Sake Essence
1 cup plus 2 tbsp sake
1 cup mirin
1 tbsp rice vinegar
2 tbsp ginger, minced
2 cloves garlic, minced
1/2 tsp chilies, seeded and minced
1 tbsp vegetable oil
2 tbsp red bell pepper, diced
2 tbsp zucchini, finely diced
2 tbsp carrot, finely diced
1 tsp soy sauce
2 tsp fresh cilantro, chopped
Salmon
4 salmon fillets
kosher salt
1/4 cup canola oil
4 rounds rice paper

Steps:

  • Sake essence In a heavy 2-quart saucepan, combine the sake, mirin, rice vinegar, ginger, garlic, and chili, bring to a boil over high heat and reduce to about 1/2 cup, 10 to 15 minutes. Meanwhile, heat the oil in a skillet over medium-high heat. Saute the peppers, zucchini, and carrot until crisp-tender, about 2 minutes. Add the soy sauce and vegetables to the sake essence; set aside and keep warm. Salmon Remove skin, if not already done. Sprinkle both sides of each salmon fillet with salt and pepper and drizzle with a little of the vegetable oil, using 1 tbsp total for the four fillets. Take a dish large enough to submerge the rice wrapper. Fill with hot tap water. Soak rice wrappers (one at a time) for 10-20 seconds in the water, just enough to soften and become pliable. Wrap each fillet in rice paper folding to make a little package. Heat the remaining 3 tbsp oil in a heavy, 12-inch skillet over medium to medium-high heat until it's hot and shimmering but not smoking. Put the wrapped fillets in the skillet, seam side down, without touching each other, and saute, turning to brown top and bottom, until the rice paper is golden brown, 2 to 3 minutes per side; don't overcook. Transfer to paper towels and let drain. Stir the chopped cilantro into the sake essence and spoon some onto each of four warm places. Put salmon fillet in the center of each plate, top with a cilantro spring and serve at once.

This dish is wonderfully light and simple, but vibrant and bursting with flavour at the same time. The rice paper wrapper absorbs the flavour, whilst sealing in moisture for an impressive and attractive meal. The flavour is not at all overly salmony...even my little sister likes it. It is great served with stir-fried veggies or fennel bulb, and I suspect it would taste delicious with rice or potatoes for a more substantial meal. Prep time includes marinading.

500 g salmon fillets, skinless
1 tablespoon lime juice
1/2 cup rice vinegar
1/4 cup soya sauce
3 garlic cloves, crushed and finely chopped
1 tablespoon sugar (or other sweetener...e.g. agave syrup etc.)
1/2 cup coriander (or a large handful)
8 rice paper sheets (more or less if needed)

Steps:

  • Preheat the oven to 180°C.
  • In a large dish, combine lime juice, soya sauce, rice vinegar, garlic, sugar and 2/3 of the coriander.
  • Cut the salmon into medium sized pieces (small enough to wrap in a rice paper wrapper) and place in the marinade. Cover for ten minutes and turn over, so both sides are well coated. Remove the pieces of salmon and reserve the marinade in a separate bowl.
  • In a large bowl of very hot water, soak the rice paper wrappers one by one until soft (less than 20 seconds for each).
  • Place one on a large, flat, clean surface (e.g. a chopping board) and put a small sprig of coriander in the centre, followed by a piece of salmon and a small spoon of the marinade. Bring the edges of the rice paper to the middle of the salmon to form a parcel and place, coriander side up, in a greased baking dish. Repeat with the remaining rice wrappers and salmon.
  • Place in the oven for around 20 minutes, slightly less if you don't like it completely baked through, or until the salmon is a light pink through the paper.
  • Serve with selected sides.

I looked for a recipe for glazed salmon and didn't find one that used the ingredients I had on hand. So I threw together what I had and came up with this tangy, spicy sweet marinade that adds flavor, but doesn't mask the flavor of the salmon. My kids and sister loved it. They said it was better than 'restaurant salmon' It's great served with wild rice and stir fried veggies.

1 ½ pounds fresh salmon fillet with skin removed
¼ cup red wine vinegar
¼ cup olive oil
¼ cup soy sauce
¼ cup water
1 tablespoon lemon juice
½ teaspoon red pepper flakes, or to taste
1 teaspoon onion powder
1 teaspoon garlic powder
2 teaspoons chopped fresh cilantro
⅓ cup brown sugar, packed
salt and ground black pepper to taste

Steps:

  • Place salmon in a shallow, flat dish, and set aside. Combine the vinegar, olive oil, soy sauce, water, lemon juice, red pepper flakes, onion powder, garlic powder, cilantro, and brown sugar in a blender. Blend until brown sugar dissolves. Pour the marinade over the salmon to cover evenly. Cover the dish, and refrigerate at least 2 hours.
  • Line a broiling pan with foil. Remove salmon from marinade, and place on prepared broiling pan; season to taste with salt and pepper. Transfer remaining marinade to a saucepan.
  • Turn on broiler to low.
  • Broil salmon about 6 inches from the heat for 5 minutes; brush with remaining marinade. Broil an additional 5 to 10 minutes, brushing 2 or 3 more times with additional marinade. Salmon is done when fish is no longer bright red and can be flaked with a fork.
  • Meanwhile, cook the remaining marinade over low heat until it thickens and reduces by one-third, 5 to 10 minutes. Use cooked marinade as a dipping sauce or drizzle over salmon just before serving.
