Rock Cakes from Harry Potter have a bad reputation. Hagrid made them and they were just like rocks, however, proper rock cakes or rock buns are nothing but soft and delicious!

8 oz (1 1/2 cups) all purpose flour
1 1/2 tsp baking powder
3 oz (3/4 of a stick) butter
3 oz (1/3 cup) sugar
2 oz (1/2 cup) currants or golden raisins
1 egg
2 1/2 oz milk
(optional: pinch of mixed spice)

Steps:

  • Preheat oven to 425°F (215°C) Line cookie sheets with silicone baking sheets or parchment paper. Sift the flour, baking powder (and mixed spice, if using) and set aside. Cream the butter and sugar until creamy and smooth. Add the egg. Next, mix in the sifted flour and milk. As it comes together, add the dried fruit. Mix just until combined. Do not over mix. With two forks, make "rock-like" cookies on the tray about 2" apart. They should not be smooth. Sprinkle with a little sugar and bake in the upper part of the oven for about 12 minutes. (It could range from 10 to 15 minutes, depending on your oven.) Remove from tray and place on cooling rack. When cool, enjoy the fruits of your labor

Tasy, easy to make snacks

Yield Makes Cakes

Number Of Ingredients 6

200g Self raising flour
75g Margarine
75g Caster sugar
50g Chocolate chips
1 egg
1-2 tbsp water

Steps:

  • Set oven to 210 C / gas mark 7. Grease a baking tray
  • Sieve the flour into a mixing bowl
  • Cut the margarine into cubes and then rub into the flour using your fingertips. The mixture should then resemble breadcrumbs
  • Add the sugar and chocolate chips into the mixture. Mix using a wooden spoon
  • Break egg into a small bowl and beat with a fork. Add egg to mixing bowl and mix. Add 1 - 2 tbsp of water if the mixture does not stick together. The mixture must be firm enough to stand alone on the baking tray in lumps.
  • Place heaps of the mixture on the tray. Make sure that they are all an even size. Bake them for approximately 15 minutes, or until golden brown.

250g (2 cups) of self-raising flour
65g (1/3 cup) raw sugar
1/4 tsp cinnamon
90g butter
75g (1/2 cup) sultanas
75g (1/2 cup) mixed peel (or substitute with more sultanas)
1 egg
80ml (1/3 cup) of milk
extra sugar for sprinkling

Steps:

  • Preheat oven to 'moderately hot' about 180°C (360°F). Grease a baking tray or cookie sheet with butter.
  • Sift flour, sugar and cinnamon together in a bowl. Using your fingertips, rub in the butter until mixture resembles fine breadcrumbs.
  • Add sultanas and mix well breaking up clumps.
  • Beat the egg and add. Add sufficient milk to make a moist but stiff consistency. Depending on the flour you may need a little less or a little more milk.
  • Spoon mixture into rough walnut-sized lumps onto the greased tray. Leave space for slight spreading. Sprinkle with sugar.
  • Bake for 15- 20 minutes or until cooked through.
  • Loosen on trays while hot and allow to cool or eat warm with or without butter.

Rock buns are quick and easy to make and delicious to eat 30 minutes later. They're an ideal first bake for children.

100 g butter, (at room temperature)
250 g self-raising flour
125 g caster sugar
½ teaspoon mixed spice ((2.5ml))
1 lemon, (zested)
100 g currants
30 g candied peel, (chopped)
1 large egg
1 tablespoon milk ((15ml))

Steps:

  • Preheat the oven to 220°C/ 200°C fan/ gas mark 7/ 425°F
  • Grease the baking trays if you aren't using a liner, otherwise put the liners on the trays
  • Zest the lemon.
  • Put all the ingredients except the dried fruit into a large bowl or food processor. Process or beat vigorously until thoroughly combined and smooth(Butter, flour, sugar, spice, lemon zest, egg, milk)
  • Add the dried fruit and stir in with a spoon or fork
  • Put the mixture in small heaps onto the baking trays. A teaspoongul is about right
  • Cook for 12-15 minutes until brown on top
  • Remove from the oven and leave on the tray for 5 minutes. Move the Rock Buns to a wire cooling rack until ready to eat
  • Put the butter and flour in a large bowl and rub the butter into the flour until all the butter is mixed in
  • To rub in, have your palms up and move your thumbs over fingers from the little fingers inwardsThe mixture will resemble breadcrumbs when you've finished
  • Add the caster sugar, spice, lemon zest, currants and peel to the flour and butter mixture and stir in well
  • Beat the egg with a fork in a basin. Add the milk and beat again
  • Add this mixture to the dry ingredients and mix to a dough, which will be fairly firmUse your hands or the fork
  • Using a teaspoon put the mixture in small heaps onto the baking trays. A heaped teaspoon is about right
  • Cook for 12-15 minutes until brown on top
  • Remove from the oven and leave on the tray for 5 minutes. Move the Rock Buns to a wire cooling rack until ready to eat

½ teaspoon salt
1 cup butter, cut into pieces
2 eggs
½ cup milk
1 teaspoon vanilla extract
½ teaspoon almond extract
¾ cup flaked coconut

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a large bowl, stir together the flour, sugar, baking powder, and salt. Add butter, and cut in using a pastry blender or a fork until the mixture resembles fine crumbs. In a separate bowl, whisk together the eggs, milk, vanilla extract, and almond extract. Make a well in the center of the dry ingredients, and pour in the wet ingredients. Add coconut, and mix just enough to blend. Drop by rounded tablespoonfuls onto ungreased cookie sheets.
  • Bake for 20 minutes in the preheated oven, or until golden brown.

Despite their name, Rock Cakes or Rock Buns are deliciously soft little fruit cakes. They are quick and easy to make and take only 15 minutes to bake.

200 g Self Raising Flour
Pinch of Salt
50 g light brown sugar (caster sugar is fine)
¼ teaspoons Mixed Spice
110 g Unsalted butter
50 g Raisins
50 g Sultanas
30 g Candid Peel (or Glace Cherries (chopped))
1 medium egg
2 tablespoons milk
Tablespoon demerara sugar (for dusting (optional))

Steps:

  • Preheat the oven to 180deg Fan Assisted.
  • Line a baking tray with a sheet of baking parchment or a non stick baking mat.
  • Add the flour, salt, sugar and spices into a large bowl. Give it a little mix.
  • Using your finger tips, rub in the butter until you have fine breadcrumbs.
  • Add the raisins, sultanas and candid peal. Give everything a good mix ensuring all the fruit is coated with flour.
  • Mix the egg and milk together in a small jug and add to the flour mixture.
  • Bring everything together to form a stiff dough.
  • Spoon 11 - 12 individual mounds of dough onto the baking tray. Old Fashioned Rock cakes have a rough surface, so don't worry about trying to make them smooth.
  • Bake in the centre of the oven for 15 mins or until baked. They should have a nice golden colour. If you choose to make larger Rock Buns, the baking times will differ and they will take longer to bake.
  • Take out of the oven and dust with demerara sugar while still warm. Leave to cool.

250 g Self-raising Flour
65 g Butter or Margarine
70 g Caster Sugar
1 Free-range Egg
2-3 tbsp Milk
1 tsp Orange Extract
100 g Mixed Dried Fruit

Steps:

  • Pre-heat your oven to 190° (or 170°c for a fan assisted oven or Gas Mark 5) and grease a couple of baking sheets. Set aside.
  • In a large bowl, sift the flour. Add the butter and rub together with your fingers until it resembles breadcrumbs.
  • Add the sugar and egg to the mixture. Add the milk a spoonful at a time, mixing together to create a thick, sticky dough - you may not need all the milk.
  • Add the orange extract and the mixed dried fruit. Mix until the dried fruit is evenly dispersed through the dough.
  • Place a tablespoon sized amount of dough onto your pre-greased baking sheets. Repeat with the rest of the dough, leaving space between each ball. Don't be concerned with making them neat - the rougher the balls are, the more rock-like your buns will appear.
  • Bake in your pre-heated oven for around 15 minutes until they have a nice golden colour.
  • Allow to cool a little on the baking sheets before transferring to a wire rack to cool completely. Although rock buns are best enjoyed when still a little warm from the oven!

8 ounces/225 grams self-rising flour
1 teaspoon baking powder
1/2 cup/110 grams unsalted butter (at room temperature, cut into pieces)
1/4 cup/55 grams sugar
1/2 cup/110 grams mixed dried fruit
6 tablespoons/55 grams currants
1 egg
1 to 3 tablespoons milk
Optional: demerara sugar for sprinkling

Steps:

  • Gather the ingredients.
  • Preheat the oven to 350 F/175 C. Lightly grease two baking sheets or line with parchment paper.
  • Sift the flour and baking powder into a large bowl.
  • Add the softened butter and lightly rub together with your fingertips until the mixture resembles fine breadcrumbs.
  • Add the sugar and dried fruit and mix so all ingredients are well incorporated.
  • Make a well in the center of the mixture, add the egg and 1 tablespoon of the milk, and whisk with a fork to combine. Mix the dry ingredients into the egg mixture to create a stiff dough. If the mixture is still dry, add milk, 1 tablespoon at a time, until the dough holds together.
  • Divide the mixture into 12 mounds (about 1/4 cup each) and space evenly on the baking sheets. Sprinkle with demerara sugar, if using.
  • Bake in the preheated oven for 15 minutes or until golden brown and well risen. The rock cakes should be firm to the touch. Enjoy!

75g mixed dried fruit - I use a mixture of sultanas and raisins
1 large egg
1-2 tbsp milk
2 tbsp Demerara sugar

Steps:

  • Preheat the oven to180C/160Fan/350F. Grease and line a large baking tray with baking paper.
  • Sift the flour, baking powder and mixed spice or cinnamon together in a large bowl. Rub in the butter until the mixture resembles breadcrumbs. Stir in the caster sugar.
  • Stir in the dried fruit. Stir the egg and 1 tablespoon milk together in a small dish. Pour this into the dry ingredients and using your hands, mix until you have a fairly stiff dough. If the mixture is dry and you still have lots of crumbs on the bottom of the bowl, add a little more milk.
  • Using 2 forks, form "rock shapes" on the baking tray, making sure they are spaced 2-3 cm apart. Sprinkle the tops with Demerara sugar and bake for 15-20 minutes or until golden brown.
  • Remove the rock cakes from the baking tray and transfer to a wire rack.
