florets either as a vegetable-based main dish or a hearty side to roasted meats or fish, or big bowls of pasta. The recipe calls for using a package of finely diced pancetta that practically melts into the sauce. But if you prefer a chunkier texture, you can dice it yourself into 1/2-inch cubes, and add them with the cauliflower. Or, to make this vegetarian, just leave the pancetta out.

1 large head cauliflower (about 1 3/4 pounds), trimmed and cut into bite-size florets (about 8 cups)
1/2 cup extra-virgin olive oil
1/2 teaspoon kosher salt, plus more as needed
1/3 cup olives, crushed, pitted and chopped
1 fat garlic clove, finely grated or minced
1 1/2 tablespoons fresh lemon juice, plus more to taste
1/8 teaspoon red-pepper flakes, plus more as needed
4 ounces pancetta or bacon, cut into 1/8-inch cubes
3/4 teaspoon cumin or caraway seeds
1/2 cup shredded (not ground) Parmesan
1/4 cup chopped fresh parsley or mint leaves and tender stems, for serving

Steps:

  • Heat oven to 425 degrees. Place cauliflower on a rimmed baking sheet and toss with 1/4 cup olive oil and 1/2 teaspoon salt until well coated. Roast for 15 minutes.
  • In a small bowl, whisk together olives, garlic, lemon juice, 1/8 teaspoon red-pepper flakes and a large pinch of salt. Drizzle in the remaining 1/4 cup olive oil, whisking well.
  • After the cauliflower has roasted for 15 minutes, add pancetta and cumin seeds to pan and gently mix to combine. Sprinkle Parmesan on top and roast for another 15 to 20 minutes, until cauliflower is tender, the pancetta rendered, and cheese is golden brown and crunchy.
  • Spoon olive dressing all over roasted cauliflower while still hot and toss to combine. Taste, and add more salt, red-pepper flakes or lemon juice, if needed. Scatter parsley over the top before serving.

Steps:

  • Preheat the oven to 450 degrees.
  • Toss the cauliflower florets in the olive oil until all florets are coated.
  • Add the homemade ranch seasoning, garlic, dill, oregano, salt, black pepper, and crushed red pepper if using.
  • Mix all the florets until the seasonings are well coated on each piece.
  • Roast until the florets and golden and tender. This will take about 18 to 20 minutes.
  • Take the florets out of the oven and sprinkle with mozzarella, cheddar shredded cheese, and crumbled bacon bits.
  • Bake for 3 to 5 more minutes or just enough time for the cheese to melt.
  • While the cauliflower florets are roasting, make the sauce to drizzle over the top.
  • In a small bowl combine the sour cream, mayo, and water. Feel free to add more water to get the consistency you want.
  • Add the mixture to a plastic squeeze condiment bottle so you can easily drizzle it over the roasted cauliflower (or use a spoon).
  • When the cauliflower is done roasting, drizzle the sour cream mayo sauce over the dish and then drizzle it with sriracha sauce.
  • Top with chopped parsley and serve warm.

6 slices bacon, cut 1/2-inch thick
2 medium heads cauliflower, cut into bite-size florets (3 to 4 pounds total)
Kosher salt and freshly ground black pepper
6 ounces cream cheese, at room temperature
2 cups shredded Cheddar
4 scallions, white and light green parts only, thinly sliced
2/3 cup sour cream

Steps:

  • Preheat oven to 425 degrees F.
  • Cook the bacon in a medium nonstick skillet over medium heat, stirring occasionally, until brown and crispy, 6 to 7 minutes. Transfer to a paper towel-lined plate. Reserve 2 tablespoons of the bacon drippings.
  • Put the cauliflower florets in a 3-quart casserole dish. Toss with the reserved 2 tablespoons bacon drippings, 3/4 teaspoon salt and 1/2 teaspoon pepper. Roast until the florets are soft and begin to brown, about 30 minutes.
  • Meanwhile, mix together the cream cheese and 1 cup of the Cheddar in a medium bowl until well combined. 1 large yellow onion (sliced)
2 large heads of cauliflower
1 garlic head
olive oil (as needed)

1 quart chicken stock
1 cup parmigiano reggiano cheese (shredded)
Optional Garnish: fresh sage, garlic bread, croutons, extra parmigiano reggiano cheese

Steps:

  • Preheat the oven to 450 degrees.
  • Cut the head of cauliflower into similar sized pieces, toss it with the garlic cloves and 1-2 tablespoons of olive oil. Season with salt and pepper and cook on a baking sheet. About 25 minutes or until the cauliflower is tender.
  • In a small sauté pan over medium heat, cook bacon until crispy. Use a slotted spoon to carefully remove the pieces from the bacon grease and set aside for later.
  • Reduce the heat to low and add the onions to the bacon fat. Cook, stirring occasionally, until the onions are a deep golden brown. Add olive oil or melt butter if needed. Set aside.
  • In a heavy bottomed pot, add the roasted cauliflower, garlic cloves and chicken stock. Bring it to a boil, then reduce to a simmer until the cauliflower is heated through. Purée with a blender or food processor. Stir in the parmigiano reggiano cheese until melted and season with salt and pepper.
  • Garnish with the cooked bacon, caramelized onions, optional fried sage, and additional parmigiano reggiano.

Steps:

  • Preheat your oven to 400 F. Toss the cauliflower in a medium-sized baking dish with some cooking fat and roast it in the oven for 20 minutes. While the cauliflower is cooking, fry the bacon in a skillet over a medium-high heat, until just done. Then remove it from the heat and chop it into bite-sized pieces when cool enough to handle. Once the cauliflower has cooked for 20 minutes, add the bacon to the baking dish and cook for another 5 minutes, until the bacon is nice and crispy. Season to taste with salt and pepper, and sprinkle with the green onion on top to serve.

1 lb cauliflower
1 lb broccoli
3 slices bacon, microwaved until done
5 tablespoons olive oil
1/2 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/3 cup panko bread crumbs and 1/4 cup finely grated parmesan cheese or 1/3 cup sharp cheddar cheese

Steps:

  • Preheat oven to 400°F.
  • Slice cauliflower and broccoli into florets and put in a single layer in an oven-proof baking dish.
  • Drizzle with olive oil and toss with the precooked bacon and spices.
  • Place casserole in the hot oven, uncovered, for 25-30 minutes, or until the vegetables are lightly brown. Test to see if done. Fork tines should be able to easily pierce the cauliflower and broccoli.
  • Remove from oven and if desired sprinkle generously with Parmesan cheese and panko bread crumbs.

  • Meanwhile, bring a large pot of salted water to a boil. Add the gnocchi and cook as the label directs. Reserve 1/2 cup cooking water, then drain.
  • Cook the bacon in a large nonstick skillet over medium-high heat, turning, until crisp, about 8 minutes. Remove to a paper towel¿lined plate, reserving the drippings in the skillet.
