Great garlic goodness! This cheesy vegetarian white pizza boasts roasted garlic mixed in with the ricotta AND a few cloves plopped directly on the pizza itself. Fresh herbs add flavor, spinach adds a little variety, and a good amount of melty mozzarella cheese seals the deal. Add grilled chicken for the carnivores and everyone's happy!

1 1 pound refrigerated pizza crust dough (I like Trader Joe's garlic & herb dough for this one) or use your own favorite pizza dough
24 medium cloves garlic (about 2 heads, separated, peel left on)
1 tablespoon + 2 teaspoons olive oil + more for working the crust
1 cup part-skim ricotta cheese (whole milk ricotta works too)
2 tablespoons chopped fresh basil
1 teaspoon honey
1/2 teaspoon dried oregano
1/2 teaspoon kosher salt + more for sprinkling the garlic
1/4 teaspoon freshly ground black pepper
1 10-ounce bag frozen chopped spinach, thawed and squeezed to remove any excess moisture
2 cups shredded mozzarella cheese (divided) (about 8 ounces)
1 1/2 pound boneless, skinless chicken breast
1 teaspoon kosher salt
Freshly ground black pepper
1 tablespoon olive oil

Steps:

  • Preheat oven to 375 degrees Fahrenheit.
  • Drizzle a baking sheet with a little olive oil and place the pizza dough on top to rest before working. (Trader Joe's pizza dough requires 30 minutes sitting at room temperature, so I usually do that first).
  • Lay out a large square of foil and place the garlic cloves on top (be sure you leave the peel on!). Drizzle with 1 tablespoon olive oil and sprinkle with a couple of pinches of kosher salt. Fold the foil into a sealed packet and place in the oven (put it on a baking sheet if you're worried about leaking). Roast the garlic until soft, golden, and fragrant, about 25 minutes. Remove from oven and set aside to cool. Once cool enough to handle, peel the cloves and discard the skins. Increase oven heat to 450 degrees Fahrenheit to prepare it for baking the pizza.
  • Add 8 of the peeled garlic cloves to a small bowl. Smash with a fork. Add the ricotta, 2 teaspoons olive oil, basil, honey, oregano, 1/2 teaspoon kosher salt, and pepper. Mix well.
  • If using chicken, heat the outdoor grill or an indoor grill pan on medium-high. Rub the chicken with 1 tablespoon olive oil and sprinkle with salt and pepper. Cook, flipping occasionally, until cooked through (we always check the internal temperature, which should register 165 degrees Fahrenheit). Set aside to cool. Once cool, cut into chunks.
  • Stretch the pizza crust into a large (approx. 14-inch) round and place on greased cookie sheet or a pizza stone. If creating one meatless version and one chicken version, split the dough in half and stretch each into smaller rounds, approximately 8 inches or so, and place each on an olive-oil-greased cookie sheet.
  • Top the crust(s) with tablespoon-sized mounts of ricotta, as evenly spaced as possible (but it doesn't have to be perfect!) Scatter with spinach and remaining garlic cloves. Top with cooked chicken chunks if using (you may only want to use half of the chicken if you're making two smaller pizzas). Scatter mozzarella cheese over the top(s).
  • Bake at 450 degrees Fahrenheit until the crust is crisp and golden and the cheese is melted and bubbling, 9-10 minutes. Remove from oven and allow to cool for a couple of minutes before slicing into wedges with a pizza cutter and serving.

1 bulb roasted garlic
1 pizza dough (from grocery store or pizza shop)
1 cup whole milk
2 T butter
2 T flour
1/4 tsp salt
1/4 tsp cayenne pepper
3/4 pound fresh mozzerella, sliced
1/2 cup grated parmesan cheese
1/2 cup ricotta cheese

Steps:

  • Roasted Garlic: Preheat oven to 350F. Cut the top 1/4 off the head of garlic. Rub with olive oil, salt and pepper. Place in small dish, cover with foil and bake for 45 minutes to 1 hour. Cool. Squeeze garlic cloves from the bulb and finely chop. Garlic Sauce: Gently heat milk in small suacepan, until barely simmering. Remove from heat. In separate saucepan, melt butter over medium heat. Add flour and whisk until smooth. Cook 1-2 minutes whisking constantly. Add the milk, continuing to whisk. Add the salt and cayenne papper. Continue stirring until sauce is thick and bubbly. Add finely chopped roasted garlic. For Pizza: Preheat oven to 425F. Spray cooking sheet (jelly roll pan) with non-stick cooking spray. Spread out pizza dough to form the crust. Drizzle dough with olive oil, sprinkle with salt, pepper and grated parmesan cheese. Poke the surface of the pizza with a fork (to allow air to escape while baking). Bake for 8-10 minutes. Remove pizza and top with garlic sauce, ricotta, maozzerella and remaining parmesan cheeses. Bake for an additional 8-10 minutes. Allow to rest for 2-3 minutes before serving.

1/2 ounce fresh yeast or 1 packet dry yeast
4 cups bread flour, such as King Arthur, plus more for dusting
1 tablespoon kosher salt
Splash of olive oil (about a tablespoon)
Cooking spray
2 heads garlic
2 tablespoons olive oil, plus more for mixing
Pinch of kosher salt and pepper
Pinch of kosher salt and pepper
2 cups ricotta
4 red onions
2 tablespoons olive oil
2 green zucchinis
2 yellow summer squash
2 tablespoons olive oil, plus more for drizzling
2 teaspoons red pepper flakes
2 teaspoons lemon zest (about 2 lemons)
Pinch of kosher salt and pepper
Pinch of kosher salt and pepper
Fresh mozzarella, sliced, for serving

Steps:

  • For the dough: In an electric mixer fitted with a dough hook, dissolve the yeast in the water until there are no pieces of yeast left. Add the flour and start mixing on low. After the flour and water have started to mix, add the salt. Let mix for another minute until all of the flour from the sides of the bowl have been incorporated. If the dough is sticking to the side of the bowl, add flour slowly until it starts to firm up around the dough hook. Add the olive oil and mix for another 5 minutes.
  • Let the dough rest in the bowl, covered, for 10 minutes. In the meantime, spray a baking sheet or aluminum pan with cooking spray. After the dough is done resting, empty it onto a lightly floured prep surface. Weigh the dough out into three 10-ounce portions. In your hands, fold the dough into itself, tightening the dough and removing air pockets with each fold. Add flour to your hands if the dough is too sticky. When the dough is tight enough to hold its shape, put it on to the greased baking sheet and spray the top with a little of the cooking spray. Cover with plastic wrap and let proof at room temperature for 1 to 1 1/2 hours. The dough should at least double in size. You can also proof in the fridge overnight and leave it out 30 minutes before you are ready to use it the next day.
  • For the garlic ricotta: While the dough is proofing, make the roasted garlic ricotta, sliced zucchini and charred red onions. (Start roasting the garlic right away as it will take the most time.)
  • Preheat the oven to 400 degrees F.
  • Cut off the tops of the heads of garlic. Drizzle the olive oil over the tops of the garlic, wrap in aluminum foil and roast for 45 minutes to 1 hour. Once tender, remove from the oven and let cool. In a stainless bowl, squeeze out the roasted garlic. Add a splash of oil and a pinch of salt and pepper. Using a spatula, smooth the garlic into a paste in the bowl. Add the ricotta and fold in the garlic until it is completely incorporated.
  • For the charred red onions: Turn the oven temperature up to 500 degrees F. Cut the ends off the onions, and peel off the tough outer layer. Cut in half lengthwise and thinly slice. Toss in olive oil and cook on a baking sheet in the oven of 15 to 20 minutes until you see a good bit of charred pieces. Cool.
  • For the zucchini: While the onions cook, cut the ends off of the zucchini and squash and thinly slice on a bias. Toss in a metal bowl with the olive oil, pepper flakes, lemon zest and salt and pepper.
  • To assemble the pizza: Leave the oven temperature at 500 degrees F, and lightly flour a smooth work surface. Take out one of the dough balls. Starting at the edges, gently press down on the dough, being careful not to pull at it. Continue pressing the edges and work towards the center, keeping the dough round. Make sure to flour both sides at least twice during this process. Once you've stretched the dough to about 14 inches, move it onto a round aluminum pizza pan or a wooden peel if you plan on sliding it on to a pizza stone.
  • Start assembling the pie by spreading the ricotta mixture all over the base. Place several slices of fresh mozzarella evenly over the crust. Next, add the cut zucchini and squash and charred red onions. Drizzle with olive oil and place in the oven on the aluminum pan or if using a pizza stone, slide on from the wooden peel. Let bake for about 10 minutes, then slide the pizza right onto the oven rack and cook for another 5 to 10 minutes or until the crust is golden brown. Repeat with the remaining ingredients.

  • Gently heat milk in a small saucepan, just until barely simmering. Remove and keep covered. In a separate saucepan, melt butter. When foam subsides, add flour and stir until smooth. Cook for 1 to 2 minutes, stirring. Do not allow flour to color. Gradually add the warm milk, whisking to combine. Add the salt and cayenne and increase the heat to medium. Cook the mixture, whisking continuously, until the sauce comes to a boil and is thickened. Remove from heat and add 10 of the roasted garlic cloves. They have discontinued this pizza from their frozen pizza line and it was my favorite so I am going to try this and freeze it (instructions are included) so I can have it fast when I want it.

1 1/2 teaspoons fast rising yeast
1/2 cup warm water, plus
2 tablespoons warm water (The hottest it needs to be is 110 degrees F)
1 1/2 cups bread flour, only
3 teaspoons sugar
1 teaspoon olive oil, plus additional for coating
1 teaspoon salt
flour, for dusting
3/4 cup minced garlic
2 teaspoons olive oil
3 tablespoons cold water
4 minced shallots
3 tablespoons butter
1 1/2 tablespoons of minced garlic
4 small fresh thyme sprigs, minced
1 dash white pepper
1/4 cup Chardonnay wine
1 tablespoon fresh lemon juice
1 chicken bouillon cube
1 3/4 cups shredded mozzarella cheese, per pizza
1/4 cup fresh romano cheese, grated
3 teaspoons chopped fresh parsley, per pizza
1 rotisserie-cooked chicken

Steps:

  • To Make The Dough (The following directions are for those of you who don't have a bread maker) (If you do have a bread maker follow its directions using the ingredients listed):.
  • Preheat the oven to the lowest setting possible- only warm. Dissolve the yeast in the water and set aside for approx 5 minutes. Do not use water that is hotter than 120 degrees F because it will kill your yeast. Use hot sink water. In about five minutes there will be a little froth on the bowl of yeast. This shows that it is working. (Note: Check the expiration date on your yeast before you use it).
  • Get out a big mixing bowl, and add your flour, salt, and sugar. Mix well and make a little well in the center. Slowly add your yeast water mix in the well and mix in the flour with a spoon. Mix well. The dough will be sticky. Do not over mix- this will ruin your dough. Make a dough ball and leave in the bowl.
  • Get out 2 sheets of foil and lay them out on your counter. Sprinkle a little flour on the foil, and then place your dough ball in the center. Lightly oil your hands and then start kneading for a couple minutes.
  • Get out another bowl and lightly oil the bowl just to coat. Place your dough ball in the bowl and turn once to coat the dough with the oil. Secure airtight with plastic wrap. Place in the oven just to warm.
  • Let sit for 2 hours in the oven to rise. A warm oven is extremely important. Room temperature will not rise your dough properly.
  • After 2 hours punch the dough down and separate it into two pieces. Form 2 nice balls. (If you are not making the pizza this same day than you can stick it in the refrigerator covered and sealed for only 1 day. ) (Then let it rise when you are ready to make it in a warm oven for 2 hours).
  • If you are making it the same day than place one ball back in the same bowl, and get out another bowl and lightly coat it with olive oil. Seal both very well with plastic wrap- air tight. Place back in the oven to warm for another 1 1/2 hours.
  • After your time has passed- than you take your dough balls and roll them one by one into a 9 inch pizza. 1/2 inch thick.
  • Heat your oven to 350.
  • At this point you are ready to dress your pizza. The original recipe calls for you to bake your pizza on a pizza stone. If you decide to use a pizza stone you need to heat it in the oven for one hour to get nice and hot before use.
  • Roasted Garlic Paste.
  • First preheat the oven to 325 degrees F.
  • In a small bowl add the garlic with the olive oil and mix well. Spread on the bottom of a baking pan and roast approx 30 minutes until browned. After the time has passed stir the garlic well and cook another 12 minutes. Let this cool to the touch and add it to a food processor along with the water and mix till it looks like a fine peanut butter. This makes about 1/4 cup.
  • Garlic Shallot Butter with Lemon.
  • Turn your burner on medium and add your 1 Tablespoon of butter to the pan. Next add the minced garlic, thyme, and minced shallots. Continue to cook till the onions start to turn brown. Turn your burner to high heat, and add the sprinkle of white pepper, fresh lemon juice, chicken cube, and wine. Continue to stir , and cook until the mixture is reduced. Once it is reduced add your remainder 2 Tablespoons of butter, and keep on low until your pizza is ready. If you are making this pizza later- than place in an airtight container and keep refrigerated until ready to use.
  • Assembling your pizza.
  • Now is the easy part. All we do is assemble the pizza.
  • Your oven needs to be preheating now if it is not already. Your dough should be rolled out and ready for the topping.
  • First place a thin layer of the garlic paste on your 9 inch pizza. Sprinkle your mozzarella cheese on the pizza. Then with a slotted spoon, scoop your onions on the pizza.
  • Next you want to add your shredded chicken to the pizza, Romano cheese, and sprinkle parsley on the pizza. Place your pizza in the middle rack of the oven.( If you are using the pizza stone, you want to transfer the pizza over to the warm stone to bake).
  • You want to bake the pizza till the crust is crisp and the cheese is melted. This takes approx 8 minutes.
  • Repeat the same steps for the second pizza.
  • Variations of Pizza.
  • With your Homemade pizza crust- you can make many different pizza's.
  • The recipe for the California Garlic paste is above. Any other pizza that you decide to make whether it be the pepperoni and cheese, or the sausage and mushroom- spread a layer of this paste over the bottom of the crust before you put on your pizza sauce. It gives the pizza a phenomenal taste.
  • I will note- we do make several pizza's and freeze them. You want to bake the prepared pizza just for a couple minutes to pre-cook it, not all the way. This way when you do cook it later- it will taste just like the original day you made them. If you make 9 inch pizza's a large freezer bag fits the pizza perfect.
