ROASTED CHESTNUTS
Steps:
- Make a large X in each chestnut with chestnut knife or a sharp paring knife, cutting through shell. Toss chestnuts with oil in a bowl.
- Heat dry skillet over moderately low heat until hot, then roast chestnuts in skillet on stovetop, covered, stirring every few minutes, for 15 minutes total.
- Add water and continue to roast, covered, stirring occasionally, until water is evaporated and chestnuts are tender, about 5 minutes more. Serve hot.
AIR FRYER ROASTED CHESTNUTS
I don't have a fireplace to roast my chestnuts, so I grabbed my air fryer. Using the air fryer and water is a perfect solution. Use them in any dish calling for cooked chestnuts, or eat them as is with a mug of vin chaud for a truly autumnal experience.

- Preheat an air fryer to 375 degrees F (190 degrees C).
- Bring a large pot of water to boil. Remove from heat.
- Wash and dry the chestnuts. Place flat side down on a cutting board. Using a paring knife, score a large "X" in the rounded side, covering at least half of the chestnut. Make sure the knife goes through the outer skin and the brown layer underneath. This will aid peeling after being roasted.
- Soak chestnuts in the hot water for 1 to 5 minutes, depending on how big the chestnuts are. Remove chestnuts with a slotted spoon and immediately place them in the air fryer basket. Place 1 cup hot water inside the basket.
- Cook for 10 minutes. Shake well. Check to see if there is still water inside. If not, add another 1/2 cup. Continue cooking until the shells have peeled away and exposed flesh has browned, 5 to 10 minutes more. Remove and allow to cool enough to be handled. Peel away the shells.

STOVE-ROASTED CHESTNUTS

- Using a small sharp knife or a chestnut knife, carve an "X" in the flat side of each chestnut. Place chestnuts in an even layer, "X"-side down, in a chestnut-roasting pan. Cook chestnuts over low heat until opened, 20 to 25 minutes. Peel immediately, using a towel if chestnuts are too hot to touch.
FIRE ROASTED CHESTNUT CARAMEL COOKIES
Steps:
- For the fire roasted chestnuts: (Broiler Method) Preheat the broiler on your stove. Slice the chestnuts about 1/4 inch thick and place in a single layer on a baking sheet. Place under the broiler for 5 minutes. Transfer the chestnuts to a plate and allow to cool fully to room temperature. Rough chop the chestnuts and set aside. (Outdoor Method) Build a safe outdoor fire using lump charcoal. Be sure to keep a fire extinguisher close at hand. Wrap the chestnuts in heavy-duty foil so that they can move freely inside the foil pouch. Using a chopstick tip, poke three holes in both sides of the foil packet. Place the foil packet in the fire for 4 minutes. Flip and cook for another 3 minutes. Using tongs, remove the pouch from the fire and allow to cool to room temperature, approximately 30 minutes. Rough chop the chestnuts and set aside.
- For the cookies: Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper.
- Add the flour, cocoa, baking powder, salt and cinnamon to a sieve with a large dry bowl under it. Sift the ingredients together into the bowl, and then add the chestnuts and set aside. In a stand mixer with a paddle attachment, cream together the butter and sugar on medium speed until the mixture becomes pale yellow and well combined. Add the vanilla and egg and mix until combined, approximately 30 seconds.
- Slowly add the dry ingredients from the bowl into the stand mixer on the lowest possible speed. Once the mixture starts to come together, gradually increase the speed to medium until it forms a dough-like ball. Form 20 even-sized balls and place them on the prepared baking sheets.
- Bake for 15 minutes, and then transfer to a cooling rack with a sheet of parchment paper under the entire rack. Allow the cookies to cool while you make the salty caramel crack.
- For the salty caramel crack: Add the sugar to a medium dry skillet and set over medium heat; the sugar will start to melt and turn a pale yellow color. Shake the pan and let it continue to melt. The sugar will start to turn golden brown and then a deep rust color--make sure to shake the pan often to mix. Once the sugar becomes a solid amber red, remove from the heat and add the cream and then the butter. Mix quickly with a soup spoon; it will start bubbling. Be careful not to touch the sugar with your hands as it is scorching hot.
- While the sugar is still soft and can be drizzled, spoon it generously over the cookies. The sugar will start setting to a hard crack as it cools fully. Sprinkle some flaky sea salt on top of each glazed cookie. Let the cookies fully cool before serving.

- Take a cheap old frying pan, and using a hammer and large nail, or drill bit, make about 10 holes in the bottom.
- Put an X in the skin of each chestnut. Heat pan over flame. Add chestnuts and using a spray bottle, spray with water.
- Return to flame, shake pan slowly and constantly for about 15 min., occasionally spritzing with more water. (will require more yuletide songs).
- Place chestnuts into large metal bowl, sprinkle with salt, and toss. Place chestnuts into 8 small brown bags, sprinkle a dash more salt into bag, and serve. (or sell em on the street corner for a nickel like they did in the ol' days)!

ROASTED CHESTNUTS OVEN OR STOVE TOP
This is a pretty simple recipe made stove top. These are great to bring on a winter snow covered walk to keep warm. Do use an oven mitt to remove the chestnuts from the cookie sheet for they will burn ya!. Use dry, firm chestnuts; very soft and very hard chestnuts might be rotted. An overcooked chestnut is dried out and hard. Cover the chestnuts with a towel to keep them warm while serving. Try a little salt on your chestnuts. If the inner skins do not come off easily, the chestnut is either undercooked or overcooked Be sure to immobilize the chestnut with a dish towel, oven pad, oven mitt, so it will keep the chestnut from rolling when cutting. If you don't score them they will explode in the oven! The inner skin, called the pellicle, can be eaten or removed.

- Preheat oven to 425 degrees.
- Roast unseasoned chestnuts for 20 to 30 minutes or until chestnuts are tender, easy to peel, golden brown in color, and the shells are beginning to open. For even roasting, gently stir to turn them over after about 10 minutes. The sliced part of the shells will curl back.
- Remove the nuts from the oven, make a mound of them in an old towel, wrap them up, squeeze them hard -- they should crackle -- and let them sit for a few minutes.
- Meanwhile open a bottle of vino, pour yourself a glass, Peel nuts when they are cool enough to handle, and serve with salt if desired. Because hot chestnuts peel easier than cold ones.

ROASTED CHESTNUTS IN THE FIREPLACE
There are chestnut roasting devices-long-handled iron skillets or perforated baskets that allow the flames direct contact with the nuts-but they are not necessary; any way you can get the chestnuts in a hot fire and close to the flames works well. Chestnuts are high in moisture-more like a fruit than a nut-and fairly perishable. Look for nuts that are dark brown, shiny, and heavy and store them in the refrigerator.
