2 tablespoons extra virgin olive oil, divided
3/4 teaspoon salt, divided
4 (6 ounce) tilapia fillets
1/2 teaspoon fresh ground black pepper, divided
2 cups hot cooked instant rice

Steps:

  • Grate 2 teaspoons orange rind. Peel and section oranges over a bowl, reserving 2 tablespoons juice. Chop sections.
  • Combine rind, chopped orange, 2 tablespoons parsley, 5 teaspoons oil, and 1/4 teaspoon salt in a bowl; toss well.
  • Preheat oven to 400°.
  • Sprinkle fish evenly with 1/4 teaspoon salt and 1/4 teaspoon pepper. Place fish in an ovenproof skillet coated with remaining 1 teaspoon oil.
  • Bake at 400° for 14 minutes or until fish flakes easily when tested with a fork or until desired degree of doneness.
  • Combine 2 tablespoons reserved juice, remaining 2 tablespoons parsley, remaining 1/4 teaspoon salt, remaining 1/4 teaspoon pepper, and rice. Spoon 1/2 cup rice onto each of 4 plates; top each with 1 fillet and 1/4 cup salsa.

4 tilapia fillets
1 ½ cups orange juice
6 tablespoons butter, softened
¾ cup panko bread crumbs
3 tablespoons orange juice
2 cloves garlic, minced
1 tablespoon minced fresh basil
½ cup orange juice

Steps:

  • Pour 1 1/2 cups orange juice into a resealable plastic bag. Add tilapia fillets, coat with the juice, squeeze bag to remove excess air, and seal the bag. Marinate in the refrigerator 3 hours to overnight.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Whisk butter, panko bread crumbs, 3 tablespoons orange juice, garlic, and basil together in a bowl.
  • Remove tilapia from the orange juice and shake to remove excess liquid; arrange fillets in a 13x9-inch baking dish. Discard marinade.
  • Pour 1/2 cup orange juice over the tilapia fillets. Spread butter mixture over the top of the filets to cover each completely.
  • Bake in preheated oven until the liquid is bubbling and the fish flakes easily with a fork, about 15 minutes.

Steps:

  • Preheat oven to 375°. Place tilapia in a parchment-lined 15x10x1-in. pan. Drizzle with lemon juice, then melted butter., Bake until fish just begins to flake easily with a fork, 11-13 minutes. Meanwhile, mix remaining ingredients. Remove fish from oven; sprinkle with parsley mixture.
