Pastry for double-crust pie (9 inches)
3 medium ripe pears, peeled and thinly sliced
3 medium tart apples, peeled and thinly sliced
1 cup plus 1 teaspoon sugar, divided
1 teaspoon lemon juice
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3 tablespoons butter
1 teaspoon whole milk

Steps:

  • Line a 9-in. pie plate with bottom pastry; trim to 1 in. beyond edge of plate. In a large bowl, combine the pears, apples, 1 cup sugar, lemon juice, cinnamon and nutmeg. Transfer mixture to crust; dot with butter. , Roll out remaining pastry to fit top of pie; cut slits or decorative cutouts in pastry. Place over filling; trim, seal and flute edges. Add decorative cutouts if desired. Brush with milk; sprinkle with remaining sugar. Cover edges loosely with foil. , Bake at 350° for 30 minutes. Remove foil; bake 30-35 minutes longer or until crust is golden brown. Cool on a wire rack.

1/2 cup whole-grain pastry flour or regular whole wheat flour
1/2 cup all-purpose flour
2 teaspoons granulated sugar
1/8 teaspoon salt
4 tablespoons cold, unsalted butter, cut into small pieces
2 tablespoons lowfat buttermilk
3 tablespoons ice water
3 medium pears
1 tablespoon lemon juice
1 tablespoon plus 1 teaspoon cornstarch
3 tablespoons light brown sugar
1/8 teaspoon ground cinnamon
1 teaspoon honey
1/4 teaspoon boiling water

Steps:

  • To prepare the crust, in a medium bowl whisk together the whole-wheat pastry flour, all- purpose flour, granulated sugar and salt. Add the butter and using two knives or a pastry cutter, cut the butter into the flour mixture until you get a pebbly, course texture. In a small bowl combine the buttermilk and ice water. Using a fork, gradually mix the buttermilk mixture into the flour mixture. Pat the dough into a 4-inch round and wrap in plastic wrap. Refrigerate for 30 minutes.
  • In the meantime, preheat the oven to 425 degrees F, and prepare the filling. Peel the pears, core them and cut into 1/4-inch slices. In a large bowl toss the pear slices with the lemon juice. Sprinkle in the cornstarch, brown sugar and cinnamon and toss until the pears are evenly coated. Set aside.
  • On a lightly floured surface, roll the chilled dough into a large circle about nine inches in diameter. Line a baking sheet with parchment paper, and draping the dough over the rolling pin, transfer to the prepared baking sheet. If the dough breaks at all patch it up with your fingers.
  • Arrange the pears in a mound in the center of the dough, leaving a 2-inch boarder. Fold the border over the filling. It will only cover the pears partially and does not need to be even.
  • Bake the tart for 15 minutes, and then reduce the oven temperature to 350 degrees F, keeping the tart in the oven all the while, and bake for another 40 minutes, until the pears are tender and the crust is golden brown.
  • In a small bowl stir together the honey and boiling water to make a glaze. When the tart is done remove it from the oven and brush the honey glaze all over the top of the fruit and crust. Transfer to a plate to cool slightly. Cut into 6 wedges and serve warm or a room temperature.

1 1/2 pounds Anjou pears (about 3)
6 tablespoons unsalted butter
1/3 cup granulated sugar
1/4 cup packed light brown sugar
2 teaspoons grated peeled fresh ginger
1/4 teaspoon kosher salt
1 tablespoon fresh lemon juice
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
1 14-ounce package refrigerated pie dough (2 rounds)
1 large egg, lightly beaten
Turbinado sugar, for sprinkling

Steps:

  • Peel the apples and pears; slice 1/2 inch thick. Melt the butter in a large skillet over medium-high heat. Add the apples, pears, granulated sugar, brown sugar, ginger and salt. Cook, stirring occasionally, until mostly tender, 20 to 25 minutes (reduce the heat if the skillet looks dry). Remove from the heat and stir in the lemon juice, flour and cinnamon. Let cool to room temperature.
  • Meanwhile, place a baking sheet in the lower third of the oven; preheat to 450 degrees F. Cut 1 dough round into nine 1/4-inch-wide strips; cut the rest of that round into strips of varying thickness. Weave the 1/4-inch strips into 3 thin braids, 3 strips per braid (these will be for the edges). Make braids with some of the remaining strips; leave some as is. Refrigerate the braids and strips until firm, 30 minutes.
  • Line a 9-inch pie plate with the other dough round; add the filling. Arrange the dough strips and braids (except for the 3 for the edges) parallel to one another on top of the filling. Trim any excess dough around the edges. Brush the edges with beaten egg and line with the 3 thin braids; trim the excess. Brush all of the dough with egg and sprinkle with turbinado sugar.
  • Bake the pie on the hot baking sheet, 20 minutes. Reduce the oven temperature to 375 degrees F and bake until the filling is bubbling and the crust is browned, about 1 more hour. (Cover the crust with foil if it darkens too quickly.) Transfer to a rack to cool completely.

½ cup butter, chilled
½ cup cream cheese
1 ½ cups all-purpose flour
2 apples - peeled, cored, and thinly sliced
1 pear - peeled, cored and sliced
¼ cup orange juice
⅓ cup brown sugar
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground cardamom
1 ½ tablespoons cornstarch
½ cup apricot jam, warmed

Steps:

  • Cut the cold butter and cream cheese into the flour with a knife or pastry blender until the mixture resembles coarse crumbs. (This can also be done in a food processor: pulse the cold butter into the flour until the mixture resembles cornmeal; add the cream cheese and pulse until it's the size of small peas.) When you squeeze a handful of the mixture, it should form a ball. Shape the dough into a round disk, wrap it in plastic, and refrigerate for at least 1 hour.
  • Toss the sliced apples and pear with the orange juice. Whisk together the brown sugar, cinnamon, nutmeg, cardamom, and cornstarch. Toss the fruit with the sugar-spice mixture and set aside.
  • Preheat an oven to 375 degrees F (190 degrees C). Set out an 8-inch tart pan, or, if you'll be making a free-form tart (galette), lightly grease a baking sheet.
  • Roll the pastry out on a lightly floured work surface to form a 10-inch circle. Transfer the dough to the tart pan or baking sheet. Arrange the fruit decoratively in the tart pastry. If you're baking the tart on a baking sheet, leave a 2-inch rim of dough and fold it up over the edge of the fruit (the pastry folds will overlap).
  • Bake the tart in the preheated oven until the crust is browned and the filling is bubbly, about 30 minutes. Remove the tart from the oven and brush it with the apricot jam.

1 1/2 teaspoons grated lemon peel
1/4 teaspoon salt
1/4 teaspoon ground mace

1 large egg yolk
2 tablespoons ice water
Filling
1/2 cup slivered almonds, toasted
2 large Golden Delicious apples, peeled, cored, cut into 1/2-inch-thick wedges
2 Bartlett pears, peeled, cored, cut into 1/2-inch-thick wedges
1/2 cup sugar
1 1/2 teaspoons grated lemon peel
1/4 teaspoon ground mace
1 1/2 tablespoons butter
Whipped cream
1 cup chilled whipping cream
2 tablespoons sugar
2 tablespoons pear schnapps or brandy

Steps:

  • For crust:
  • Mix flour, sugar, grated lemon peel, salt and ground mace in processor. Add butter and cut in using on/off turns until mixture resembles coarse meal. Mix yolk and water in small bowl. Add to processor and mix in using on/off turns until large moist clumps form. Gather dough into ball; flatten into disk. Wrap in waxed paper and freeze 10 minutes.
  • Butter 9-inch metal pie plate. Roll out dough between sheets of waxed paper to 13-inch round. Peel off top sheet of paper. Invert dough into prepared pan; peel off paper. Fold in edges to form double thickness. Crimp edges decoratively. (Can be prepared 1 day ahead. Cover and refrigerate.)
  • For filling:
  • Preheat oven to 375°F. Finely chop slivered almonds in processor. Spread almonds on bottom of crust. Combine apples and pears in large bowl. Mix sugar, grated lemon peel and ground mace in small bowl. Toss half of sugar mixture with apples and pears. Pile into crust. Sprinkle remaining sugar mixture over fruit. Dot with 1 1/2 tablespoons butter.
  • Bake until crust is brown and filling bubbles, about 1 hour. Cool on rack.
  • For whipped cream:
  • Beat cream, sugar and schnapps in large bowl until medium-stiff peaks form. (Can be prepared 4 hours ahead. Cover and chill.)
  • Serve tart warm or at room temperature with whipped cream.

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Stir apple, pear, brown sugar, vanilla extract, cornstarch, cinnamon, nutmeg, cloves, and salt together in a bowl. Whisk egg and water together in a small bowl.
  • Roll pastry out on a lightly floured surface; cut into circles with a 3- to 4-inch round cookie cutter. Steps:

  • Preheat oven to 190C. Grease a 24cm pie dish with butter.
  • Place sliced apple in a large saucepan. Scrape the seeds from the vanilla bean and add seeds and bean to the apple, along with the lemon zest, cinnamon stick, brown sugar, nutmeg and water.
  • Cook the apple mixture over low-medium heat with the lid on for 15 - 20 minutes or until apples are soft. The apple should still hold its shape. Remove cinnamon stick and vanilla bean and set aside.
  • Sift the flour and icing sugar into a large bowl. Add the cubes of cold butter and rub into the flour with your fingertips until the mixture resembles fine breadcrumbs.
  • Add the egg yolk and one tablespoon of chilled water to the flour mix and knead through gently until the mixture starts to come together into a ball. Add chilled water, a tablespoon at a time until the pastry properly comes together as a ball.
  • Turn pastry out onto a floured surface and form into a flat disc. Wrap in cling film and refrigerate for half an hour.
  • Remove the pastry from the fridge. Divide the pastry in two - one piece roughly 1/3 of the pastry, the other 2/3. Roll out the larger piece on a floured surface and use to line the dish.
  • Fill the pie dish with the apple mixture that should be slightly cooled by this time. Roll out the other portion of pastry on a floured surface and use to top the pie. Trim any excess pastry from the edges.
  • Using a fork, press the top layer of pastry into the sides to make a seal. Use the fork to lightly prick the top of the pastry in a couple of spots. Sprinkle caster sugar over the top of the pie to form a light layer. Place the pie in the oven and bake for 30 - 35 minutes or until golden.

  • For the Pastry 1. In the bowl of a food processor, pulse the flour, sugar and salt until combined. Add the butter and pulse for several seconds until the butter pieces are the size of peas. Add the egg and water. Pulse for several seconds more until the dough just begins to hold together, adding more water if necessary. Remove the dough and shape into a disc. 2. With the rack in the lowest position, preheat the oven to 190°C (375°F). Invert a 30 x 43-cm (12 x 17-inch) baking sheet and line the exposed bottom with parchment paper. 3. On a floured surface, roll the dough into a rectangle slightly larger than the baking sheet. Place the dough on the inverted sheet. Refrigerate for 30 minutes. For the Filling 1. In a bowl, combine the fruit and sugar. Arrange the fruit in the middle of the dough, leaving a margin of about 8 cm (3 inches) on all sides.
