PASTRY CREAM
Classic pastry cream, or creme patissiere, is a vanilla custard thickened with egg yolks and cornstarch. You can fill fluffy doughnuts, eclairs or other baked goods with this sweet cream or simply enjoy it on its own. This recipe does take some finesse, but the final product is completely worth the effort.

- Stir together the milk, salt, vanilla bean and seeds and 1/4 cup of the sugar in a medium saucepan until smooth. Bring to a simmer over medium heat and cook until the sugar has just dissolved, 1 to 2 minutes.
- Meanwhile, whisk together the cornstarch, egg yolks and remaining 1/4 cup sugar in a large bowl until smooth. While continually whisking, slowly pour in about 1/2 cup of the warm milk mixture. Continue to whisk until smooth. (This is called tempering, and it will prevent the yolks from scrambling.) Continue whisking and adding 1/2 cup of the warm milk mixture at a time until completely combined and smooth.
- Transfer the mixture back to the saucepan and turn the heat to medium. Cook, whisking constantly, until thickened and the texture of pudding, 2 to 4 minutes. Remove from the heat, then whisk in the butter until smooth and glossy. Remove the vanilla bean.
- Strain the pastry cream through a fine-mesh sieve into a medium bowl. Cover with plastic wrap, pressing it directly on the surface of the pastry cream, and refrigerate until chilled through, at least 2 hours and up to overnight. Before serving, whisk the pastry cream until smooth and fluffy.
PASTRY CREAM
This is a classic pastry cream often used in bakeries and restaurants. It can be used as a filling for cakes, pies or pastries. To make a lighter filling, fold in plain whipped cream.

- In a heavy saucepan, stir together the milk and 1/4 cup of sugar. Bring to a boil over medium heat.
- In a medium bowl, whisk together the egg yolks and egg. Stir together the remaining sugar and cornstarch; then stir them into the egg until smooth. When the milk comes to a boil, drizzle it into the bowl in a thin stream while mixing so that you do not cook the eggs. Return the mixture to the saucepan, and slowly bring to a boil, stirring constantly so the eggs don' t curdle or scorch on the bottom.
- When the mixture comes to a boil and thickens, remove from the heat. Stir in the butter and vanilla, mixing until the butter is completely blended in. Pour into a heat-proof container and place a piece of plastic wrap directly on the surface to prevent a skin from forming. Refrigerate until chilled before using.

PETITS CHOUX WITH ROSE CREAM
We reinvented a classic pastry as an homage to the rose: Pastry cream and whipped cream -- the first flavored with rose syrup, the second with rose water -- are layered in tender pate a choux shells and garnished with petals.

- Preheat oven to 375 degrees. Bring butter, sugar, salt, and 1 cup water to a boil in a saucepan over medium-high heat, stirring occasionally. Remove from heat. Stir in flour. Return to medium-high heat; cook, stirring constantly, until mixture pulls away from sides, about 3 minutes.
- Transfer to the bowl of an electric mixer fitted with the paddle attachment; mix on low speed until slightly cooled, about 1 minute. Raise speed to medium. Add whole eggs, 1 at a time, mixing well after each addition. Test batter by touching it with your finger and lifting to form a soft peak. If a soft peak does not form, mix in egg white a little at a time until it does.
- Transfer to a pastry bag fitted with a 9/16-inch plain round tip (such as Ateco No. 807); set aside. Dip a 1-inch round cookie cutter in flour; mark circles 1 inch apart on baking sheets lined with nonstick baking mats or parchment paper. Pipe batter into circles to fill. Gently smooth and round tops with a moistened fingertip.
- Bake until golden brown, about 20 minutes. Transfer sheets to wire racks to cool.
- Poke a small hole in bottom of each choux with a 5/16-inch French tip (such as Ateco No. 863). Transfer 1 cup pastry cream to a pastry bag fitted with a 1/4-inch plain round tip (such as Ateco No. 802). Fill each choux with pastry cream.
- Fold remaining 3/4 cup pastry cream into whipped cream until nearly incorporated but streaks are still visible. Put 6 filled choux into each serving dish; top with whipped cream, dividing evenly. Garnish with rose petals if desired.
ROSE PASTRY CREAM

- Whisk milk, 1/4 cup sugar, the rose syrup, and salt in a medium saucepan. Bring to a simmer over medium heat. Remove from heat, and set aside.
- Whisk yolks, cornstarch, and remaining 1/4 cup sugar in a bowl. Whisking constantly, gradually add milk mixture, 1/2 cup at a time. Pour back into pan. Cook, whisking, over medium-high heat until mixture thickens and registers 160 degrees on a candy thermometer, about 2 minutes.
- Transfer to the bowl of an electric mixer fitted with the paddle attachment. Add butter; mix on medium speed until butter melts and mixture cools, about 5 minutes.
- Cover with plastic, pressing it directly onto surface. Refrigerate at least 2 hours (up to 3 days). Let stand at room temperature 10 minutes and stir before using.
