These Honey Roasted Figs make a simple yet delicious dessert, especially when paired with mascarpone or Greek yogurt or vanilla ice cream. The fresh figs are baked in the oven with butter, honey, cinnamon, pistachio, and a little lemon zest. They are tender, yielding and wonderfully fragrant. The perfect recipe for using up this season's fresh figs! And a wonderful summer dessert to serve to your friends and family.

8 fresh figs (- see note 1)
3 tbsp butter
1/4 cup runny honey
1/4 tsp ground cinnamon
1 lemon
2 tbsp shelled pistachio nuts
mascarpone/creme fraiche/greek yogurt to serve

Steps:

  • Pre-heat the oven to 400ºF/200ºC
  • Cut a cross in the top of each fig, ensuring that you don't go more than half way down the fig. Use your fingers to push the fig open like a flower (See note 2)
  • Place the the figs in a baking dish and add around a teaspoon of butter to each fig.
  • Drizzle over the honey ensuring some falls over and into each fig.
  • Sprinkle over the cinnamon.
  • Grate a little lemon zest over each fig.
  • Sprinkle the pistachios around the figs.
  • Roast for 7-10 minutes until the figs have softened and the butter has melted into the honey.
  • Serve warm with your chosen creamy element.

8 ripe figs
large knob of butter
4 tbsp clear honey
handful shelled pistachio nuts or almonds
1 tsp ground cinnamon or mixed spice
mascarpone or Greek yogurt, to serve

Steps:

  • Heat grill to medium high. Cut a deep cross in the top of each fig then ease the top apart like a flower. Sit the figs in a baking dish and drop a small piece of the butter into the centre of each fruit. Drizzle the honey over the figs, then sprinkle with the nuts and spice.
  • Grill for 5 mins until figs are softened and the honey and butter make a sticky sauce in the bottom of the dish. Serve warm, with dollops of mascarpone or yogurt.

Poach fresh figs with honey and spices for an incredible dessert. The sauce is very sweet, add a touch of balsamic vinegar if you prefer something less sweet. Cut a hole in the top of the fig so that the sauce can get inside, and the insides of the fig can combine with the sauce. Note this recipe only works with fresh figs, it will not reconstitute dried figs.

8 fresh figs
1 1/2 cups water
1/3 cup honey
1 teaspoon ground cloves
1 teaspoon ground allspice
1 teaspoon balsamic vinegar (optional)

Steps:

  • Trim the stems off the figs and make a small hole in the top.
  • Combine water, honey, cloves and allspice in a pot and bring to a boil.
  • Put figs in the pot and simmer, covered for 15 minutes, until almost done.
  • Remove figs and reduce sauce for 10 minutes.
  • Put the figs back in the sauce and reduce until desired consistency, around 5 more minutes.
  • Stir in balsamic vinegar (if using).

This is often on my dessert menu when my figs are in season, and is an easy and yet impressive end to any special meal. Although I have suggested that you serve this warm, it is also lovely when served at room temperature or just slightly chilled. Food of the Gods and Goddesses!

50 g white sugar
saffron (1 large pinch)
1 cinnamon stick
2 tablespoons honey
8 fresh figs, cut in half lengthways
150 g thick Greek yogurt, to serve

Steps:

  • Place 300ml cold water, the sugar, saffron, cinnamon stick and honey in a large pan, stirring to dissolve the sugar. Bring to the boil gently and simmer for 15 to 20 minutes, or until the syrup has reduced slightly.
  • Add the figs and simmer for a further 5 minutes or until tender. Remove from the heat and discard the cinnamon stick.
  • Serve the figs warm with the yogurt and drizzled with the saffron syrup.
  • Serving tip - Stir the yogurt into the cooled syrup for an extra creamy sauce, or serve chilled with ice cream.

8 fresh figs, sliced lengthwise into quartered 'blossoms'
2 tablespoons fig marmalade
2 tablespoons Greek yogurt
2 tablespoons honey
8 dashes ground cinnamon
2 tablespoons herbed chevre goat cheese, coarsely crumbled
8 walnut pieces
fresh mint leaves, to garnish
whole wheat crackers or sliced baguette, if desired

Steps:

  • Use a sharp knife to mark an "X" on the top of each fig, being careful not to cut more than 3/4 of the way down the fruit.
  • Spread open each fig 'blossom', to expose the pink center. Arrange the figs on a platter.
  • Use a small spoon to fill each fig with marmalade, Greek yogurt, and honey. Dust with cinnamon.
  • Finish with small chunks of herbed chevre, walnut pieces, and fresh mint sprigs. Serve immediately.
  • Good with Carr's whole wheat crackers or baguette slices, for a more substantial snack.
  • VARIATION: Substitute creme fraiche for the yogurt, mascarpone cheese with lemon zest for the herbed chevre, and green pistachios instead of walnuts. Drizzle with honey and dust with cinnamon -- yum!

This healthy dessert utilizes fresh figs -- a nutrient-rich fruit popular in Europe and brought to California in the late 18th Century by Spanish Franciscan missionaries.

8 small (or 4 large) fresh, ripe figs, stems trimmed, halved lengthwise
1/3 cup mascarpone, softened
1/3 cup mild honey
1/4 teaspoon ground cinnamon
1/8 teaspoon ground cardamom
1/8 teaspoon ground allspice
4 sprigs fresh mint

Steps:

  • Arrange the figs cut-side up among four plates. Use the back of a teaspoon to gently press into the center of the flesh and create a small indentation.
  • Add a dollop of mascarpone to the center of each fig half and set plates aside.
  • Place honey and spices in a small heat-proof bowl and set over a pan with simmering water. Cook over medium heat, whisking to blend, until the honey is liquefied and warm, 1 to 2 minutes. Drizzle honey over each fig, garnish plates with mint sprigs, and serve immediately.

10 cups whole fresh figs, washed
2 cups sugar
1 quart water
2 -4 slices ginger, cut in to 4 pieces
1 vanilla pod, sliced in half
3 cardamom pods, crushed
4 whole allspice
1 lemon, sliced, seeds removed
2 teaspoons citric acid or 4 teaspoons bottled lemon juice

Steps:

  • Blanch figs in water for 2 minutes. Remove figs and set aside. Measure 1 quart of the blanching water discard the rest.
  • Bring the 1 quart blanching liquid, sugar, ginger, vanilla, cardamom, allspice, and lemon to a gentle boil add figs and boil for 5 minutes.
  • Add 1 teaspoon lemon juice per pint jar to each of the jars or 1/4 teaspoon citric acid per pint to the jars. This is to increase the acidity and help prevent discoloration and spoilage.
  • Fill sterilized jars with hot figs, gently tapping the bottom of the jar on the countertop to help pack the figs down gently.
  • Add the hot syrup leaving 1/4 to 1/2-inch headspace. Wipe any spilled syrup off the top, Seat the lid and tighten the ring around them.
  • Keep the jars covered with at least 2 inches of hot water. Keep the water boiling. Boil them for 45 minutes at sea level.
  • Remove jars and let them cool without touching in a draft-free place 12 hours. Remove the rings and wipe jars clean. Check that they are sealed verifying that the lid has been sucked down. Just press in the center, gently, with your finger. If it pops up and down (often making a popping sound), it is not sealed. If you put the jar in the refrigerator right away, to be consumed.
  • Lable and enjoy within 12 months.
