BAKED WHOLE SALMON

We don't get much fresh seafood around here. So when I see some whole salmon in the grocery store, I snap it up and make this elegant entree.

Number Of Ingredients 19

3/4 cup white wine or chicken broth
3/4 cup chopped celery leaves
1 small onion, finely chopped
2 lemon slices
8 fresh basil leaves
2 teaspoons dried tarragon
1 teaspoon dried rosemary, crushed
1/4 teaspoon dried thyme
1 whole salmon (about 10 pounds)
1-1/2 teaspoons salt
WINE SAUCE:
2 green onions, chopped
1/2 cup butter
6 tablespoons all-purpose flour
2-1/3 cups water
2-1/3 cups white wine or chicken broth
2 egg yolks, lightly beaten
1/2 cup heavy whipping cream
Salt and pepper to taste

Steps:

  • In a saucepan over medium heat, combine the first eight ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes., Remove head and tail from salmon if desired. Place a double thickness of heavy-duty foil on a baking sheet (longer than the length of the fish). Grease foil. Place salmon on foil; sprinkle the cavity with salt. Pour herb sauce over fish. Fold foil over fish and seal tightly. , Bake at 375° for 60-75 minutes or until fish flakes easily with a fork., Place salmon on a serving platter and keep warm. Strain cooking juices, reserving 1/3 cup. In a large saucepan, saute green onions in butter until tender. Stir in flour until blended. Gradually stir in the water, wine and reserved cooking juices. Bring to a boil; cook and stir for 2 minutes or until thickened., Reduce heat. Stir a small amount of hot liquid into egg yolks; return all to the pan, stirring constantly. Add the cream, salt and pepper. Cook and stir until mixture reaches 160°. Serve with the salmon.

Roasting salmon low and slow in one large piece means just cooked, perfectly medium-rare salmon every time. In a pinch, this recipe would work with pre-portioned salmon fillets, but make sure they are at least an inch thick, and decrease the cooking time by about 5 to 8 minutes. The lemon dressing here is tangy, floral and, yes, a little bitter (as the whole lemon is involved, pith and all). If that's not your preferred flavor profile, feel free to only use the zest and juice.

2 lemons, seeds removed, peel, pith and fruit finely chopped
1 small shallot or garlic clove, finely chopped
3 oregano, marjoram or thyme sprigs, leaves stripped and chopped
2 tablespoons white wine vinegar
Kosher salt and freshly ground black pepper
1/4 cup olive oil, plus more for drizzling
1 1/2 pounds skin-on salmon fillet (skinless is fine in a pinch)
1 head butter or Little Gem lettuce, torn into large pieces
2 Persian cucumbers or radishes, or both, sliced, for serving

Steps:

  • Heat oven to 325 degrees. In a small bowl, combine finely chopped lemon, shallot, oregano and vinegar for the dressing. Season with salt and pepper, and add 1/4 cup olive oil. Set aside.
  • Season salmon on both sides with salt and pepper. Place skin-side down in a 9-by-13-inch baking dish (or other 2-quart equivalent). Spoon half the lemon dressing over the salmon, and place in the oven until salmon is just cooked through but still a nice orange-pink in the thickest parts for more of a medium-rare salmon, 15 to 20 minutes, depending on the thickness of the fillet.
  • Meanwhile, scatter lettuces onto a large serving platter. Once salmon is out of the oven, use a spoon or spatula to transfer it to the serving platter with the lettuces, leaving behind the skin. Spoon remaining lemon dressing over the salmon and lettuces. Serve alongside cucumbers or radishes, or both, for crunch.

5 to 6 pounds whole salmon, scaled, gutted and washed
6 tablespoons olive oil
2 tablespoons kosher salt
1 tablespoon freshly ground black pepper
3 bunches fresh tarragon
2 pounds carrots, peeled and sliced thin
8 large shallots, peeled and sliced
2 pound leeks, well washed and cut into 1-inch pieces
1/2 cup white wine

Steps:

  • Preheat oven to 450 degrees.
  • Rub the salmon on all sides with 4 tablespoons of the oil and season inside and out with salt and pepper. Place the tarragon bunch inside the cavity of the fish. Put the vegetables in a large roasting pan coat with the remainder of the oil, season with salt and pepper and mix to combine. Place the salmon on the bed of vegetables. Sprinkle fish and vegetables with white wine. Place the roasting pan in the oven and cook for 45 minutes or until the fish is thoroughly cooked. About 15 minutes for every inch of fish.
  • Carefully lift the fish out of the pan and place on a platter along with the roasted vegetables.
  • Serve by portioning out the fish using two large spoons: filleting as you go first the top fillet, discard the center bone and then serve the bottom fillet.

Poaching is a great way to bring out the delicate flavor of whole fish. A poacher will use less liquid than a pan, but either works. This whole poached salmon is fantastic hot or cold. Serve with a little lemon or your favorite sauce.

1 (750 milliliter) bottle dry white wine
1 onion, thinly sliced
1 rib celery, sliced
6 whole peppercorns
1 bay leaf
1 whole salmon, cleaned
1 bunch fresh dill
1 lemon, sliced

Steps:

  • Combine wine, onion, celery, peppercorns, and bay leaf in a fish poacher. Place poacher over 2 burners on the stove.
  • Rinse fish under cold water, stuff the cavity with dill and lemon slices, and place on the rack in the pot. Cover and bring slowly to a strong simmer (don't boil at any point). Cook until fish easily flakes with a fork, being sure not to overcook, about 20 minutes. An instant-read thermometer inserted into the center should read at least 140 degrees F (60 degrees C). Drain and serve.

1 4-pound Atlantic salmon (2 1/4 inches at thickest point), scaled and cleaned, gills removed, head and tail on, interior cavity well washed
2 tablespoons olive oil
2 tablespoons fresh lemon juice
2 tablespoons kosher salt
Freshly ground black pepper to taste
1/2 to 3/4 cup white wine

Steps:

  • Remove fish from refrigerator. With a large kitchen knife cut 3 deep parallel diagonal slashes in each side. Put the fish on a diagonal into a roasting pan 18 by 13 by 2 inches.
  • Rub the olive oil and the lemon juice into both sides of the fish, including the slits, and into the internal cavities. Sprinkle both sides with salt and pepper. Marinate about 1 hour at room temperature.
  • Fifteen to 20 minutes before cooking the fish, put rack in center of oven. Heat oven to 500 degrees. Cook fish 22 minutes. Using two very large spatulas, transfer fish to serving platter.
  • Put the roasting pan on top of the stove over medium-high heat. Add the white wine to the pan. As it begins to bubble, scrape the bottom of the pan with a wooden spoon. Scrape up all the crispy bits. Reduce liquid by half. Use as a sauce with the fish.
