Quick, easy and different side dish. This is my friend Lisa's recipe. Seems like we make this a lot especially when we have a lot of people to feed. Makes a great potluck, portable dish too! Baking this in a disposable foil pan makes this even easier to take along and leaves no pan to wash!

8 cups potatoes, sliced, enough to fill a 10x13 pan
8 ounces cheddar cheese, shredded or 1/2 lb Velveeta cheese, sliced
1 (10 ounce) can cream of mushroom soup
1 (10 ounce) can Rotel Tomatoes

Steps:

  • Slice potatoes and place in large baking dish.
  • Melt 1/2 pound Velveeta cheese, add cream of mushroom soup and diced Rotel tomatoes.
  • Heat until cheese and soup are well blended.
  • Pour over sliced potatoes.
  • Bake at 350° for 45 minutes.

8-10 red or yukon gold potatoes sliced or diced
1 pt sour cream
1 pkg cheddar cheese, shredded
1 can(s) rotel tomatoes

Steps:

  • 1. Cook potatoes till tender and drain well. Pour into a 9x13 baking dish.
  • 2. In a bowl mix cheese, tomatoes with the liquid, and sour cream. Spread over the potatoes and mix well.
  • 3. Bake 350 degrees till bubbly and golden about 25 minutes.

This is a marriage of two of the greatest comfort foods of our time: Rotel dip and mashed potatoes. We're talking very satisfying and suuuuuuper-rich. This would be great served with a protein like pork chops, but you can also add a little milk to turn this into a dip. This method of mashing potatoes essentially emulsifies whole butter into hot potatoes, and it's important that you work quickly and don't let the potatoes get too cool. The potatoes will continue to break down as you add the butter, so don't overmash them.

2½ pounds russet potatoes, peeled and halved lengthwise
1 bay leaf
1½ cups (12 oz.) unsalted butter, cubed
1 Tbsp. plus 1 tsp. kosher salt
1 pound processed cheese (such as Velveeta), cubed
1 (10-oz.) can diced tomatoes and green chiles (such as Rotel), undrained

Steps:

  • Place potatoes and bay leaf in a large saucepan; add water to cover by 2 inches. Bring to a boil over high; reduce heat to medium, and simmer until tender, 23 to 25 minutes. Drain well in a colander; discard bay leaf. Return potatoes to pot. While still very hot, mash potatoes to a smooth consistency. Stir in butter and salt using a potato masher or whisk.
  • While potatoes boil, microwave cheese and tomatoes in a large microwavable bowl on HIGH 3 minutes. Stir well. Continue microwaving on HIGH until cheese is melted, 30 to 60 seconds. Stir until smooth.
  • Swirl cheese mixture into mashed potatoes; serve immediately.

1 (10 3/4 ounce) can cream of mushroom soup
1 (10 3/4 ounce) can cheddar cheese soup
3/4 cup water
1 tablespoon onion flakes or 1 tablespoon chopped fresh onion
1/4 cup margarine
10 -12 small potatoes, peeled and sliced

Steps:

  • Preheat oven to 350 degrees.
  • In a bowl, mix Rotel tomatoes, cheddar cheese soup, cream of mushroom soup,water,onion,salt and pepper to taste.
  • Pour mixture over potatoes in a greased baking dish.
  • Place margarine slices on top and bake for one hour or until potatoes are soft when stuck with a fork.

1 bell pepper, chopped (red or green)

1 cup mushroom, sliced
1 (10 ounce) can rotel
1 lb Velveeta cheese

Steps:

  • Boil whole potatoes with skins on until done. Cool.
  • Slice and lay in a large casserole dish.
  • Saute pepper, onion, and mushrooms in oil. Add rotel and Velveeta until cheese is melted.
  • Pour over potatoes and bake at 350 about 10 minutes or until cheese bubbles.
