These popular muffins have been served at the Rose Cafe, in the Venice community of Los Angeles, Calif, since the cafe first opened in 1979. They are healthy as well as delicious. The bran used is wheat bran which can be purchased in bulk from Whole Foods Market and other health food stores.

1 1/4 cups wheat bran
2/3 cup all-purpose flour
2 tablespoons brown sugar
2 dashes salt
1 teaspoon baking soda
1 egg, beaten
1/2 cup buttermilk
1/4 cup canola oil
2 tablespoons honey
1/4 cup molasses
1/2 cup raisins (optional)
1/2 cup chopped walnuts (optional)

Steps:

  • Combine bran, flour, brown sugar, salt and baking soda in a 1 1/2 quart bowl, and mix well.
  • In another bowl, mix together the egg, buttermilk,oil, honey and molasses. Stir into the flour mixture.
  • Add optional ingredients, if using.
  • Pour batter into 9 buttered muffin cups, and bake at 350 degrees for 23 to 25 minutes or until a wood pick inserted in center comes out clean.

This recipe was given to me by my midwife after having a baby. Guaranteed to make everything, and I mean everything, better!!!

½ cup raisins
1 egg
¾ cup milk
1 ½ cups bran cereal (such as Kellogg's All-Bran® Original Cereal)
1 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
2 tablespoons melted butter
1 apple, cored and shredded
1 ripe banana, mashed
½ cup honey

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Grease 12 muffin cups, or line with paper cupcake liners.
  • Cover raisins with water in a microwave-safe bowl, and microwave on High for 1 minute to plump. Drain the raisins, and set aside.
  • Beat the egg with milk in a bowl, and mix in the bran cereal. Let the mixture stand until the cereal absorbs the liquid, about 5 minutes. Gently mix in the plumped raisins, flour, baking soda, cinnamon, melted butter, shredded apple, mashed banana, and honey, and stir a few times to mix.
  • Spoon the batter into the prepared muffin cups, and bake in the preheated oven for about 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

I have been trying to find a recipe that would be close to the muffins at Mimi's restaurant. This one is the closest I have found and they ARE yummy. Found at Cooks.com. If you don't have buttermilk, just put two teaspoons apple cider vinegar in two cups regular milk and let stand for 15 minutes.

1/2 cup butter
1/2 cup white sugar
1/2 cup dark brown sugar, packed
5 tablespoons honey
3 tablespoons boiling water
3 cups dates, pureed in food processor or 3 cups prunes, pureed in food processor. Measure before processing
1/2 cup honey
1/3 cup vegetable oil
3 large eggs
2 cups buttermilk
1 cup wheat bran
3 cups all-purpose flour
2 1/2 teaspoons baking soda
1 1/2 teaspoons salt

Steps:

  • Preheat oven to 375.
  • GLAZE.
  • Cream butter with sugars until light and fluffy.
  • Beat in honey and water.
  • Using a brush, coat bottom and sides of muffin tins.
  • MUFFINS.
  • Mix fruit, honey and oil until smooth.
  • Beat in eggs, then buttermilk and bran.
  • Sift flour, baking soda and salt together.
  • Add to mixture and beat until just combined.
  • Fill tins 3/4 full.
  • Bake for 20 - 25 minutes until springy to the touch.
  • Cool for 2 minutes then invert on rack to cool completely.

1/2 cup soft unsalted butter (1 stick), plus butter for pans if needed
3/4 cup 100 percent bran cereal
1 cup whole-wheat flour
3/4 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 cup light brown sugar
2 eggs
2/3 cup buttermilk
1 1/2 cups fresh blueberries

Steps:

  • Preheat oven to 350 degrees. Butter 12 two-and-a-half-inch muffin cups or line them with fluted paper.
  • Combine the bran cereal, whole- wheat flour, all-purpose flour, baking powder, baking soda and cinnamon in a bowl and stir to blend the ingredients. Set aside.
  • Beat the butter until it is creamy and beat in the brown sugar. Stir in the eggs one at a time, then add one-third of the flour mixture. Stir in half the buttermilk, then repeat with another third of the flour mixture, the remaining buttermilk and the remaining flour mixture. Fold in the blueberries.
  • Spoon the batter into the muffin cups. They should be not quite filled.
  • Bake until the tops are firm to the touch and lightly browned, about 35 minutes.
