Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Arrange half the lemon slices in a single layer in a baking dish. Layer with 2 sprigs rosemary, and top with salmon fillets. Sprinkle salmon with salt, layer with remaining rosemary sprigs, and top with remaining lemon slices. Drizzle with olive oil.
- Bake 20 minutes in the preheated oven, or until fish is easily flaked with a fork.

- Preheat oven to 400°F (200°C).
- Combine garlic, herbs, olive oil, lemon juice, salt, and pepper. Mix well.
- Line one baking sheet with parchment paper, lay salmon filets on one side of pan and cover with ⅓ of herb mixture. Flip salmon filets and cover with remaining ⅔ of mixture.
- Spread all cut vegetables (tomatoes, bell pepper, zucchini, and mushrooms) out on the remainder of the pan, then drizzle with olive oil, salt, and pepper to taste.
- Bake for 30 minutes or until tomatoes are bursting and salmon flakes easily.

ROSEMARY SALMON-VEGGIE PATTIES
A good friend told me the secret to his salmon patties--fresh rosemary. I incorporated it into my own salmon patty recipe & the whole family loves it! This is practically the only way, my 8-yr old will happily eat fish.

Steps:
- 1. Combine all ingredients, except oil or butter, in large bowl and mix well. Add more bread crumbs or instant potatoes if the mixture feels too wet.
- 2. Heat oil or butter on medium heat in large skillet or griddle. Scoop out about 1/4 cup of mixture and press onto skillet to form each patty.
- 3. Working in batches, cook patties for about 5 minutes on each side until browned.
- 4. Serve with tartar sauce, mayo, or spicy mustard.

- Allow salmon to rest at room temperature for 20 minutes prior to roasting. Preheat oven to 425° F.
- Place salmon on a parchment-lined baking sheet. Evenly top each fillet with oil, garlic, rosemary, salt, and pepper. Bake for 10 to 12 minutes, or until salmon flakes easily with a fork. Serve hot, with fresh lemon wedges for squeezing over the top if desired.
ROSEMARY ROASTED SALMON WITH ASPARAGUS & POTATOES

- Stir together oil, rosemary and garlic in a small bowl. Place potatoes in a large bowl and toss with 1 tablespoon of the oil mixture and 1/2 teaspoon each salt and pepper. Arrange the potatoes in an even layer on a large rimmed baking sheet. Roast until lightly browned and tender, about 20 minutes. Push the potatoes to one end of the pan.
- Place asparagus in the large bowl and toss with 1 tablespoon of the oil mixture, 1/4 teaspoon salt and 1/8 teaspoon pepper. Arrange the asparagus on other end of the baking sheet. Roast until the asparagus is bright green, about 3 minutes. Push the vegetables to either end of the pan, leaving space in the center.
- Brush salmon with the remaining 1 tablespoon oil mixture and sprinkle with the remaining 1/4 teaspoon salt and 1/8 teaspoon pepper. Place the salmon in the center of the pan. Thinly slice half the lemon and tuck the slices around the salmon and vegetables. Roast for 5 minutes more. Cut the remaining lemon half into wedges.
