Ruth's Chris New Orleans-Style BBQ Shrimp Recipe - (4.2/5) image

20 large shrimp, peeled and deveined
1 ounce canola oil
1 tablespoon plus 5 teaspoons green onions, chopped
2 ounces dry white wine
1 teaspoon garlic, chopped
4 tablespoons Lea & Perrins Worcestershire Sauce
1 teaspoon Tabasco
1/2 teaspoon cayenne
1/2 teaspoon paprika
2 sticks salted butter

Steps:

  • Place a large cast iron skillet on a burner and heat over high heat. Add oil and cook shrimp until they are just done. It's best to prepare shrimp in batches if you do not have large skillet. Remove shrimp and set aside on a large platter. Add green onions to the oil in the skillet and cook for 1 minute. Add white wine and let simmer until it is reduced by half. When the wine is reduced by half, add chopped garlic, Worcestershire, Tabasco, cayenne pepper, and paprika. Shake the pan well and cook for 1 minute. Reduce the heat to low. Cut butter into small chunks with the knife and slowly add into pan, shaking fast to melt butter. Continue to add butter and shake until all butter is melted. Add shrimp back to pan and toss well to coat shrimp with butter and seasonings and to heat the shrimp. Place shrimp on four plates and enjoy.

½ onion, chopped
2 small tomatoes, chopped
1 jalapeño pepper, seeded and chopped
1 (10 ounce) package fresh spinach, chopped
2 cloves garlic, minced
½ cup half-and-half, or more to taste
8 ounces shredded pepperjack cheese
1 (8 ounce) package cream cheese, cut up and softened

Steps:

  • Heat oil in a saucepan over medium-high heat. Saute onion in hot oil until softened, 5 to 7 minutes. Stir tomatoes and jalapeno pepper into the onion; add spinach and garlic and cook until the spinach wilts, 3 to 5 minutes.
  • Pour half-and-half into the saucepan; add pepperjack cheese and cream cheese. Bring to a simmer, reduce heat to medium-low, and cook until the cheese is completely melted, 5 to 7 minutes.

1 onion, chopped
2 garlic cloves, smashed
1/4 cup butter
4 tablespoons curry powder
1/2 teaspoon ground ginger
1/2 teaspoon ground cardamom
1/4 teaspoon cinnamon
1/4 teaspoon turmeric
1/2 teaspoon red chili powder
1 tablespoon flour
1/2 cup heavy cream
1 cup coconut milk, stirred well
2 cups chicken broth
2 teaspoons freshly grated lime zest
2 lbs large shrimp, peel and deveined
2 tablespoons fresh lime juice
salt and pepper
cooked rice and mango chutney
raisins, salted roasted peanuts, chopped candied ginger

Steps:

  • Cook the onion and garlic in the butter in a heavy 5 quart pot over moderate heat, stirring, until the onion is softened, about 4 minutes. Add the spices and flour and cook, stirring constantly, for 1 minute. Whisk in the cream, coconut milk, broth and lime zest and bring just to a boil. Simmer the mixture, stirring constantly, until it begins to thicken, about 2 minutes. Add the shrimp and simmer, stirring, until the shrimp turns pink and is cooked through, about 4 minutes. Stire in the lime juice, and add salt and pepper to taste.
  • Ladle the curried shrimp over rice and top with garnishes as desired. Serve the mango chutney on the side.

1 pound butter
2 teaspoons freshly-ground black pepper - (scant)
1/4 teaspoon cayenne pepper - (scant)
1 1/2 teaspoon paprika
1 teaspoon salt
1/2 teaspoon whole dried rosemary leaves (measured, then finely chopped)
2 ounces garlic finely chopped
2 teaspoon Worcestershire sauce
1 teaspoon Tabasco sauce
1 1/2 teaspoon water
SHRIMP:
1 tablespoon olive oil plus
1 teaspoon olive oil
1 pound shrimp - (16-20 count) cleaned, peeled, and deveined
1/4 cup chopped green onions
1/2 cup dry white wine
Sourdough bread for serving

Steps:

  • For Barbecue Butter: Soften butter at room temperature to 70 to 80 degrees. Place butter in mixing bowl; add pepper, cayenne pepper, paprika, salt, rosemary, garlic, Worcestershire, Tabasco, and water. Whip on high speed 3 minutes or until thoroughly blended. Refrigerate to 40 degrees. The following shrimp recipe will use 1 cup of the butter; reserve extra for another use. (Makes about 2 1/2 cups) For Shrimp: Pour olive oil in a hot sauté pan. Add shrimp to the sauté pan and cook on one side for 1 to 2 minutes. (Don't crowd; if necessary, use 2 pans. A 12-inch pan will accommodate 1 pound of shrimp.) Reduce heat to medium, turn shrimp, and add the chopped green onion. Cook for an additional 1 to 2 minutes. Add white wine and cook until reduced to 1/4 cup. Stir in 1 cup cold Barbecue Butter, reduce heat to low and cook and stir frequently until shrimp are just done (white throughout, moist and tender), approximately 1 1/2 minutes. Take care not to overcook the shrimp. Serve immediately in a bowl preheated to 160 degrees. This recipe yields ?? servings.

2 teaspoons black pepper (scant)
1/4 teaspoon cayenne pepper (scant)
1 1/2 teaspoons paprika
1 teaspoon salt
1/2 teaspoon whole dried rosemary leaves (measured, then finely chopped)

2 teaspoons Worcestershire sauce

1 tablespoon olive oil
1 teaspoon olive oil

This layered dip is spread out on a pizza pan or round platter and looks like you spent a lot of time on it, but really it's very quick and easy! Ruth was my beloved neighbor & adopted grandma--a great cook who is very much missed. My family makes this dip for special occasions.

1 (8 ounce) package cream cheese
1 (3 ounce) package cream cheese
2 tablespoons Worcestershire sauce
2 tablespoons mayonnaise
1/2 white onion, finely diced
2 teaspoons garlic salt
2 (4 1/2 ounce) cans deveined baby shrimp
1 (8 ounce) bottle seafood cocktail sauce
parsley (optional)
serve with cracker

Steps:

  • Mix cream cheese, Worcestershire, mayo, onion, and garlic salt together. Spread this mixture to cover the bottom of a pizza pan or round platter.
  • Spread the cocktail sauce over top of the cream cheese layer.
  • Remove shrimp from cans and break it up with a fork. Sprinkle the shredded shrimp over top of the cocktail sauce.
  • Optional: Sprinkle parsley on top.
  • Chill until serving time. Serve with crackers (we like Ritz with this).
