FOOLPROOF ROSEMARY CHICKEN WINGS

Foolproof Rosemary Chicken Wings image

A little rosemary, a little garlic, little olive oil, and voila! Delicious and foolproof! Great for entertaining or just an intimate dinner for two. Serve with a Caesar salad, corn, anything you want! I usually use one 1 1/2-pound package of wings and, with salad, it's just about the perfect serving size for two. ENJOY!

Time 1h

Yield 2

Number Of Ingredients 6

1 ½ pounds chicken wings, cut apart at joints, wing tips discarded
10 sprigs rosemary
½ whole head garlic, separated into cloves - cloves unpeeled and quartered
1 tablespoon olive oil, or as needed
1 teaspoon lemon pepper
1 teaspoon seasoned salt, or to taste

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Arrange the chicken wings, rosemary, and garlic cloves on a broiler-proof baking sheet, making sure the chicken pieces are not touching. Drizzle the olive oil over the chicken and garlic. Season the wings on all sides with the lemon pepper and seasoned salt.
  • Bake in the preheated oven until chicken meat is no longer pink at the bone and the juices run clear, 35 to 40 minutes, turning the wings once about halfway through the cooking time. An instant-read thermometer inserted into the thickest part of a wing should read at least 160 degrees F (70 degrees C).
  • Take the baking sheet from the oven and set the oven's broiler to High. Remove the garlic and rosemary from the sheet and set aside. Turn the wings again.
  • Broil the wings until golden brown, about 5 minutes. Garnish with the rosemary sprigs and garlic to serve.

ROSEMARY & GARLIC ROASTED CHICKEN WINGS

Rosemary & Garlic Roasted Chicken Wings image

This is a really simple and delicious way to prepare chicken wings. This recipe is for roasting them in an outdoor wood fired oven at a high temperature. I am confidant that you can use your regular indoor oven as well.

Provided by NewEnglandCook

Categories     Chicken

Time 30m

Yield 4-6 serving(s)

Number Of Ingredients 8

1 lb small chicken wings (fresh is better)
3 tablespoons fresh rosemary, chopped
2 garlic cloves
1 lemon zest
1 teaspoon red pepper flakes
3 -4 tablespoons olive oil
salt
pepper

Steps:

  • Light your oven or grill and get it to a very high temperature 500-600 Degrees.
  • Chop your Garlic and Rosemary into a very fine dice. Add to a bowl with the lemon zest, chili flakes, a heavy pinch of salt, 10 big grinds of black pepper, oil to moisten the whole ensemble.
  • Rinse and pat dry the chicken wings and add to the rosemary mixture. Toss and massage the chicken wings in the mix making sure to coat each and every bit of every wing with every ounce of rub. Cover and refrigerate for 30 minutes to an hour (longer is better).
  • Once your oven or grill is up to heat lay the wings across and baking sheet lined with aluminum foil and place in the oven
  • In the oven they tend to smoke a lot so be prepared.
  • Cook the wings for roughly 10-12 minutes or until golden brown and crunchy, turning once or twice to crisp each side.
  • Enjoy!

LEMONY ROASTED CHICKEN WINGS

Lemony Roasted Chicken Wings image

These meaty out-of-the-ordinary roasted wings are infused with lots of lemon, garlic and rosemary, then roasted on a bed of fingerling potatoes. Use a large roasting pan that's at least 3 inches deep, or a big earthenware gratin dish, or a couple of Pyrex lasagna pans side by side. The lemony chicken and potatoes are delicious hot and crisp, but just as good at cool room temperature.

Time 1h30m

Yield 6 to 8 servings

Number Of Ingredients 10

2 pounds very small potatoes, such as fingerlings, whole, or use medium-size yellow-fleshed potatoes, cut in halves or wedges)
3 pounds chicken wings, preferably drumettes
Salt and pepper
Red pepper flakes, to taste
3 tablespoons extra-virgin olive oil
6 small lemons, cut into 1/4-inch thick half-moon slices
6 large rosemary sprigs, leaves stripped
8 garlic cloves, minced, or 1/2 cup chopped green garlic shoots
1 cup dry white or rosé wine
Pinch of dried oregano (optional)

Steps:

  • Heat oven to 400 degrees. Rinse potatoes with lukewarm water and pat dry.
  • Spread chicken wings out on a baking sheet or cutting board in a single layer. Season both sides of wings generously with salt and plenty of freshly ground black pepper. Sprinkle with red-pepper flakes as desired.
  • Transfer seasoned wings to a large bowl. Add olive oil, lemon slices, rosemary and garlic and toss well with (plastic-gloved) hands so everything is evenly coated.
  • Place potatoes on the bottom of a roasting pan. Arrange seasoned wings over potatoes in a single layer. Add wine and cover pan tightly with foil.
  • Bake, covered, for about 45 minutes, until potatoes are done. Remove foil and return the pan to the oven and bake about 20 minutes more, until wings are nicely browned. Using tongs, turn wings over and bake for another 20 minutes to brown the wings' other side. Sprinkle with dried oregano, and serve hot or at room temperature.
