The fresh lime juice and mustard add a nice tang to this moist and flaky grilled salmon. I came up with this marinade after tasting something similar at a friend's house and it is now one of our favorite ways to do fish. You may also use other firm fish steaks instead of salmon; halibut, tuna and swordfish all work well.

¼ cup fresh lime juice
1 tablespoon olive oil
2 teaspoons Dijon mustard
¼ teaspoon ground ginger
¼ teaspoon garlic powder
¼ teaspoon cayenne pepper
⅛ teaspoon black pepper
4 salmon steaks

Steps:

  • Whisk together the lime juice, olive oil, mustard, ginger, garlic, cayenne pepper, and black pepper in a bowl, and pour into a resealable plastic bag. Add the salmon steaks, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 1 hour.
  • Preheat an outdoor grill for medium heat, and lightly oil grate. Remove the salmon from marinade, and shake off excess. Discard remaining marinade.
  • Grill until the fish flakes easily with a fork, 5 to 10 minutes per side depending on thickness.

2 sticks (1 cup) salted butter, softened
1/4 cup fresh flat-leaf parsley leaves, minced
1 1/2 pounds skin-on salmon, cut into four 6-ounce pieces (see Cook's Note)
1 teaspoon kosher salt
2 tablespoons vegetable oil

Steps:

  • For the minced herb butter: Line a baking sheet that fits into the freezer with parchment paper.
  • Put the butter in a small mixing bowl and add the parsley. Stir to combine with a rubber spatula. Scoop into a piping bag fitted with a star tip. Pipe the butter into rosettes on the prepared baking sheet. Freeze until the butter is set, about 1 hour.
  • For the salmon: Line a plate with paper towels and place the salmon on it skin-side up. Using a paring knife, score the salmon by making 2 small slits in the skin on each piece, making sure not to cut into the flesh. Pat the skin with paper towels to make sure it is as dry as possible.
  • Place a large nonstick skillet over high heat. Once the skillet is warm, add the vegetable oil and heat until shimmering. The skillet needs to be very hot to create a crispy sear at the start.
  • Season the salmon skin with 1/2 teaspoon of the salt, then place the salmon pieces skin-side down in the oil; reduce the heat to medium. Using a fish spatula, apply even pressure to each piece to make sure it stays flat. Cook, without flipping, until the edges are golden brown and the flesh is turning opaque, 7 to 8 minutes. Season the flesh of the salmon with the remaining 1/2 teaspoon salt and flip over to finish cooking; it will take about 2 minutes more for medium (125 degrees F), depending on the thickness of the fish. Do not flip the fish again or cover the skillet.
  • Plate the salmon crispy skin facing up. Top each piece with a rosette of herb butter. Serve immediately.

Reader's Digest, as homey as it gets, took me by surprise with an international lineup of recipes in its "30 Minute Cookbook." I gave its recipe for salmon with lime-herb butter a try, partly because keeping compound butters in the refrigerator is a terrific time saver.

2 limes
1/4 pound (1 stick) butter
1 2-inch piece of fresh ginger, peeled and sliced
12 sprigs fresh cilantro
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/8 teaspoon cayenne pepper
2 tablespoons sunflower oil
4 6-ounce salmon fillets

Steps:

  • Heat oven to 425 degrees. Finely grate zest from one lime, and squeeze its juice; set aside. Cut remaining lime into 8 wedges; set aside.
  • In the bowl of a food processor, combine butter, ginger, 8 sprigs cilantro and lime zest and juice. Process until the mixture is smooth. Season to taste with salt, pepper and cayenne pepper; process again. Mound butter on a piece of foil, and shape into a cylinder. Cover tightly with foil, and place in freezer.
  • Brush a baking sheet with oil, and place salmon fillets skin side down on sheet. Sprinkle with salt to taste. Bake until fish flakes easily, about 8 minutes.
  • To serve, remove lime butter from freezer, and cut into thick rounds. Place a fillet on each of four plates and top each with an equal portion of lime butter. Garnish each plate with two lime wedges and a sprig of cilantro, and serve.

Steps:

  • Position a rack in the middle of the oven. Preheat oven to 375°F | 190°C. Line a baking sheet with a large piece of foil, or 2 long pieces of foil over lapping each other lengthways if your salmon is wide.
  • In a small saucepan, melt the butter over low-medium heat. Add the honey, garlic and lime juice, and whisk until the honey has melted through the butter and the mixture is well combined.
  • Place the salmon onto lined baking sheet. Evenly pour the honey-lime mixture over the salmon. Sprinkle with a good amount of salt (about 2 teaspoons), cracked pepper, and 2 tablespoons of parsley. Fold the sides of the foil up beside the salmon to keep the sauce under the fillet.
  • Bake until cooked through (about 15-18 minutes, depending on the thickness of your fish and your preference of doneness). 1 lemon, zest and juice (about 1 tablespoon of juice)

1 lemon, thinly sliced

Steps:

  • Remove the salmon from the refrigerator and let it come to room temperature while you preheat the oven. Preheat the oven to 400 degrees Fahrenheit.
  • Spray a baking dish with cooking spray or coat the bottom with a little bit of melted butter or oil to prevent the fish from sticking.
  • Place the salmon on the baking dish (skin side down if your fish has skin). Season the salmon on both sides with salt and black pepper.

4 cloves garlic (smashed (NOT PRESSED))
2 Tbsp lime juice ((from 1 lime)plus lime wedges to serve)
2 Tbsp dill (chopped, plus more to garnish)
1 tsp sea salt
1/4 tsp black pepper
2 lbs salmon filet (skin-on, cut into 6 portions)

Steps:

  • In a sauce pan, melt 1/2 cup butter over medium heat. Smash 4 garlic cloves with the flat side of a knife and add to saucepan with 1 tsp salt and 1/4 tsp pepper. Simmer 1 min or until fragrant. Add chopped dill and 2 Tbsp lime juice then immediately remove from heat.
  • Arrange salmon fillets on a platter skin-side-down and spoon on 1/3 of butter sauce and brush over the tops. Let salmon marinate while preheating grill.
  • Preheat grill to medium heat (350˚F to 400˚F). Oil the hot grates. Place salmon onto preheated grill, skin-side-up. Cover and grill over medium (350˚F) heat undisturbed, about 3 minutes on the first side.
  • Carefully flip salmon over (it helps to have a spatula to loosen it and tongs to flip it over), brush on 1/3 of butter sauce then cover and cook another 2 minutes (or according to salmon grilling chart), until internal temperature reaches 140˚F (the temperature will continue to rise to an ideal 145˚F internal temperature off the grill).
  • Transfer salmon to a platter and drizzle with remaining 1/3 of sauce in saucepan (if butter has hardened, heat on the stovetop just until melted). Garnish with fresh dill and serve with lime wedges to squeeze over salmon.

3 salmon fillets
3 teaspoons dijon mustard
6 tablespoons butter, (or ghee if paleo/whole 30) softened
4 cloves of garlic, finely minced
1/3 cup mixed herbs, chopped (I used chives, parsley, and thyme)
1/3 cup slivered almonds

Steps:

  • A few hours before you're going to cook your salmon, combine the softened butter, garlic, and herbs together and stir
  • Place the butter onto a sheet of saran wrap, wrap up in saran wrap, and form into a thick log. Let sit in the fridge for a few hours to firm up
  • When ready to cook, brush 1/2 teaspoon of dijon onto each side of each salmon fillet and season with salt and pepper
  • Brush your grill grates well with oil, and grill over medium high heat until the salmon is charred on both sides and just cooked through (when it flakes easily with a fork)
  • Meanwhile, toast your almonds over medium heat until fragrant and lightly golden
  • To assemble, slice pats of compound butter and place over hot salmon and sprinkle with 1/3 of your toasted almonds

By basting continuously with foaming garlic butter, it seeps into every crack and crevice of the salmon and gives it the ultimate buttery crust.It may seem like a lot of butter for one recipe, but you need it to ensure good basting coverage. You do not have to use all of it for serving. Save leftover butter (even if just a smear!) and pan fry bread with it tomorrow, see post for photos. It's Amazing - with a capital A!

4 salmon fillets ((180g/6oz each), skinless and boneless)
1/2 tsp salt (, cooking / kosher)
1/4 tsp black pepper
1 1/2 tbsp olive oil
1 tbsp garlic (~2 cloves) (, finely minced by hand (don't use a garlic press))
90g / 6 tbsp salted butter (, cut into cubes (or unsalted + 1/4 tsp salt))
1 tsp lemon juice (, plus more to taste)
2 tsp parsley (, finely chopped)

Steps:

  • Season salmon: Take salmon out of fridge 30 minutes prior to cooking. Sprinkle both sides with salt and pepper.
  • Sear salmon 3 mins: Heat oil in large non stick skillet over medium-high heat. Add salmon, presentation side (ie. curved side) down, and cook for 3 minutes until golden.
  • Turn, cook 1 min, then add butter: Turn salmon and cook the other side for 1 minute. THEN put the butter in.
  • Baste 1 1/2 minutes: Once butter is melted and foaming, add garlic and immediately start spooning the bubbling butter continuously over the salmon for 1 1/2 minutes. To do this, tilt the pan slightly so the butter pools on one side. Use a large spoon to scoop the butter up and spoon it over the salmon.
  • Remove salmon from stove: Check Internal temperature of salmon. It should be 50°C/122°F for medium-rare (optimum juiciness pull temp). Remove salmon to a plate. Rest for 3 minutes - it will rise to 53°C/127°F. (See Note 2 for internal temperatures)
  • Add lemon juice to butter: Put pan back on unlit stove to keep butter hot. Add lemon juice.
  • Serve: Place salmon on serving plates. Spoon over butter (be judicious, it's rich!), garnish with a sprinkle of parsley. Pictured in the post with Cauliflower Mash and leafy greens with French Vinaigrette.

  • Place the salmon fillets onto a cutting board and put 1 tsp flour on each side and evenly spreading the flour over the salmon. Evenly drizzle 1 tsp honey onto each side of the salmon.
  • Drizzle 1 tbsp olive oil into a saucepan and heat to medium. Since you don't want to overcrowd the pan, you may want to use two pans and use the other 1 tbsp of olive oil, or do two batches.
  • Carefully place the salmon into the pan and cook 3-5 minutes on each side browning each side of the salmon.
  • While salmon is cooking, to make the sauce heat the butter into a small saucepan. Swirl the butter occasionally until it has turned a light brown color and is fragrant. Remove from heat and whisk the garlic, honey, salt and pepper into the sauce.
