4 firm but ripe pears
6 slices thinly sliced prosciutto, cut into fourths
2 tablespoons balsamic vinegar

Steps:

  • Preheat oven to 400 degrees F.
  • Cut pears in half lengthwise, then use a melon baller or small knife to remove the cores. Cut each half lengthwise into 3 slices.
  • Wrap 1 slice of prosciutto around the center of each pear slice. Evenly space the pears on a foil-lined baking sheet.
  • Bake until the prosciutto is crisp and begins to brown, 14 to 16 minutes. Transfer to a serving platter and drizzle with vinegar. Serve immediately.

6 slices prosciutto, very thin and trimmed of excess fat
1/2 medium bartlett pears (very ripe and sweet is best) or 1/2 medium Anjou pear, cored and cut into 6 wedges (very ripe and sweet is best)
1/2 cup blue cheese, crumbled
2 tablespoons light cream
1/2 teaspoon thyme, finely chopped
fresh ground black pepper

Steps:

  • Preheat the oven to 450 degrees. Line a baking sheet with aluminum foil.
  • Lay the prosciutto slices side by side on a work surface. Place a pear wedge near the end of each one and roll up. Transfer the wrapped pear wedges to the baking sheet. At this point you can lightly sprinkle over with freshed ground black pepper, if desired. Roast about 6 minutes, until the prosciutto is lightly browned and the pear has softened.
  • Meanwhile, combine the blue cheese, cream and thyme in a small saucepan over medium heat. Cook about 3 minutes, stirring constantly, until the cheese melts. Season with pepper to taste. Arrange the roasted wrapped pears on a plate around a small bowl containing the blue cheese cream. Serve immediately.

1 teaspoon freshly grated nutmeg for every 4 pears

1 to 2 thin slices prosciutto di Parma or Toscano per person

Steps:

  • Preheat the oven to 200F. Cut the pears in half lengthwise. Remove the core, then cut each half in half lengthwise. Place them on a cookie sheet, skin side down. In a mixing bowl, stir together the cinnamon, nutmeg, ginger, and cardamom. Transfer the spice mixture to a strainer and lightly dust the pears. Place the cookie sheet in the oven and roast the pears until caramelized, about 45 minutes. Serve the caramelized pears with the prosciutto. VINO Serve this with a dry Prosecco from the Veneto, well chilled.

1 bunch fresh sage, leaves removed and stems discarded, divided
6 ounces prosciutto
1 tablespoon olive oil, or more as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Lightly season pork with salt and black pepper. Arrange about 6 sage leaves over tenderloin. Wrap prosciutto around tenderloin and sage, overlapping prosciutto slightly; wrap in plastic wrap and refrigerate to allow prosciutto to set on pork tenderloin, 5 to 10 minutes. Remove plastic wrap.
  • Heat olive oil in a skillet over medium heat. Fry wrapped tenderloin in the hot oil until prosciutto is crispy and lightly browned on all sides, 8 to 10 minutes. Transfer wrapped tenderloin to a baking dish, reserving oil in the skillet.
  • Bake tenderloin in the preheated oven until pork is cooked through, about 20 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
  • Heat reserved oil in the skillet over medium heat; fry remaining sage leaves until crispy, adding more oil as needed, about 5 minutes.
