GRILLED POTATOES
Crispy grilled potatoes are easy and a perfect side to any BBQ recipe. Golden outside, tender inside, with no boiling or clean up required!

Steps:
- Rinse and dry the potatoes (no need to peel). Cut crosswise into ½-inch slices (if your potatoes are smaller than a golf ball, you can halve or quarter them). Place in a large bowl.
- In a small bowl, stir together the rosemary, garlic powder, salt, pepper, and oregano.
- Drizzle the potatoes with the oil, then sprinkle the spices over the top. Toss to evenly coat.
- Preheat the grill to medium-high (about 375 to 400 degrees F).
- Place two large (about 22 to 24 inches long) sheets of heavy-duty foil down on a large baking sheet (you'll use the baking sheet for easy transport) so that the foil pieces are slightly overlapping down the center to create a wider sheet. Coat with non-stick spray. Spread the potatoes onto the foil in a single layer (if you prefer not to have the food touch the foil, you can add a layer of parchment in between). Place two more overlapping sheets of foil on top, then fold up the edges all the way around to seal and create a packet. Leave some space towards the top of the packet to allow the air to circulate.
- Using the baking sheet, carry the potatoes out to the grill, then with tongs slide the packet onto the grill. Cover then cook for 15 minutes.
- Carefully open the foil then use the tongs to flip the potatoes over. They should be deeply golden on the first side (if not, continue to cook them for 3 to 5 minutes more). Place the foil loosely back over the top, close the grill, and cook for 5 to 10 additional minutes, until the potatoes are tender when pieced with a fork.
- Slide the potato packet back onto the baking sheet, then transfer them to a serving bowl (or serve them right off of the foil). Serve warm, with a sprinkle of Parmesan and chopped fresh herbs as desired.

GRILLED POTATO CHIPS WITH GARLIC AIOLI
This is a simple recipe for grilling up fantastic potato chips. Make sure the potatoes are sliced very thin or you'll just end up with grilled potatoes.

Steps:
- Gather the ingredients.
- Preheat grill for medium-high heat.
- Use either a mandolin slicer or sharp knife to cut potatoes lengthwise into very thin slices.
- Place in a large bowl and coat with olive oil and salt.
- Place a grill pan on grill and allow to heat.
- Place potatoes on pan forming a single layer.
- Allow them to cook for about 5 minutes per side or until browned.
- Repeat process with additional potato slices.
- Gather the ingredients.
- Combine mayonnaise, lemon juice, minced garlic and a pinch of salt. Taste to make sure the flavor is to your liking. Make any adjustments necessary.
- You can prepare aioli ahead of time and store covered in the refrigerator. Serve with grilled potato chips. The mixture will stay good for up to 3 days after preparation if stored in the refrigerator.

GRILLED POTATOES OR ROASTED POTATOES ON THE GRILL
My favorite way to have potatoes. It works the best to do the first step (microwaving the potatoes) earlier in the day.

Steps:
- Cook potatoes in microwave until tender but firm (about 3-4 minutes).
- Cool (at least an hour works best) and cube.
- Microwave onion pieces for about 1-2 minutes so they are slightly soft.
- Mix with cubed potatoes.
- Coat thoroughly (but lightly) with olive oil and as much seasoning salt as you like.
- Place mixture on grill, I recommend using a vegetable/seafood grate, over hot coals. Cover to prevent flair-ups due to the oil.
- Cook approximately 20 minutes, until golden, turning about every 5 minutes.
- Serve with sour cream and/or ketchup.
- This method can be used for squash, broccoli, carrots etc.
- You can also use garlic salt or other spices like oregano in place of, or in addition to, the seasoning salt.

ROASTED POTATOES ON THE GRILL
These roasted potatoes on the grill are a cinch to make--simply potatoes, garlic, oil, and rosemary-that turn crispy on the outside, blissfully tender on the inside.

- Prepare the grill for direct cooking over high heat so it maintains a steady temperature of 500º F (260ºC).
- Pour the oil and garlic in a large flameproof roasting pan. Place the pan on the grill grate, close the lid, and let it heat until the oil begins to shimmer, about 2 minutes.
- Carefully add the potatoes to the pan and gently stir to coat with the oil. Close the lid on the grill and let the potatoes roast, keeping the lid closed except to occasionally turn the potatoes with a thin metal spatula, until they're golden brown and tender, 20 to 25 minutes.
- Season the potatoes to taste with salt and pepper and, if desired, a sprinkle of rosemary. Using a slotted spoon, move the potatoes into a bowl or platter and serve hot.

GRILLED POTATOES
Steps:
- Heat grill to medium heat and oil the grates with cooking spray.
- Add the sliced potatoes to a rimmed tray or baking dish. Sprinkle with salt and pepper on both sides. Pour 1/2 cup Garlic Oil over the potatoes and toss gently to coat. Add the potatoes to the hot grill, then brush with the remaining oil mixture. Grill, flipping the potatoes once, until golden brown, about 5 minutes per side.
- Mash together the garlic and 1/2 teaspoon salt with a knife or bench scraper on a cutting board until it is a paste. Add the garlic to a small saucepan with the oil, chives, parsley, lemon juice and remaining 1/4 teaspoon salt. Cook over medium-low heat until the ingredients have combined, 3 to 4 minutes. Use as a marinade for potatoes, brush on rolls before toasting or brush on proteins for extra flavor.

- Preheat the oven to 400 degrees F.
- Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, and garlic; toss until the potatoes are well coated. GRILLED & ROASTED POTATOES

- ON THE DAY Pick the sage leaves into your largest roasting tray, then use a speed-peeler to strip in the lemon peel, and squeeze in the juice. Drizzle in 2 tablespoons of olive oil, add a pinch of sea salt and black pepper, then break apart the unpeeled garlic bulb into the tray. Scrub the potatoes, then cut into 1cm-thick slices. Working in batches, place on a large screaming-hot griddle pan for a couple of minutes on each side, pressing them down with a fish slice until beautifully bar-marked, and transferring to the roasting tray as you go. Toss together, then spread out in a single layer. Cover until needed.
- TO SERVE Preheat the oven to 200°C/400°F/gas 6. Roast the potatoes, uncovered, for 45 minutes on the top shelf, or until cooked through and lightly golden. Squeeze the soft garlic cloves out of their skins, to serve.

ROASTED POTATOES WITH GARLIC, LEMON, AND OREGANO

- Preheat oven to 400°F.
- Place the potatoes in a single layer in a 13-x-9-inch baking dish and pour the oil over them. Add the garlic, dried oregano, salt and pepper to taste and toss well to coat with the oil.
- Bake the potatoes for 15 minutes. Add the stock, toss and bake for 10 minutes more. Add the lemon juice, toss and bake for 10 to 15 minutes more, or until the potatoes are cooked through. If you like, preheat the broiler and broil the potatoes for 2 to 3 minutes, or until golden brown.

ADOBO ROASTED POTATOES
Using a classic Puerto Rican adobo seasoning - an island staple blend of garlic powder, oregano and black pepper - this recipe yields simple, savory roasted potatoes. They pair well with grilled meat and seafood, or make for a flavorful addition to any vegetable plate. The seasoning mix can be doubled or tripled (or more), with the rest stored in the pantry as an all-purpose seasoning, as it's often used in Puerto Rican cooking to add instant flavor to stewed meats, beans and more. Roasted potatoes will keep for at least a week in the fridge, so make a big batch to snack on, add them to salads and soups, or smash and fry them for breakfast home fries.

- Heat the oven to 400 degrees and line a medium rimmed baking sheet with foil or parchment.
- Prepare the adobo seasoning: In a small bowl, combine 1½ teaspoons salt with the garlic powder, oregano, turmeric and pepper, and mix well with a fork.
- Put potatoes in a large bowl and randomly poke a few small holes in each with a fork. Pour in 2 tablespoons of the olive oil and toss potatoes well, then sprinkle with the adobo seasoning, and stir to combine. Pour in the remaining 1 tablespoon olive oil and toss a bit more to ensure the potatoes are evenly coated with spices.
- Transfer potatoes to the lined baking sheet in an even layer, being careful not to crowd the pan.
- Bake for 30 to 40 minutes, shaking the pan every 10 minutes or so. Potatoes are done when they pierce easily with a fork or the tip of a sharp knife. Taste and add more salt, if desired.
SIMPLE GRILLED RED POTATOES
Just thought I would try these roasted red potatoes on the grill and they were so good that I thought I would post the recipe. You can also add chopped onions, and green or red peppers, too.

- Preheat grill.
- Dice up the red potatoes and place on heavy duty foil or a grill pan.
- Spray foil or pan with Pam or a cooking spray of choice.
- Add potatoes to foil or pan.
- Mix together melted butter with seasoning salt and pour over potatoes. Stir gently.
- Sprinkle salt and black pepper to taste.
- Close foil sightly and grill until tender.
- Time depends on how fast your grill cooks. Mine was about a hour on low heat.
