1 cup water
3/4 cup sugar
3 tablespoons lime juice
1-1/2 teaspoons chopped fresh mint
3/4 teaspoon aniseed
Pinch salt
5 cups cubed watermelon (about 1/2 melon)
3 cups cubed cantaloupe (about 1 medium melon)
3 cups cubed honeydew (about 1 medium melon)
2 cups peach slices (about 2 peaches)
1 cup fresh blueberries

Steps:

  • In a small saucepan, bring the first six ingredients to a boil. Boil for 2 minutes; remove from the heat. Cover and cool syrup completely. , Combine the fruit in a very large bowl; add syrup and stir to coat. Cover and chill for at least 2 hours, stirring occasionally. , Drain before serving. Spoon into watermelon bowl or 8-qt. serving bowl.

400g tomatoes in a mixture of colours and sizes, if possible
½ Charentais or cantaloupe melon
½ Galia melon
200g tub cubed watermelon
1½ tbsp white wine vinegar
2 tbsp groundnut oil
4 tbsp olive oil
1 small bunch of mint , leaves picked
¼ tsp Dijon mustard
½ tsp caster sugar
1 tbsp elderflower cordial
4 tbsp double cream

Steps:

  • To make the dressing, put the vinegar, oils, half the mint, the mustard, sugar and cordial in a blender, then season and blitz to combine. Add the cream and check the seasoning - this is a sweet-sour dressing, so you need to get the balance right. You might want to make it a bit milder by adding a little more cream.
  • Halve the smaller tomatoes and cut any larger ones into wedges. Put in a shallow serving bowl.
  • Remove the seeds from the Charentais or cantaloupe and Galia melons, cut into wedges, peel and cut the flesh into chunks. Add to the bowl with the tomatoes, along with the watermelon. Drizzle over some of the dressing (you may not need all of it), scatter over the remaining mint leaves and serve.

2 medium melons (such as cantaloupe, Galia and/or honeydew)
1/4 cup extra-virgin olive oil
Grated zest and juice of 1 small lime
1 tablespoon honey, plus more if needed
2 medium hothouse cucumbers, peeled, cut into 1-inch chunks and chilled
Freshly ground pepper
6 sprigs mint, stemmed

Steps:

  • Place the melons on a flat surface and split each one in half. Scoop out and discard the seeds. Slice the ends off, then slice off the skin with a knife. Cut the flesh into 1- to 2-inch chunks. Transfer 1 heaping cup of melon chunks to a blender. Refrigerate the remaining melon chunks in a large bowl until chilled.
  • Make the dressing: Add 3 tablespoons olive oil, the lime zest and juice and the honey to the blender. Puree until smooth. Taste for seasoning; add more honey, if needed. Add a splash of water if needed to make a smooth dressing. Refrigerate the dressing until ready to serve.
  • In a medium bowl, toss the cucumbers with the remaining 1 tablespoon olive oil and a generous amount of pepper. Toss the chilled melon chunks with the dressing. Add the cucumbers, sprinkle the mint on top and mix a little.

2 medium hothouse cucumbers, peeled, cut into 1-inch cubes and chilled
4 tablespoons extra-virgin olive oil
Zest and juice from 1 small lime
1 tablespoon honey
6 fresh mint sprigs, stemmed
Freshly ground black pepper

Steps:

  • Place the melons on a flat surface and split each one in half. Scoop out and discard the seeds. Use the larger-size scoop on a melon baller to scoop out the flesh. The goal is to tightly pack about 6 generous cups of melon flesh and then hollow the four melon halves out for presentation. Scrape the halves with a spoon to smooth the insides and gather additional flesh (and trap any juices) in a separate bowl until you have 1 heaping cup. Save the melon halves. Refrigerate the melon balls.
  • Place the melon scraps and juices in a blender and add 3 tablespoons of the olive oil, the lime zest and juice and honey. Puree until smooth and taste for seasoning. Add more honey, if needed. Add a splash of water if more liquid is needed to make a smooth puree. Refrigerate.
  • In a medium bowl, toss the cucumbers with the remaining 1 tablespoon olive oil and a generous amount of black pepper. Toss the melon balls with the dressing. Sprinkle the cucumbers and mint over the melon and mix a little. Fill the melon halves.

There are 2 ways I serve this, either as a main course summer salad with cantaloupe melon mixed into salad leaves with strips of parma ham running through it and the dressing poured over, or as my mum does for a starter, use whole big chunks of honeydew melon with the parma ham grilled until crisp (watch it as it burns easily) and a little salad as garnish. The dressing is a must and makes the dish and you must must must use fresh mint leaves. That's a must!

100 g parmesan cheese, shaved using a vegetable peeler (optional)
100 g mixed salad greens
